CASHEW BUTTER COOKIES

Cashew Butter Cookies image

Rich cookies become richer with cashew butter. Cookies can be baked so they are either soft or crisp.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 22

Number Of Ingredients 9

8 ounces roasted unsalted cashews (1 3/4 cup), plus 1 1/2 ounces (1/3 cup) more for garnish
1 tablespoon canola oil
1 1/4 cups all-purpose flour, plus more for shaping
1/2 teaspoon table salt
1/4 pound (1 stick) unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed dark-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract

Steps:

  • In the bowl of a food processor, combine 1 3/4 cups cashews with canola oil, and process until smooth, 5 to 7 minutes. (You should have about 3/4 cup puree.) Set aside until completely cool.
  • Coarsely chop cashew nuts, and reserve for garnish.
  • In a medium mixing bowl, sift the flour and salt together; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, cashew puree, and both sugars, and beat on medium speed until light and fluffy, about 2 minutes. Add the egg and vanilla, and mix until well combined, about 30 seconds. Add the flour mixture, and mix on low speed, just until combined, about 20 seconds. Wrap dough in plastic, and refrigerate at least 1 hour.
  • Preheat oven to 350 degrees. Have ready two baking sheets lined with parchment paper, and set aside. Scoop 2 tablespoons of dough (1 1/2 ounces), and shape into a ball. Transfer to prepared baking sheet. Repeat with the remaining dough, placing dough balls 3 inches apart. Dip the tines of a fork in flour, and press into the dough balls to make vertical and horizontal indentations. Sprinkle reserved cashew nuts on top.
  • Bake 10 minutes. Rotate baking sheet, and bake 6 to 8 minutes more, depending on whether a soft or crisp cookie is desired. Transfer cookies with the parchment to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

140g unsalted butter , at room temperature, plus extra for greasing
250g plain flour
½ tsp baking powder
200g white caster sugar
100g crunchy cashew nut butter , or use peanut butter
1 large egg , beaten

CASHEW FETTUCCINE ALFREDO

Cashew Fettuccine Alfredo image

WOW! This cashew fettuccine alfredo tastes decadent, but the creamy sauce is filled with healthy plant based ingredients. An easy dinner in under 30 minutes!

Provided by Sonja Overhiser

Categories     Main Dish

Time 25m

Yield 8

Number Of Ingredients 11

1 pound fettuccine noodles (use gluten-free, legume, or zucchini noodles if desired)
4 garlic cloves
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons olive oil
1 cup raw unsalted cashews
2 cups vegetable broth
1/8 teaspoon onion powder
1/8 + 1/4 teaspoon ground black pepper
Pinch nutmeg
1 teaspoon kosher salt
Finely chopped parsley, to serve

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Make the pasta: Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). Then drain the pasta and return it to the pot.
  • Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, onion powder, black pepper, nutmeg and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Blend the sauce: Carefully transfer the contents to a blender and add the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon more black pepper. Blend on high until a smooth sauce forms.
  • Serve: Pour about 5 cups into 1 pound pasta (1 cup will be left over), or use it to taste. Top with finely chopped parsley and serve immediately.

VEGAN WHITE CHOCOLATE AND CASHEW COOKIES

Vegan White Chocolate and Cashew Cookies image

Combining sweet white chocolate and creamy cashew nuts, these plant-based cookies from The Little Book of Vegan Bakes are perfectly crisp and chewy.

Provided by Holly Jade

Categories     Afternoon Tea, Biscuits, Snack

Number Of Ingredients 1

Cashew, Chocolate

Steps:

  • Preheat the oven to 180°C fan/200°C/400°F/gas mark 6 and line 2 baking trays with greaseproof paper. Add the softened butter or margarine, caster sugar, light brown sugar and vanilla extract to a mixing bowl and cream together - you can use a wooden spoon or a stand mixer with a paddle attachment. Sift the flour and bicarbonate of soda into the butter or margarine mixture and mix together until crumbly. Add the milk and mix to create a thick cookie dough. Add the 50g of chopped white chocolate and the 50g of chopped cashew nuts to the dough and mix. Your cookie dough will be very thick, but sticky enough to easily roll into balls. Roll into small balls of 40g each (1 heaped tablespoon), and space out evenly on the lined baking trays. Press down only slightly to flatten the tops (not too much - you still want them to be ball-like). The cookies will spread out a lot, so give them room. Before baking, press the remaining chopped nuts and white chocolate into the tops of the cookies. Bake for 10 minutes in the centre of the oven. When they come out of the oven, the edges of the cookies will be firm, but they will still be soft in the middle. This is fine as they will firm up as they cool down and set. Leave on the tray to cool down. These are best enjoyed on the day of making. Store in a sealed container at room temperature and eat within a few days. Holly's tip: To make the cookies equal-sized, place a cookie cutter of a similar size around each cookie in turn and nudge it slightly to shape it as it comes out of the oven.

