DIJON & PARMESAN CRUSTED HALIBUT
I cobbled this together from other recipes I liked and wanted to write it down so I had an option of making it again!

Steps:
- Wash and pat dry the Halibut filets.
- Mix 1/4 C light Mayo, 1 Tbl Dijon, 1 Tbl lemon juice, 1/4 C breadcrumbs and 1.5 Tbl Parm.
- Spray olive oil in a 9X13 pan bottom.
- Place Halibut filet's into the pan. Spread mayo / dijon mixture on the top of the filet's.
- Melt the butter in a small bowl. (microwave) Mix in the balance of the bread crumbs and the parm, garlic and parsley into melted butter. Note - I used 4 Tbl of the butter, but upon double checking the recipe's I leveraged, they used substantially less. I bet you could easily get by on 2 tbl butter. Put the breadcrumb/herb/butter mixture on top of the fish - for an extra crispy topping.
- Bake the fish at 350 degrees for about 12 - 14 minutes. Then put oven on Broil (change the racks in the oven if needed) for a couple of minutes (4) until the top is nicely brown.
- (Note first time I made this - had about 1.25 lbs halibut and husband thought there was a smidge too much of the mayo / dijon mixture.).
HERB CRUSTED HALIBUT
Flavorful herbs and panko bread crumbs add a wonderful crust to thick slices of halibut fillet.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Line a baking sheet with foil.
- Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl. Taste and adjust with more salt if desired.
- Rinse halibut fillets and pat dry with a paper towel.
- Place halibut fillets onto the prepared baking sheet.
- Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
- Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.

- Preheat oven to 450°F. Spray rimmed baking sheet with nonstick spray. Mix walnuts, panko, and all herbs in small bowl; sprinkle with salt and pepper. Brush each fish fillet with 1 tablespoon melted butter; sprinkle with salt and pepper. Place fish on prepared baking sheet. Sprinkle panko-herb mixture atop fish, dividing equally and pressing to adhere. Roast fish until just opaque in center, about 8 minutes. If crisper topping desired, preheat broiler and broil fish about 1 minute, watching carefully to prevent burning. Transfer fish to plates; garnish with lemon wedges.

- Preheat oven to 450 degrees F and line a baking sheet with parchment paper or foil.
- In a small mixing bowl, combine garlic, dijon, lemon zest, lemon juice, paprika, chili powder, olive oil, salt and pepper and whisk.
- Place halibut filets onto the baking sheet and pour sauce mixture over each filet, coating both sides.
- Bake in the oven for 10 minutes then broil for 2 minutes until the fish turns golden on top.
- Garnish with fresh chopped dill and lemon wedges.

DIJON AND HERB PANKO-CRUSTED HALIBUT
Steps:
- Preheat the oven to 425 degrees.
- Combine the panko crumbs with the parsley, fresh basil, lemon zest, minced garlic, olive oil, sea salt, and freshly cracked pepper, to taste. Combine with your fingers until evenly mixed.
- Squeeze the juice from half a lemon over the halibut fillet. Spoon the Dijon mustard on top of the halibut and spread evenly. Season the fish with sea salt and freshly cracked pepper. Press the panko mixture thickly on top of the mustard... the mustard will help the panko adhere.
- Heat the vegetable oil in an OVEN PROOF skillet or Dutch oven. When the oil is very hot, add the halibut fillet, skin side down, and sear for 3-4 minutes, without turning, to brown the skin.
- Transfer the pan to the hot oven for 15-20 minutes or until the thickest part of the halibut flakes easily. Remove from the oven and cover with a tin foil tent for 5 minutes. Serve the halibut with lemon wedges. Enjoy.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.

- Heat oven to 475° and brush a baking sheet with oil. In a small bowl, lightly beat egg and milk together. In a separate bowl, stir together parmesan cheese, flour, paprika, pepper and salt. Dip fish fillets in egg wash, and then dredge in flour mixture. Lay fish fillets in a single layer on prepared baking sheet. Top with dabs of butter and bake for 8-10 minutes, or until crispy and baked through.

LEMON THYME CRUSTED HALIBUT WITH ORANGE AND TARRAGON EMULSION

- Preheat oven to 350 degrees F.
- Heat olive oil and butter in a medium skillet. Sear both sides of the halibut fillets until caramelized. Cool and set aside.
- Put chopped basil, lemon thyme, olive oil, salt, pepper, garlic and breadcrumbs in a food processor. Pulse until emulsified.
- Brush one side of the halibut with Dijon mustard. Press the herb mixture onto the mustard to form the crust. Repeat for other pieces of fish.
- Bake the fish for 6 to 10 minutes or until it is cooked through.
- In the same sauté pan cook tarragon sprig and ginger in 1 tbsp. of butter over medium heat until soft.
- Pour in white wine and reduce.
- Add orange juice and reduce by two thirds.
- Remove from heat and strain sauce.
- Add chopped tarragon.
- Whisk in remaining butter. Season to taste.

- Combine flour, salt, and pepper in a shallow bowl. Whisk mustard and eggs in another shallow bowl. Combine pecans and breadcrumbs in a third shallow bowl.
