1 cup mayonnaise
1 cup sour cream
1 Tablespoon dried dill weed
1 Tablespoon dried minced onion
1 Tablespoon dried parsley
1 teaspoon seasoned salt
1 (16 ounce) package baby carrots - optional
2 cucumbers (sliced) - optional
1 (10 ounce) package cherry tomatoes - optional

Steps:

  • Combine all ingredients together in a large bowl.
  • Cover and store in fridge for at least 30 minutes before serving (I like to make it the day before serving it so that the flavors can really meld together).
  • Serve with your favorite vegetables (carrots, broccoli, cauliflower, peppers, tomatoes, etc), crackers, or potato chips.

I got this recipe from my mom. It is traditionally served in a rye bread bowl (rip out pieces of bread in the top to hollow out a bowl for the dip, and then place the bread around the edges of the platter). It can also be served without the bread with veggies or chips.

1 large cucumber, peeled and seeded

1/2 cup plain Greek yogurt
2 tablespoons mayonnaise

Steps:

  • Grate the cucumber on the large holes of a box grater. Wrap the grated cucumber in dampened cheesecloth and squeeze to remove as much liquid as possible.
  • Combine the cream cheese, yogurt and mayonnaise in a stand mixer fitted with the paddle attachment. Mix until smooth, about 1 minute. Bore bees were busy digging holes inside of the greenhouse and buzzing around while Bryan was venturing into the Spring garden to scope out the new plants. We had been patiently waiting for the last several weeks to see these little peas show themselves and now the wait was over. For Bryan; who is a vegan, these snow peas represent a total package. At their easiest, a wash in the vegetable sink in pop directly in mouth. However; quite often after the day has set and night is upon us I quickly make up the dill dip and we just scoop up the dip and use the snow peas for a pleasurable crunch. This tasty dill potato salad is just like Grandma's: it's bursting with fresh herbs and flavored with olive oil and vinegar.

3 pounds baby yellow potatoes
1/4 cup minced shallot (about 1 large)
1/4 cup fresh dill, minced
2 tablespoons fresh parsley
3 green onions, optional
1/4 cup white wine vinegar
1 teaspoon kosher salt
1/4 cup capers, drained
2 tablespoons olive oil
Fresh ground pepper

Steps:

  • Fill a large pot with cold water and add 1 tablespoon kosher salt. Add the whole potatoes and bring to a boil. When it comes to a boil, boil for about 5 to 8 minutes, depending on the size. Cook until fork tender (taste test to check).
  • Mince the shallot. Finely chop the dill and parsley. Thinly slice the green onions, if using.
  • When the potatoes are done, drain them. When they are cool enough to handle, slice them into bite sized pieces. Place the potatoes in a bowl and gently mix in the minced shallot, white wine vinegar, kosher salt, and 1/2 cup warm water. Let stand for 5 minutes, gently stirring occasionally. The potatoes will absorb the water as they stand.
  • Add the dill, parsley, green onions, drained capers, olive oil, and a few grinds black pepper. Taste and add additional salt if necessary (we added 1/4 teaspoon more). Serve warm or room temperature.
