A golden brown crumb topping is the finishing touch on this rich noodle casserole that takes advantage of canned salmon from the pantry. "It's so good that I'm always asked for the recipe," comments Joan Sherlock from Belle Plaine, Minnesota.

4 cups cooked wide egg noodles
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 jar (2 ounces) diced pimientos, drained
1-1/2 cups 4% cottage cheese
1-1/2 cups sour cream
1/2 cup mayonnaise
3 tablespoons grated onion
1 garlic clove, minced
1-1/2 teaspoons Worcestershire sauce
1 teaspoon salt
1 cup shredded cheddar cheese
1/3 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the noodles, salmon, mushrooms and pimientos. In another large bowl, combine the cottage cheese, sour cream, mayonnaise, onion, garlic, Worcestershire sauce and salt; add to noodle mixture. Stir in cheddar cheese. , Transfer to a greased 2-qt. baking dish. Toss bread crumbs and butter; sprinkle over the casserole. Bake, uncovered, at 350° for 30-35 minutes or until bubbly and golden brown.

1 teaspoon butter
2 pieces boneless salmon
1 medium size zucchini
1/2 cup chicken broth
1/2 cup sour cream
1/2 teaspoon Dijon mustard
1/2 teaspoon dried dill
4 green onions
salt and pepper

Steps:

  • Heat butter in a large non-stick frying pan set over medium heat. Add salmon and cook until underside is light brown, about 2 minute Turn salmon and continue cooking until browned 2 more minutes. Reduce heat to low, cover continue to cook for 6 more minutes. Remove to plate and cover to keep warm.
  • Meanwhile, slice zucchini lengthwise into four strips, then thinly slice and add to pan. Stir constantly over medium high heat until slightly softened, about one minute. Stir in broth. Bring to a boil. Cook, uncovered and stirring often until reduced by half, about 2 minutes.
  • Stir in sour cream, mustard and dill weed. Gently stir for 2 minutes. Finely slice onions, and stir into sauce.
  • Add salmon and cook until just heated through, about one minute. Season with salt and pepper.

1 ½ cups mayonnaise
½ cup prepared mustard
1 teaspoon chopped fresh thyme
1 teaspoon dried oregano
1 teaspoon chopped fresh basil leaves
1 ½ pounds salmon fillets
2 teaspoons dried dill, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a bowl, stir together mayonnaise and mustard. Stir in thyme, oregano, and basil. Place salmon fillets on a baking sheet, and spread with the mayonnaise mixture. Sprinkle with dill weed.
  • Bake in preheated oven for 30 to 40 minutes, until the salmon is easily flaked with a fork.

A tasty meal for you and your kids will like it too! This takes no time to make and you can use canned salmon if you want, but fresh salmon is definitely best. You can use whole wheat pitas and low fat ingredients or not! If you don't have fresh parmesan, don't bother using it because the flavor of the dry version won't come through.

4 ounces salmon fillets, skinless
2 teaspoons olive oil (optional)
salt and pepper
3/4 cup sour cream
2 teaspoons fresh lemon juice
2 tablespoons green onions, thinly sliced
2 teaspoons fresh dill, chopped
4 pita bread, 7-inch
2 tablespoons jarred pimientos, sliced
1/4 cup fresh parmesan cheese, grated (optional)
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 400°F.
  • Cook salmon fillets your favourite way. You can heat oil in a frying pan and cook until lightly browned and just barely cooked through. You can also broil, poach or grill the salmon, whichever you prefer. Just remember to salt and pepper to taste. Break apart into semi-large chunks when cooked.
  • Meanwhile, mix sour cream, lemon juice, green onion and dill. Spread a quarter of the mixture on each pita. Sprinkle evenly with pimentos and cooked salmon.
  • Sprinkle with parmesan and then mozzarella. Cook directly on rack for about 10 minutes or until lightly browned. By cooking the pita right on the rack, it will crisp up and not get soggy from the toppings.
  • Let cool for 5 minutes and then cut and serve!

This moist and tender salmon fillet is marinated in a tangy dill sauce. The attractive entree comes from Karla Sprague of Hilton Head Island, South Carolina.

1 cup Dijon mustard
2/3 cup white wine or chicken broth
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons soy sauce
1 cup vegetable oil
1/2 cup minced fresh dill
1 teaspoon pepper
1 salmon fillet (1 inch thick and 3 pounds), cut in half widthwise

Steps:

  • In a small bowl, whisk the mustard, wine, brown sugar, vinegar and soy sauce until well blended. Gradually whisk in oil. Stir in dill and pepper. Place salmon in a shallow glass dish. Pour 2 cups marinade over salmon. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill. Grill, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes. Baste with some of the reserved marinade. Grill or broil 7-9 minutes longer or until fish flakes easily with a fork, basting occasionally.

1 1/2 lbs round steaks or 1 1/2 lbs sirloin, 1/2
4 tablespoons butter
1/2 lb mushroom, sliced
1 medium onion, diced
2 cups beef stock
1 tablespoon cornstarch
1 tablespoon water, cold
1 cup sour cream
1 teaspoon dill weed
1 lb egg noodles
2 teaspoons chicken stock cubes or 2 teaspoons chicken stock powder
3 tablespoons butter
3 teaspoons paprika

Steps:

  • Cut meat into 1/4" strips and brown in butter.
  • In a separate pan, saute mushrooms and add to meat. In the separate pan, saute onions and add to meat mixture. Add beef stock.
  • Cover and simmer 1 hour.
  • At about 40 min., begin to cook noodles.
  • Mix corn starch and water in small container and add, stirring rapidly until sauce is thickened.
  • Stir in sour cream and dill weed.
  • Serve over Paprika Noodles: Drain noodles and p ut in bowl.
  • Toss gently with chicken stock base, butter, and paprika.
  • Note: Chicken stock base or granular boullion may be very salty.
  • Let diners salt and pepper to their own tastes.
