APPLESAUCE PARFAITS WITH YOGURT AND CRISPY QUINOA

Applesauce Parfaits with Yogurt and Crispy Quinoa image

Provided by Bobby Flay

Time 1h

Yield 4 servings

Number Of Ingredients 13

3 pounds assorted apples (Macintosh, Granny Smith or Gala), cored, peeled and cut into 1-inch chunks
Juice of 1 lemon
1/4 cup packed light brown sugar
2 tablespoons pure cane sugar, plus more as needed
1 to 3 teaspoons ground cinnamon
Pinch fine sea salt
1 1/4 cups quinoa
2 tablespoons coconut oil
2 tablespoons clover honey
2 cups Greek yogurt (fat-free or 2-percent)
Seeds of 1/2 vanilla bean
1/4 teaspoon pure vanilla extract
Fresh mint sprigs, optional

Steps:

  • For the applesauce: Put the apples, lemon juice, brown sugar, sugar, cinnamon and salt in a heavy-bottomed saucepan with a lid. Bring to a boil, then cover, turn to heat to low and simmer, stirring occasionally, until the apples are completely soft, 20 to 30 minutes. Taste, and add more sugar if desired.
  • Off the heat, mash the apples well with a potato masher or a fork. Allow to cool before serving in the parfaits.
  • For the crispy quinoa: Preheat the oven to 325 degrees F. Line a baking sheet with parchment. Toss the quinoa, coconut oil and honey in a bowl and spread in an even layer on the prepared baking sheet. Bake until lightly golden brown, about 20 minutes. Remove to a baking rack to cool.
  • For the parfaits: Mix together the yogurt, vanilla bean seeds and vanilla extract in a bowl. Spoon some of the yogurt mixture into four parfait glasses. Scatter some quinoa on top, then spoon in a thick layer of applesauce. Sprinkle with more quinoa, add another thick layer of yogurt, and sprinkle again with quinoa. Add a dollop each of applesauce and yogurt, and a final sprinkling of quinoa. Garnish with fresh mint sprigs if desired.

QUINOA SALAD WITH ASPARAGUS, GOAT CHEESE AND BLACK OLIVES

Quinoa Salad with Asparagus, Goat Cheese and Black Olives image

Provided by Bobby Flay

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 15

1/4 cup red wine vinegar
1 tablespoon honey
1 tablespoon mustard
1/2 cup olive oil
Kosher salt and freshly ground black pepper
4 cups salted water or vegetable stock
2 teaspoons chopped fresh thyme
2 cups quinoa
16 spears asparagus, trimmed
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 cup pitted nicoise olives
4 ounces aged goat cheese, shaved
1/4 cup chopped fresh basil
1/4 cup fresh parsley leaves

Steps:

  • For the vinaigrette: Combine the vinegar, honey and mustard in a blender and blend until smooth. With the motor running, slowly add the olive oil and blend until emulsified. Add salt and pepper to taste and pulse a few times to incorporate.
  • For the quinoa salad: Bring the salted water or vegetable stock to a boil and add the thyme. Stir in the quinoa, bring to a boil, reduce the heat to low, cover and simmer until cooked through, about 30 minutes. Remove from the heat and let sit 5 minutes. Fluff with a fork.
  • Preheat the grill. Brush the asparagus with olive oil and season with salt and pepper. Grill on all sides until just cooked through, about 5 minutes. Remove from the grill and cut into 1/2-inch pieces.
  • Transfer the quinoa to a large bowl, fold in the asparagus, olives, goat cheese, basil and parsley. Add just enough vinaigrette to moisten the salad; don't make it too wet. Transfer to a platter and drizzle with more of the vinaigrette.

CRUNCHY QUINOA SALAD

Crunchy Quinoa Salad image

Feel free to vary the vegetables in this salad according to what you have in your garden or find at the farmers' market.

Provided by Dr. John McDougall

Categories     HarperCollins     Salad     Quick and Healthy     Quinoa     Grains     Asparagus     Chive     Parsley     Herb     Spring     Vegetarian     Vegan     Wheat/Gluten-Free

Yield 6 servings

Number Of Ingredients 14

1 cup uncooked quinoa
2 cups vegetable broth
3 (2-inch) strips of lemon zest (see hints below)
1 1/2 cups asparagus, sliced into 1/2-inch pieces
1 cup snow peas, cut in half
1/2 cup kohlrabi, peeled and sliced into thin strips
1/3 cup radishes, thinly sliced
3 tablespoons lemon juice
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh cilantro (optional)
1 teaspoon chopped fresh mint
Freshly ground pepper
Dash sea salt