Time 22m

Number Of Ingredients 9

2 tablespoons golden flaxseed meal (plus 6 tablespoons water)
2 cups cashew flour
1/3 cup coconut sugar
1 teaspoon baking powder
1/4 rounded teaspoon finely ground sea salt
3/4 cup chocolate chips
1/4 cup unsweetened applesauce at room temperature
1/4 cup melted almond butter
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  • 1) In a small bowl, whisk together flaxseed meal and 6 tablespoons water. Set aside.
  • 2) In a medium bowl, stir or whisk together cashew flour, coconut sugar, baking powder, and salt. Then stir in chocolate chips.
  • 3) Add unsweetened applesauce and vanilla to flaxseed mixture and stir together. Then add melted almond butter and stir or whisk to combine.
  • 4) Add wet ingredients to dry ingredients and stir together until combined. (Using a slicing motion with the spoon will help to incorporate the ingredients.)
  • 5) Using about one to two tablespoon of dough, round (I use two tablespoons to make my dough balls) and place on baking sheet. You can leave dough in "rustic" mounds or press to about 1/2 inch thick discs (should be about 2 inches in diameter). I made three rows of three on a standard size baking sheet. Bake for about 12 minutes until just browned around the edges. Let cool for 5 minutes on baking sheet then transfer to cooling rack. Batch yields about 18 cookies.
  • Storage Will keep for 2 to 3 days at room temperature or 5 to 7 days in the refrigerator. They also freeze nicely and taste delicious right out of the freezer.

  • Add flour mixture to mixing bowl. Mix on low speed until there are no longer any dry streaks of flour. Alternatively, use a spatula to fold in flour. Do not overmix.
  • Use a 1.5 Tablespoon cookie scoop (#40 scoop) to portion out the smooth dough. Roll dough balls in granulated sugar. Then, roll in powdered sugar until well coated. Place cookie balls at least 2-inch apart on prepared baking sheet.*Don't worry if the balls are not perfect rounds. The dough will still bake into a circle.
  • Bake the cookies until the edges are set and the cookies are cracked on top, 15-18 minutes, rotating pans halfway through. Cool cookies in baking sheet for 3 minutes. Then, use a spatula or mini offset to transfer cookies to wire rack. Cool to room temperature.

Number Of Ingredients 11

1 cup butter (, softened)
2 cups light-brown sugar ((packed))
2 large eggs
2 tsp vanilla extract
2 1/2 cups whole oats
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda

In the bowl of an electric mixer, whip together butter and sugar until lighter and fluffy, about 3-4 minutes. Stir in eggs one at a time, add vanilla. Slowly stir in flour mixture until well combine. Mix in toffee bits and cashew pieces. Round dough into cookie balls (about the size of a heaping tablespoon). Place on greased cookie sheet and bake 9 - 11 minutes (9 for softer, 11 for crispier). Time 30m

Number Of Ingredients 7

1 cup vegetable shortening, (room temperature)
1 cup confectioner's sugar
1 large egg, (room temperature)
2 tablespoons warm water
1 teaspoon vanilla extract, (room temperature)
2 1/4 cups all purpose flour
2 1/2 cups salted cashews, (toasted)

Steps:

