1 1/2 teaspoons unflavored gelatin (1 envelope)
1/4 cup cold water
1 3/4 cups unsweetened pineapple juice
1 cup unsweetened crushed canned pineapple, drained
1 cup whipping cream
4 teaspoons artificial sweetener
1 baked pie crust (or crumb crust)

Steps:

  • In small saucepan soften gelatin in cold water. Stir over low heat til it dissolves completely.
  • Add pineapple juice.
  • Cover and refrigerate til mixture begins to set.
  • Whip until light and fluffy.
  • Fold in crushed pineapple.
  • Whip cream til stiff.
  • Beat in artificial sweetener.
  • Fold whipped cream into pineapple mixture.
  • Pour into crust, and refrigerate til firm.

This wonderful pie is just too good for words! I think it's the sour cream that adds so much richness without overpowering. I got this recipe from a junior high school cook I work with. She brought this pie to a get together and I JUST HAD to have the recipe! So smooth, creamy and sweet, it does not taste diabetic! I love this pie!

1 (20 ounce) can crushed pineapple in juice (drained)
1 (1 ounce) package sugar-free instant vanilla pudding mix (4 serving size)
1 cup sour cream (low fat works fine)
1 teaspoon Splenda sugar substitute or 1 teaspoon Equal sugar substitute
1 -9 inch graham cracker pie crust
1 (8 ounce) carton whipped topping (low fat or fat free works fine)

Steps:

  • Mix all ingredients until well combined.
  • Pour into graham cracker crust.
  • Spread whipped topping on top of pie to cover.
  • Chill until se .
  • Serve and enjoy!

Pat the dough into a round, wrap in plastic wrap, and refrigerate for 30 minutes to an hour.
  • Combine the pineapple, sugar, vanilla extract, lemon juice, and water in a medium saucepan over low heat. Cook over low until the pineapple becomes translucent and the water has evaporated. Remove the pan from the heat. Spread the pineapple compote onto a sheet pan lined with plastic wrap to stop the cooking process.
  • Grease an 8-in tart ring with butter, then roll out the tart dough and place into ring. Cut off excess dough from the top of the ring. Cover tart parchment paper and fill with baking beans (or another item to weigh it down). Blind bake the tart dough for 5-10 minutes, or until fully cooked and light golden brown. Remove from oven and let cool.
