- Heat oven to 350°F. Grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with shortening, or line with aluminum foil. In large bowl, mix 1/2 cup brown sugar, 2/3 cup butter, 1/2 cup corn syrup, 1 teaspoon vanilla and the egg with spoon. Stir in flour and salt. Spread in pan. Bake 18 to 20 minutes or until light golden brown.
- In 1 1/2-quart saucepan, heat 1/3 cup brown sugar and 1/3 cup corn syrup over low heat, stirring constantly, until sugar is dissolved. Stir in 1/4 cup butter and the whipping cream. Heat to boiling over medium heat; remove from heat. Stir in 1 teaspoon vanilla.
- Sprinkle cashews over crust. Pour cooked mixture over cashews; spread evenly. Bake 15 to 20 minutes or until light brown and set. Cool completely, about 1 hour. For bars, cut into 10 rows by 6 rows.

- Preheat oven to 375°. In a bowl, cream together butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. - In the bowl of a food processor, combine 1 3/4 cups cashews with canola oil, and process until smooth, 5 to 7 minutes. (You should have about 3/4 cup puree.) Set aside until completely cool.
- Coarsely chop cashew nuts, and reserve for garnish.
- In a medium mixing bowl, sift the flour and salt together; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter, cashew puree, and both sugars, and beat on medium speed until light and fluffy, about 2 minutes. Add the egg and vanilla, and mix until well combined, about 30 seconds. Add the flour mixture, and mix on low speed, just until combined, about 20 seconds. Wrap dough in plastic, and refrigerate at least 1 hour.
- Preheat oven to 350 degrees. Have ready two baking sheets lined with parchment paper, and set aside. Scoop 2 tablespoons of dough (1 1/2 ounces), and shape into a ball. Transfer to prepared baking sheet. Repeat with the remaining dough, placing dough balls 3 inches apart. Dip the tines of a fork in flour, and press into the dough balls to make vertical and horizontal indentations. Sprinkle reserved cashew nuts on top.
- Bake 10 minutes. Rotate baking sheet, and bake 6 to 8 minutes more, depending on whether a soft or crisp cookie is desired. Transfer cookies with the parchment to a wire rack to cool. Store in an airtight container at room temperature up to 1 week.

- Heat oven to 180C/160C fan/gas 4. Scatter the cashews over a baking tray and toast for 5-7 mins until golden. Cool, then roughly chop.
- Meanwhile, grease and line 2 baking sheets with parchment. Sift the flour, baking powder and 1/2 tsp salt into a large bowl, then stir in the sugar. Cut the butter into rough cubes, and add this and the nut butter to the bowl. Rub together until the mixture resembles damp breadcrumbs.
- Using a cutlery knife, work the egg and syrup into the bowl to make a soft dough. Tip in the chocolate, nuts and cranberries (if using), and stir to combine. Try not to overwork the dough at this point.
- Roll slightly heaped tablespoons of dough into balls and place onto each baking sheet, leaving plenty of room for the cookies to spread. Bake for 12 mins or until golden at the edges and risen in the middle. Let them cool for 5 mins, then move to a rack to cool completely. Repeat until all the dough is shaped and baked. To make ahead, freeze the raw cookies on a baking sheet, then transfer to a freezer bag or box once solid. Bake from frozen, adding 5 mins to the cooking time.

- Mince the garlic. Chop the cauliflower.
- Make the pasta: Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). Then drain the pasta and return it to the pot.
- Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, onion powder, black pepper, nutmeg and 1/2 teaspoon kosher salt. - Preheat the oven to 180°C fan/200°C/400°F/gas mark 6 and line 2 baking trays with greaseproof paper. Add the softened butter or margarine, caster sugar, light brown sugar and vanilla extract to a mixing bowl and cream together - you can use a wooden spoon or a stand mixer with a paddle attachment. Sift the flour and bicarbonate of soda into the butter or margarine mixture and mix together until crumbly. Add the milk and mix to create a thick cookie dough. Add the 50g of chopped white chocolate and the 50g of chopped cashew nuts to the dough and mix. Your cookie dough will be very thick, but sticky enough to easily roll into balls. Roll into small balls of 40g each (1 heaped tablespoon), and space out evenly on the lined baking trays. Press down only slightly to flatten the tops (not too much - you still want them to be ball-like). The cookies will spread out a lot, so give them room. Before baking, press the remaining chopped nuts and white chocolate into the tops of the cookies. Bake for 10 minutes in the centre of the oven. When they come out of the oven, the edges of the cookies will be firm, but they will still be soft in the middle. This is fine as they will firm up as they cool down and set. Leave on the tray to cool down. These are best enjoyed on the day of making. Store in a sealed container at room temperature and eat within a few days. Holly's tip: To make the cookies equal-sized, place a cookie cutter of a similar size around each cookie in turn and nudge it slightly to shape it as it comes out of the oven.

- 1) In a small bowl, whisk together flaxseed meal and 6 tablespoons water. Set aside.
- 2) In a medium bowl, stir or whisk together cashew flour, coconut sugar, baking powder, and salt. Then stir in chocolate chips.
- 3) Add unsweetened applesauce and vanilla to flaxseed mixture and stir together. Then add melted almond butter and stir or whisk to combine.

- Storage Will keep for 2 to 3 days at room temperature or 5 to 7 days in the refrigerator. They also freeze nicely and taste delicious right out of the freezer.

CASHEW BUTTER COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment or a silicone baking mat.
- In a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Beat on medium until light, fluffy and creamy. Add in the egg and vanilla. Mix to combine. Next, add in the cashew butter and mix until fully combined.
- In a small bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add to the butter mixture and mix on low speed until you no longer see any flour bits.
- Using a medium cookie or ice cream scoop, scoop the dough, flattening the bottom, and place on the prepared baking sheet. Make lines or a crosshatch pattern on the top of each cookie with a fork.
- Bake until the cookies are golden around the edges, puffed up and set, 11 to 12 minutes. Let cool for 2 minutes on the baking sheet then remove to a wire rack to cool fully. Repeat with the remaining cookie dough.

- Start by toasting the whole salted cashews. Once toasted and cooled, measure out one cup and pulse in a food processor until cashews have the same consistency as sand. Transfer to a bowl and set aside. Next, add the remaining toasted cashews to the food processor and pulse until just roughly chopped. Transfer those to a bowl and set aside as well.
- Next, preheat oven to 350 degrees F. Prepare a baking sheet by lining it with a silicone liner or with parchment paper. Set aside.
- In a mixing bowl, beat together the confectioner's sugar and vegetable shortening. Beat for 3-5 minutes or until the mixture is light and fluffy.
- Next, beat in the egg, water, and extract until combined.
- Add the flour and ground toasted cashews. Beat on low speed until just mixed through. Dough may be dry. Keep beating until ingredients form a dough.
- Add 1/2 cup of the chopped toasted cashews to the dough and stir into the mixture.
- Spoon dough into 2 teaspoon portions. Roll into a ball and place on the prepared baking sheet. Keep balls 2 inches apart.
- Using a fork, create an "X" onto the top of each cookie, pressing straight down. Cookie should be flattened to just over 1/4 inch thick.
- Top cookies with remaining chopped cashews and bake for 10 minutes.
- Remove from oven. Allow cookies to cool on baking sheet for 3 minutes. Remove and transfer cookies to a wire cooling rack to finish cooling.