  • Start by toasting the whole salted cashews. Once toasted and cooled, measure out one cup and pulse in a food processor until cashews have the same consistency as sand. Transfer to a bowl and set aside. Next, add the remaining toasted cashews to the food processor and pulse until just roughly chopped. Transfer those to a bowl and set aside as well.
  • Next, preheat oven to 350 degrees F. Prepare a baking sheet by lining it with a silicone liner or with parchment paper. Set aside.
  • In a mixing bowl, beat together the confectioner's sugar and vegetable shortening. Beat for 3-5 minutes or until the mixture is light and fluffy.
  • Next, beat in the egg, water, and extract until combined.
  • Add the flour and ground toasted cashews. Beat on low speed until just mixed through. Dough may be dry. Keep beating until ingredients form a dough.
  • Add 1/2 cup of the chopped toasted cashews to the dough and stir into the mixture.
  • Spoon dough into 2 teaspoon portions. Roll into a ball and place on the prepared baking sheet. Keep balls 2 inches apart.
  • Using a fork, create an "X" onto the top of each cookie, pressing straight down. Cookie should be flattened to just over 1/4 inch thick.
  • Top cookies with remaining chopped cashews and bake for 10 minutes.
  • Remove from oven. Allow cookies to cool on baking sheet for 3 minutes. Remove and transfer cookies to a wire cooling rack to finish cooling.

  • Skirt Steak Tostadas With Cashew Salsa and Red Cabbage Slaw. Roasted cashews are blended with rich garlic and heat-packing chiles to form a bright orange and nutty salsa for these seared skirt steak tostadas.
  • Cream of Cashew Pea Soup. This cream of pea soup is cream-free: Cashew provide the silky texture that dairy would usually contribute. To finish the soup, add a spoonful of malt vinegar for a richer acidity, scallions for texture, and potato chips because, well, when was that not a good idea?
  • 22-Minute Coconut Chicken Curry. Store-bought curry powder is brightened by fresh ginger and garlic in this 22-minute chicken dinner. Inspired by the Indian spice—infused oil called tarka, the mustard-flecked cashew topping adds final dose of flavor and crunch.
  • Crunchy Cashew-Sesame Bars. Step away from the boxed bars. This healthier take is chock-full of nutritious flax seeds, fiber-rich wheat bran, and sweet cashews, all bound together with maple syrup and coconut oil.
  • Cashew Caesar Dressing. No yolking around here: you can make a really good Caesar dressing without eggs. Combine soaked cashews (the secret ingredient here) with all of the classic Caesar components for a creamy dressing that's great on roasted vegetables, as a mayo substitute, or tossed with salads.
  • Lemon Herb Chicken Burgers with Thousand Island Dressing. If you aren't making your salad dressings with nuts, you need to get on it. Here, cashews help turn an everything-but-the-kitchen-sink Thousand Island dressing into a wholesome, creamy topping for chicken burgers.
  • Aromatic Shrimp and Noodle Medicine Soup. A highly seasoned broth and robust cashew purée add layered flavor to this warming soup. Get This Recipe.
  • Golden Cashew-Curry Brittle. Cashews and curry powder are bound together with a caramel-like sauce in this spiced take on brittle. Get This Recipe.
  • Butternut Squash, Kale, and Crunchy Pepitas Taco. Two words: cashew crema. This healthier option for Taco Tuesday stars a rich nondairy crema (thanks to cashews) that dresses sweet cubes of butternut squash and crisp, shredded kale.
  • Cauliflower-Cashew Soup With Crispy Buckwheat. As cauliflower simmers in a covered pot, it starts steaming in its own liquid—a French technique called à l'étouffée.

  • Pulse the cashews in a food processor along with 1 to 2 tablespoons flour until the pieces are uniformly fine and the size of graham cracker crumbs destined for a pie crust. Be careful not to process the cashews so long that they clump and turn into cashew butter.
  • Using either a stand mixer or a wooden spoon and your biceps, combine the butter and confectioners’ sugar in a bowl to form a stiff mixture. Add the remaining flour, cashews, vanilla, cardamom, and salt, and mix well to form a dough. Cover and let stand for 30 minutes at room temperature.
  • Shape small balls of dough, about 1 inch in diameter, and place them on the baking sheet, spacing them a couple inches apart. Smash the balls with the bottom of a small glass lightly dipped in flour to prevent sticking. (You may need to dip the glass in flour for each cookie to prevent sticking. If the glass still sticks to the cookie dough, twist it as you pull up on the glass.) Make sure the cookies don’t touch one another.

CASHEW CARAMEL COOKIES RECIPE | KITCHN
These cashew cookies are salty, sweet, and filled with a chewy caramel center. The trick to getting that perfectly pullable caramel interior is to use two soft caramel candies that have been smashed together and rolled into a ball. I find that using store-bought caramels rather than making your own results in chewier cookies — a shortcut I fully support.
