- Add 1 cup water to a 6-qt. electric pressure cooker. In a large bowl, combine apples, sugar, flour and cinnamon. Spoon into a greased 1-1/2-qt. souffle or round baking dish. In a small bowl, whisk eggs, cream and vanilla; pour over apple mixture. In another bowl, combine cracker crumbs, pecans and butter; sprinkle over top., Loosely cover dish with foil to prevent moisture from getting into the dish. Place on a trivet with handles; lower into pressure cooker. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 12 minutes. When finished cooking, allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure according to manufacturer's directions. Serve warm, with ice cream if desired.

- Peel the apples, core them and cut them into a large dice. In a large bowl, combine the diced apples, lemon juice, cinnamon, pumpkin or apple spice, sugar, vanilla, apple juice and cornstarch until evenly mixed. Pour into a 6-quart or larger Instant Pot.
- In the same bowl, make the topping. Combine the flour, brown sugar, salt, cinnamon and oats. Add the butter and rub with your fingers until coarse crumbs form. Pour over the apples in an even layer.
- Lock the lid and set the pressure valve to seal. Cook on high pressure for 1 minute. Quick release the pressure until all the steam has escaped and the lid unlocks. Carefully open the lid and serve the apple crisp with either whipped cream or ice cream.

- In small bowl, sprinkle sliced apples with lemon juice to prevent browning. Combine oats, flour, brown sugar, cinnamon, salt, and melted butter and combine thoroughly. Layer apples and oat mixture, beginning wit and ending with apples into the stainless steel pan insert. Place lid of insert pan. Pour water into pressure cooker and place pan insert into the rack and lower into the pressure cooker. Lock the lid in place and set the cooker to high pressure for 25 minutes. Release pressure using the quick release method. Unlock the pressure cooker, and after the steam has subsided, lift the pan out of the cooker and place on a cooling rack. Serve warm with vanilla ice cream as a dessert, or refrigerate and serve cold or reheat for breakfast.

This recipe came from the 1984 issue of the Southern Living Annual Recipe Cookbook and has become a standard in our house since.

Steps:
- Position slicing blade in food processor bowl, and top with cover.
- Arrange apple quarters in food chute with cut side against the blade; slice, applying firm pressure with food pusher.
- Place sliced apples in a lightly greased 13x9x2" baking dish.
- Combine 1/2 cup sugar, nutmeg, and cinnamon.
- Sprinkle over the sliced apples.
- Position plastic mixing blade in food processor bowl; place flour, brown sugar, and butter in the bowl.
- Top with cover and process until mixture resembles course meal.
- Sprinkle mixture over apples.
- Bake, uncovered for 1 hour at 300°F.
- Serve warm with ice cream, if desired.
- Makes 8 servings.
