DILLY POTATO SALAD WITH GREEN BEANS



Dilly Potato Salad with Green Beans image

Soaking red onion in cold water helps mellow its raw bite while leaving its appealing crunch. This easy potato salad recipe is great at room temperature or chilled. If you're not planning on serving it right away, keep the dressing separate until you're ready to serve.

¼ cup finely chopped red onion
8 ounces baby potatoes
12 ounces string beans (green, yellow, or a mix), trimmed and cut into 1-inch pieces
¼ cup chopped fresh dill, plus more for garnish, or 1 Tbsp. dried
2 tablespoons olive oil
2 tablespoons white-wine vinegar
2 teaspoons Dijon or yellow mustard
½ teaspoon ground pepper
¼ teaspoon salt
3 large hard-boiled eggs, coarsely chopped (see Tip)

Steps:

  • Place red onion in a small bowl and cover with ice water. Let stand for at least 10 minutes, then drain well and set aside.
  • Meanwhile, bring 1 inch of water to a boil in a medium saucepan fitted with a steamer basket. Add potatoes, cover and steam until just tender when pierced with a knife, 12 to 15 minutes. Add beans to the steamer basket with the potatoes; cover and continue cooking until the potatoes are soft and the beans are tender-crisp, 5 to 7 minutes more. Rinse the vegetables under cool water and drain well.
  • Whisk dill, oil, vinegar, mustard, pepper, and salt in a large bowl. Halve the potatoes and add to the bowl with the dressing, along with the beans, red onion, and chopped eggs. Stir gently to combine. Garnish with more fresh dill, if desired.

6 ounces green beans
2 pounds peeled small potatoes
1/4 cup extra-virgin olive oil
4 teaspoons lemon juice
4 teaspoons whole-grain mustard
2 teaspoons chopped thyme leaves
1/2 cup thinly sliced red onion
Coarse salt

Steps:

  • Simmer green beans in salted water until barely tender and bright green, 2 to 3 minutes. Remove with a slotted spoon or wire-mesh skimmer, and transfer to a bowl of ice water. Drain, and pat dry. Add potatoes to the same pot of salted water, and simmer until tender, about 12 minutes. Drain potatoes, and halve them. Whisk together olive oil, lemon juice, mustard, and thyme in a large bowl. Add potatoes, beans, and red onion. Gently toss. Season with salt.

1/2 cup red onion, minced

3 tablespoons fresh dill
1 teaspoon sugar

4 tablespoons balsamic vinegar
1/2 cup salad oil
salt and black pepper

Steps:

  • Cook green beans in boiling, salted water until crisp-tender, approximately 5 minutes.
  • Drain and cool with cold water.
  • Cook potatoes until fork tender.
  • Cool and place in bowl with beans and peppers.
  • Whisk together remaining ingredients and pour over vegetables.
  • Toss gently and refrigerate for 1 hour.

MINTED POTATO & GREEN BEAN SALAD

200g green beans
2 shallots or ½ red onion
3 tbsp wine vinegar
1 tbsp olive oil
handful mint leaves, chopped

Steps:

  • Boil the potatoes for 15 mins or until tender. When the potatoes have 5 mins cooking time left, tip the beans into the boiling water. Drain and cool under cold running water.
  • Meanwhile, finely slice the shallots or onion. Place in a bowl and sprinkle with the vinegar and oil then leave for 5 mins. Toss potatoes and beans in with the shallots and sprinkle with the mint.

500g medium new potato (Jersey royals if you can get them), thickly sliced
200g green bean , trimmed
1 tbsp lemon juice
1 tsp clear honey
1 tsp wholegrain mustard
3 tbsp olive oil
4 spring onions , thinly sliced

Steps:

  • Boil potatoes in salted water for 8 mins until just tender, then drain and keep warm (they will absorb the dressing better than cold potatoes). Meanwhile, steam the beans in a steamer over the potatoes for 4 mins. Keep a close eye on them as you want them to be just tender rather than soft. Cool the beans under the cold tap to keep their colour.
  • Mix the dressing ingredients in a bowl. Add the warm potatoes and beans, and toss really well to coat in the dressing. (Warm potatoes absorb the dressing better than cold ones.)

1 pound fresh green beans, trimmed and halved
1 small red onion, halved and thinly sliced

1 teaspoon salt

  • Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender, adding green beans during the last 4 minutes of cooking. Drain the potatoes and allow to cool before assembling the salad.