Steps:

  • Rinse the quinoa well and place it in a pot with the vegetable broth and bring to a boil. Reduce the heat, stir in the pieces of lemon zest, cover, and cook for 15 minutes. Remove from the heat, stir, and remove and discard the pieces of lemon zest. Allow the quinoa to cool slightly.
  • Meanwhile, put a large pot of water on the stove to boil, drop the asparagus and snow peas into the boiling water, and cook for 2 to 3 minutes, until crisp-tender (do not overcook; the vegetables should still be slightly firm). Remove from the pot with a slotted spoon and drop into a bowl of ice water. Drain. Combine the cooked quinoa, asparagus, snow peas, kohlrabi, and radishes in a large bowl. Add the remaining ingredients and mix well. Season with freshly ground black pepper and sea salt, if desired. Chill for 1 to 2 hours before serving to allow flavors to mingle.

ROAST ASPARAGUS BOWLS WITH TAHINI LEMON DRESSING

Roast asparagus bowls with tahini lemon dressing image

Enjoy five of your 5-a-day with this dish, a tasty mix of asparagus, quinoa, aduki beans, onion and cherry tomatoes. It's packed with nutrients, and vegan too

Provided by Sara Buenfeld

Categories     Dinner, Main course, Supper

Time 40m

Number Of Ingredients 13

2 red onions , halved and thickly sliced
2 tsp rapeseed oil
250g pack asparagus , woody ends trimmed
160g cherry tomatoes
2 tbsp sunflower seeds
1 tsp vegetable bouillon powder
120g quinoa
2 tsp tahini
½ lemon , juiced
1 large garlic clove , finely grated
2 tsp tamari
2 good handfuls rocket
400g aduki beans in water, drained

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the onions in 1 tsp rapeseed oil and roast on a baking sheet for 10 mins. Coat the asparagus with the remaining oil and spread over another sheet. After 10 mins, add the asparagus to roast with the onions for 5 mins. Add the tomatoes and sunflower seeds and roast for 5 mins. The onions should be charred, the asparagus tender, the seeds toasted and the whole tomatoes near bursting.
  • Meanwhile, tip the bouillon and quinoa into a pan. Add 360ml water, cover and simmer for 20 mins until tender and the water has been absorbed. Whisk the tahini and lemon juice with 3 tbsp warm water, the garlic and tamari to make a dressing.
  • Pile the quinoa into bowls, top with rocket, spoon over half the dressing, add a pile of beans with the tomatoes, then a separate pile of the asparagus and onions. Spoon over the remaining dressing and scatter over the sunflower seeds. Will keep in the fridge for two days.

ASPARAGUS, AVOCADO & QUINOA TABBOULEH

Asparagus, avocado & quinoa tabbouleh image

Add texture and flavour to this nutritious side or packed lunch with soya beans, crunchy cucumber and chopped fresh herbs

Provided by Sarah Cook

Categories     Buffet, Lunch, Side dish, Supper, Vegetable

Time 35m

Number Of Ingredients 16

300g quinoa
250g soya beans
12 fat asparagus spears, woody ends snapped off and tips and stalks separated
300g Greek yogurt
1 tsp sweet paprika , plus a pinch to serve
2 garlic cloves , crushed
zest and juice 2 lemons
½ large cucumber , halved lengthways, seeds scooped out with a teaspoon, sliced
4 spring onions (we used the ones with the fat bottoms), thinly sliced
large pack mint , leaves picked
2 small packs dill , roughly chopped
large pack parsley , roughly chopped
2 avocados , stoned, peeled and cut into chunks
juice 3 limes
1 tbsp agave syrup
2 tbsp rapeseed oil

Steps:

  • Cook the quinoa following pack instructions, then leave to cool. Bring a pan of water to the boil, add the soya beans and cook for 2 mins, then add the asparagus tips and cook for 1 min more. Drain everything and leave to cool.
  • Meanwhile, mix the yogurt with the paprika, garlic and most of the lemon zest. Season and chill.
  • Using a vegetable peeler, slice the asparagus stalks into thin ribbons (you won't be able to do the whole stalk as it will get too thin, but these pieces are perfect for soup.) Keep in iced water until ready so they curl.
  • On a large platter, combine the quinoa, cooked soya beans and asparagus tips, cucumber, spring onions, herbs and avocado. Drain the asparagus ribbons and add them too. Whisk together the lime and lemon juices, agave syrup, rapeseed oil and some seasoning, then pour over the salad and gently toss to mix. Serve with the yogurt alongside, topped with the remaining lemon zest.
