I served this terrific salad to guests and it was a hit! Pour the hot dressing over the salad right before serving time. I found this recipe in an old Farm Journal cookbook. Cook time is for the time it takes to boil the eggs and fry the bacon.

6 cups spinach, washed,drained very well and torn into bite-size pieces
1/4 cup sliced green onion
3 hardboiled egg, coarsely chopped
5 slices bacon, chopped
1/4 cup vinegar
2 tablespoons sugar
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine spinach, onions and eggs in a large salad bowl.
  • Cook bacon in skillet until crispy; remove bacon and drain on paper towels.
  • Pour off all but 3 tablespoons of bacon drippings.
  • Add vinegar, water, sugar, salt and pepper to bacon drippings, heat to boiling, stirring to blend.
  • Pour over spinach mixture; toss gently.
  • Sprinkle with bacon.

1 tablespoon pine nuts
4 ounces prewashed Baby Spinach
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 pinch sugar
2 tablespoons crumbled feta cheese
2 tablespoons golden raisins or 2 tablespoons dried cranberries
2 teaspoons minced red onions

Steps:

  • To make salad: Put pine nuts in microwavable bowl and heat on high 30 seconds. Stir then heat another 30 seconds or until golden brown.
  • Place spinach in large microwave safe bowl. Cover with plastic wrap and microwave high 1 minute. Toss and microwave another 30 seconds, or until wilted.
  • To make dressing: Whisk together olive oil, lemon juice, and sugar.
  • Stir in cheese, raisins and red onion. Season to taste with salt and pepper.
  • Pour over spinach and toss; sprinkle with pine nuts and serve.

1 tablespoon red wine vinegar
1 tablespoon minced shallot or red onion
2 teaspoons Dijon mustard
1/4 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons quality walnut oil, (see Cook's Note)
8 cups baby spinach leaves, stems trimmed, washed, and dried
1/2 cup whole or chopped toasted walnuts
1/3 cup crumbled goat cheese

Steps:

  • In a small bowl, combine the vinegar, shallot, mustard, salt, and pepper. Gradually whisk in the oil to make a creamy dressing.
  • Put all but a large handful of the spinach in a large bowl. Toss with most of the dressing. Add remaining spinach and continue tossing until well coated.
  • Serve immediately topped with goat cheese and walnuts.

12 ounces fresh spinach (washed, drained, patted dry)
1/2 cup thinly sliced shallot
1/3 cup sherry wine vinegar or 1/3 cup red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons sliced almonds
1/4 teaspoon smoked paprika (optional) or 1/4 teaspoon hot paprika (optional)
1/3 cup reduced-sodium vegetable broth or 1/3 cup chicken broth
1/4 cup chopped black olives, such as Kalamata

Steps:

  • Place spinach in a large bowl.
  • Place shallot, vinegar and oil in a large skillet over medium heat.
  • Cook, stirring often, until the liquid is nearly evaporated.
  • Add almonds and paprika (if using) and cook, stirring, until fragrant, about 1 minute more.
  • Stir in broth and olives and bring to a simmer.
  • Immediately pour the dressing over the spinach and toss until slightly wilted.
  • Serve.

375g pack ready-rolled puff pastry
400g frozen spinach , thawed and squeezed dry
2 eggs
150ml milk
2 x 125g packs soft goat's cheese
¼ nutmeg , grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Unroll the pastry and put in a large Swiss roll tin. Trim any excess pastry at either end if necessary. Prick all over with a fork, then bake for 10 mins.
  • Use a hand blender to blitz the spinach with the eggs, milk, half the goat's cheese and nutmeg, until the spinach is chopped but not puréed. Take the pastry from the oven and press down the centre, as it will have puffed up. Spoon on the filling, scatter with the rest of the cheese, then bake for 15 mins until the filling is set.

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

Growing up we used to have a salad like this all the time, and it was about the only way I would eat spinach. Still love this combination. I think this particular recipe originated from the side of a bag of mushrooms. I have tweaked it over the years because I don't like to cook the spinach, I prefer to just toss the hot hot dressing over the spinach, which just wilts it enough without cooking it. I'm always throwing bread loaf ends into the freezer, this is a good recipe to use some of them in. Toss the final salad with cheese if you like. Beware, your house will smell like vinegar!!

3/4 lb fresh spinach (washed and dried)
1/4 red onion, very thinly sliced (white or sweet onion is good too)
1 red bell pepper, seeded and diced
3 slices whole grain bread, any nutty, grainy bread is good
4 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
3 tablespoons lemon juice
2 teaspoons grainy mustard
1 lb mushroom, sliced
sea salt
pepper
1/2 cup freshly grated parmesan cheese (optional)
1 tablespoon white wine vinegar (optional)
1 tablespoon olive oil (optional)

Steps:

  • Shred the spinach by hand into a large bowl. Add the sliced onion and red pepper to the spinach.
  • Toast the bread and then cut it into crouton style cubes. Alternatively, you could cut into cubes first and toast it in the oven so they get toasty all over. Do whichever time permits. Add to the spinach.
  • Warm the oil in a saute pan over medium heat. Add in the garlic and let it cook for a few minutes, being careful not to burn. Stir in the lemon juice, the oregano, basil and mustard, and finally the mushrooms. Let the mushrooms cook for about 5-7 minutes and adjust the seasoning, adding in freshly ground pepper and a little sea salt. It should taste like hot salad dressing at this point. If you prefer it tangier, add more lemon juice or a little wine vinegar.
  • You should have enough dressing in the pan to fully coat the spinach now, but you can add another tbsp or so of olive oil if you feel like it's not enough. Just make sure it's nice and hot.
  • Toss the hot dressing over the spinach. Toss well so that the spinach wilts. Toss in the parmesan cheese if desired. Serve warm & enjoy!

1/3 cup feta cheese
3 tablespoons thinly sliced black olives

Steps:

  • Place the spinach in a large bowl.
  • In a small skillet over med heat, warm the olive oil. Add the shallot, garlic, sugar, salt, pepper and oregano. Cook, stirring often until the shallot is slightly softened, about 3 minutes. Stir in the lemon juice.
  • Pour the warm dressing over the spinach. Add the feta and olives and toss gently until the spinach is wilted. Serve right away.

6 ounces balsamic vinegar
1/4 white onion, minced
3 garlic cloves, minced
4 ounces dried cranberries

Steps:

  • Cook the onions untill translucent in the olive oil.
  • Add garlic and cook for an additional 2 minutes.
  • Add the Baslamic Vinegar.
  • Bring to a boil and reduce to 1/2 origional.
  • Add Spinach leaves and cook untill wilted (2-5 minutes).
  • Move spinach to serving bowl.
  • Roast pine nuts over medium heat.
