Steps:

  • Beat pudding mix and milk with whisk 2 min.
  • Spoon half the pudding evenly into 4 dessert glasses; cover with layers of bananas and half the COOL WHIP. Top with remaining pudding and COOL WHIP.
  • Refrigerate 1 hour.

1/4 cup lemon juice
2 cups cold fat-free milk
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
1 cup reduced-fat sour cream
1-1/2 cups reduced-fat whipped topping
8 chocolate wafers, crushed

Steps:

  • In a small bowl, combine bananas and lemon juice; let stand for 5 minutes. In another bowl, whisk the milk and pudding mix for 2 minutes. Refrigerate for 5 minutes. Stir in sour cream. , Drain bananas. Place half of the banana slices in eight parfait glasses; layer with pudding mixture, whipped topping, chocolate wafer crumbs and remaining banana slices. Refrigerate until serving.

1 (3 1/2 ounce) package jello reduced calorie fat-free sugar-free instant chocolate pudding mix
2 medium bananas, sliced
3/4 cup Cool Whip Lite, thawed and divided

Steps:

  • Into medium bowl, pour milk and add pudding mix. With wire whisk beat for 2 minutes or until well blended.
  • Evenly spoon half the pudding mix into 4 dessert glasses. Make layers of banana slices, 1/2 cup of the whipped topping and remaining pudding in each dessert glass. With remaining whipped topping, place a dollop on top.
  • Refrigerate until ready to serve.

1 tablespoon peanut butter
1 tablespoon powdered sugar
1/2 cup granola cereal
2 tablespoons chocolate chips
1 banana, sliced

Steps:

  • in a bowl, mix the yogurt, peanut butter and powdered sugar until smooth. slice your banana. mix the granola and chocolate chips together. you can also use m&m's for children. assemble in layers starting with bananas, then chocolate granola, then yogurt. top with chocolate granola. if you like, you can replace the chocolate chips with chocolate syrup. ENJOY!

My inspiration for this recipe came from the peanut butter and banana sandwiches that Elvis is said to have enjoyed in abundance. With switching some of the higher fat and sugar items for less sinful alternatives this is a rich and tasty parfait that is fit for your king...even if he (and you) need to watch your sugar and fats. I served this in wine glasses because I don't own proper parfait dishes and it looked fit for royalty. You certainly could make this with the full fat and sugar ingredients if you so wished. Made for RSC #12.

1 cup low-fat mascarpone cheese
1/2 cup reduced-fat peanut butter
1 1/2 teaspoons Splenda sugar substitute
3 1/2 teaspoons 2% low-fat milk
1/4 cup slivered almonds
6 graham crackers (3 long strips)
4 tablespoons sugar-free chocolate syrup
1 large banana, sliced thinly
1 cup fat-free cool whip

Steps:

  • Put the mascarpone cheese and peanut butter in a bowl and beat together for about 30 seconds to a minute or until they are combined.
  • Then add in the splenda and milk and beat again until the mixture goes fluffier. This should be about another minute or so but keep your eye on it that it doesn't go too thin. Set aside.
  • Heat a small pan until it is very hot and then put in the slivered almonds and toast them for about 2 minutes, being careful they don't burn. Remove from the burner and set aside.
  • Put the toasted almonds into a mini chopper / food processor and blitz for a few seconds until they are broken up but not yet crumbed.
  • Break up the graham crackers and add those and 1 1/2 tablespoons of the sugar-free chocolate syrup into the mini chopper with the almonds. Blitz again until you have a crumb mixture. The timing on this depends on your machine and the size of your graham cracker chunks but it is usually between 90 seconds and 2 minutes.
  • Set out four wine glasses or parfait dishes and lightly drizzle the bottom of each glass with chocolate syrup.
  • Spoon a layer of the crumb mixture into each glass.
  • Then add a layer of the peanut butter mixture.
  • Top the peanut butter mixture with a few slices of bananas then drizzle the bananas with the chocolate syrup.
  • Repeat the layers and finish up with the banana slice layer on top.
  • If you are going to serve them straight away simply add a dollop of cool whip on top of each glass and drizzle lightly with any remaining chocolate syrup.
  • If you are going to serve them a bit later then you can but the in the fridge for a little bit prior and then add the cool whip and drizzled chocolate just before serving.

2 cups 1% low-fat milk
1/2 cup light sour cream
8 ounces frozen fat-free whipped topping, thawed and divided
3/4 cup chocolate graham cracker crumbs (4 cracker sheets)
1 tablespoon freshly grated chocolate

Steps:

  • Whisk together first 3 ingredients in a bowl until blended and smooth.
  • Fold in 1 1/2 cups whipped topping.
  • Spoon 1 tablespoons crumbs into each of 6 (4-oz.) glasses, and top with 1/3 cup pudding mixture.
  • Repeat layers with remaining crumbs and pudding mixture.
  • Top each parfait evenly with remaining whipped topping and grated chocolate.
  • Cover and chill at least 1 hour.

I found this while searching for recipes to use up half a bag of white chocolate chips I had on hand. I wanted something a little special that was company worthy, but simple enough to do for any old time. This surely did fit the bill on all the criteria need to be filled and you'll never guess where I found it...Food Network's BEHIND THE BASH! Yes, I know..shocked the devil out of me too! Who know fancy food could be oh so easy! I did modify it to make it a more diabetic friendly dish. Keep in mind it's still very sweet and the carbs and fat need to be accounted in your diet. White chocolate chips are pretty much pure sugar. This recipe should be used for ultra special occasions. Don't forget about the sugar in bananas too. Like I said, this is a SPECIAL OCCASION kinda dish. Enjoy it, but keep in mind your dietary needs and limits.

1 (6 ounce) package sugar-free instant vanilla pudding mix
2 1/2 cups cold skim milk (I use 2%, though)
14 ounces sugar-free sweetened condensed milk (my recipe Sweetened Condensed Milk Substitute for Diabetics)
1 (16 ounce) container whipped topping
2 lbs bananas, sliced
1/2-1 cup white chocolate chips, plus
white chocolate chips, for garnish
vanilla wafer cookie, for garnish

Steps:

  • NOTE: My recipe for the diabetic sweetened condensed milk makes 1 cup. Make as much as you need and store the extra in the fridge in a covered dish. Also, if you are on a VERY strict diabetic diet, use only 1/2 of the chips.
  • Mix the pudding mix, milk, and sweetened condensed milk and blend well.
  • Fold in the whipped topping, bananas, and white chocolate chips.
  • Refrigerate overnight. Serve in individual serving cups. Garnish with white chocolate chips and vanilla wafers.
