ERYK'S DILL PICKLE MEATLOAF
When my son Eryk was a little boy, he used to ask me to make this at least once a week. He is now 22 and he still says it's his favorite meat loaf. I usually serve with baked potatoes and a green salad.

Steps:
- mixed ground meat mixture lightly with onion, bread crumbs, dill pickle juice, egg, salt and pepper until well blended.
- Shape into a loaf in a shallow baking pan.
- Combine dill pickle, catsup, water, sugar and Worcestershire sauce; pour over loaf.
- Bake in oven at 350 basting a couple of times with sauce in pan, 40 minutes.
- Continue baking without basting 35 minutes or until glazed.
GERRY'S MEATLOAF WITH DILL PICKLE SAUCE
Yet another of dad's recipes. This is a slightly different meatloaf, than what most people are familiar with. Excellent served with rice, potatoes or broad pasta & fresh peas.

Steps:
- Preheat oven to 350°F.
- Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
- Shape into a loaf and place in shallow pan.
- Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
- Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
- Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
- Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.
DILL PICKLE MEATLOAF
This is a great recipe for meatloaf fans who also love the flavor of dill!

- 1. Preheat oven to 350 degrees.
- 2. Using a large mixing bowl, beat the egg. Stir in onion, carrot, pickle juice, garlic, mustard, and pepper. Add cracker crumbs and mix. Add the ground beef and mix using your hands until all ingredients are evenly blended.
- 3. Form into a rectangular loaf approxiimately 3-4" high. Put the meatloaf on a wire cooking rack then place into in a 9"x13" oven-safe pan. The rack allows any excess fat to drain from the meat. Indent the top of the meatloaf a bit using your fingers. This helps keep the topping from running off.
- 4. Make the topping by combining chopped pickles, ketchup, water, brown sugar, and worcestershire sauce. Pour on top of the meatloaf. Avoid drizzling down the sides, as it may burn in the bottom of the pan.
- 5. Bake 1 hour or until no longer pink in center. Internal temp should be at least 160 degrees. Cover meatloaf with foil and let it rest 4-5 minutes. Slice and serve. We enjoy this with smashed potatoes, buttered peas, and a glass of red wine.

- Preheat oven to 350°F.
- In large bowl, beat together eggs, breadcrumbs, milk, onions, oregano, basil, salt and pepper.
- Add ground beef and combine.
- Place half of ground beef mixture into bottom of roasting pan and mold into a loaf approximately 3 inches wide and 7 inches long.
- Fold 2 slices cheese in half and lay lengthwise down center of loaf.
- Top with 3 pickles, mushrooms, tomato slices and remaining pickles.
- Fold remaining slices of cheese in half and place on top of pickles.
- Mold remaining meat mixture on top, making sure all stuffing is covered on all sides, as well as top.
- Cover and bake for 20 minutes.
- Uncover and bake 40 to 50 more minutes, or until meat is no longer pink on the inside.
