Steps:
- Preheat oven to 400 degrees F (200 degrees C). Prepare 12 muffin cups with cooking spray.
- Mix flour, baking powder, stevia, cinnamon, sea salt, and nutmeg together in a large bowl. Beat skim milk, egg, and margarine together in a separate bowl; add to flour mixture and stir just until the dry mixture is moistened. Gently fold minced apple through the batter. Spoon batter into the prepared muffin cups.
- Bake in preheated oven until lightly browned on the tops, about 25 minutes.

DIABETIC FRUIT MUFFINS
My husband is always looking for something different to eat on his night shifts. He loves his fruit cake, but me working full time, I find it difficult to get the time to make his fruit cake then I found this recipe on A.B.C. and make them for him every now and then for a change. I like to use mini muffin pans for these as it makes them go a little further.

Steps:
- Place dates and water in saucepan and bring to the boil.
- Reduce the heat and simmer until dates are soft.
- Stir in bicarbonate soda, mix in banana and margarine until fluffy.
- Add eggs and mix again. Add carrot, apple, sultanas and mixed spice. Mixing well until all combined.
- Add flour and milk until just combined.
- Spoon into muffin trays (I use mini muffin trays) bake for 20 minutes at 180c.

- Preheat oven to 350° F.
- Line 10 muffin cups with paper liners.
- Sift together flour, baking powder, salt, set aside.
- Beat together margarine, Splenda, and honey with an electric mixer until light and fluffy.
- Add eggs one at a time beating well after each addition.
- Stir in vanilla.
- Alternately stir in flour mixture and milk, beginning and ending with flour mixture.
- Fold in berries.
- Spoon batter into paper lined muffin cups, and bake until golden brown and a toothpick inserted comes out clean, about 25-30 minutes.
- Cool in pan 10 minutes on a wire rack.
- Remove from pan.
- Cool completely on wire rack.

DIABETIC BRAN MUFFINS
This is my version of a Company's Coming recipe I made suitable for a diabetic diet. Oil may be replaced with more applesauce if you're watching your fat intake. You can also add rasins, blueberries, apples and cinnamon or anything else you can think of.

Steps:
- In a large bowl combine flour, baking powder, soda and salt. Stir well. Push up around sides of bowl making well in cetner.
- In another bowl stir buttermilk with bran. Let stand 5 minutes.
- Add remining ingredients to bran mixture in order given. Beat with spoon until mixd. Pour into well in flour mixture and stir to moisten. Batter will be lumpy.
- Fill greased muffin cups 3/4 full.
- Bake at 375 for 20-25 minutes.
- Let stand 5 minutes.
- Remove from pan.
SUGARLESS FRUIT NUT MUFFINS
This is from another website. I did a few changes, I have made 12 muffins with 2 cups of chopped prunes. Also made them with dried apricots and dates. You would never know these didn't have sugar in them.

Steps:
- In a saucepan over medium high heat, combine water, dates, raisins and prunes.
- Boil for 5 minutes, water will be absorbed and remove from heat, add chopped up butter and stir till butter is melted.
- Transfer to large bowl and let cool.
- Set oven to 350*F and grease and flour muffin cups or use paper liner.
- Beat in eggs and vanilla. Stir together flour, baking soda, salt and baking powder.
- Mix in nuts and blend into fruit mixture.
- Spoon into muffin cups 2/3 to 3/4 full.
- Bake in preheated oven for 15-20 minutes, or until toothpick inserted comes out clean.
