DEVILS ON HORSEBACK
A family favorite my uncle makes. They are a wonderful balance between salty and sweet, with a combination of crispy, chewy, and crunchy textures. My family destroys a tray of these in fifteen minutes.

- Preheat oven to 400 degrees F (200 degrees C). Soak the toothpicks in a bowl of water. Grease a 9x13-inch baking dish.
- In a bowl, mix together the soy sauce and ground ginger. Place the brown sugar into a shallow bowl. Spread open a pitted date, then stuff it with a smoked almond. Wrap the date with half a bacon slice, secure it with a toothpick, dip the bundle in soy sauce mixture, and then dip it into brown sugar. Place the wrapped dates into the prepared baking dish. If desired, sprinkle a little more brown sugar over the bundles.
- Bake in the preheated oven until the bacon is brown and crisp, 15 to 25 minutes. Allow to cool for about 15 minutes before serving; serve warm or at room temperature.

BLUE CHEESE BACON DEVILS ON HORSEBACK
Steps:
- Soak the dates in the sherry for 2 hours, making sure they're fully submerged.
- Meanwhile, place the blue cheese in a small zip-top bag, then snip one corner off the bag, leaving about a 1/2-inch opening. Leave at room temperature until ready to fill the dates.
- Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).
- Drain but do not rinse the dates. Use a pair of scissors to open each date lengthwise.
- Pipe roughly 1/2 teaspoon of the cheese into each date, then wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
- Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.

- Pre-cook the bacon slices: Working in batches if necessary, cook the bacon slices on medium low heat in a large frying pan, until only about halfway cooked, but not crispy. You need to pre-cook the bacon a bit or else when you cook them with the oysters the oysters will be overcooked by the time the bacon is crispy. Set the bacon aside to cool.
- Heat the grill: Get a grill or broiler good and hot while you wrap the oysters.
- Wrap bacon around oysters: To make an angel on horseback, you wrap 1/2 a piece of bacon around the small oyster and secure it with the toothpick. Overlap the edges of the bacon by about an inch if you can.
- Grill or broil: Grill or broil over high heat to cook the oyster and crisp the bacon, about 5 to 6 minutes on the first side Turn them over and grill another 2 to 4 minutes. You will need to turn them once or twice to get a good crispiness on all sides.
- Sprinkle with lemon or lime juice: As soon as they come off the heat, squirt with the lemon or lime juice and serve hot.

DEVILS ON HORSEBACK APPETIZERS
Don't let the name fool you-this unique combination of prunes, bacon and blue cheese actually tastes quite heavenly.

- Set oven control to broil. Place ovenproof rack on cookie sheet; set aside.
- Place 12 toothpicks in bowl of water to soak.
- Meanwhile, using small sharp knife, cut slit in each prune to make pocket, being careful not to cut all the way through. Stuff prunes with blue cheese.
- Cut each slice of bacon into thirds. Wrap a piece of bacon around each filled prune, using a toothpick to secure. Place on rack on cookie sheet.
- Broil with tops 4 to 6 inches from heat 10 to 12 minutes, turning once to avoid burning bacon. Cool 5 minutes before serving.

- Preheat oven to 400 degrees. Place 24 toothpicks in a small bowl filled with water; let soak 15 minutes. Line a baking sheet with parchment paper and fit with a wire rack; set aside.
- Halve dates lengthwise being careful not to cut all the way through. Place a small amount of cheese in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.

- Place a rack in middle of oven; preheat to 450°F. Very thinly slice parsnip with a vegetable peeler to create wide, long ribbons.
- Whisk soy sauce, paprika, and 1/4 cup oil in a medium bowl. Add parsnip ribbons, toss to combine, and let sit 10 minutes.
- Meanwhile, stuff heaping 1/2-teaspoonfuls of cheese into each date. Place 1 almond in the center of each. Wrap parsnip ribbons around each date, using 2 ribbons if necessary to cover middle section of date; reserve soy sauce mixture. Secure ribbons with a toothpick. Arrange dates on a parchment-lined rimmed baking sheet.
- Bake 5 minutes, then remove toothpicks and brush with soy sauce mixture. Continue to bake until parsnip ribbons are browned and slightly crisped, about 3 minutes more. Serve immediately.
