  • In a small bowl, combine all ingredients except bread; chill.
  • Spread 8 slices of bread with 1/4 cup mixture each. Top with remaining bread.

8 slices bread
8 hard-cooked eggs, finely chopped
1 stalk celery, finely chopped
1/3 cup reduced-fat mayonnaise
2 tablespoons prepared yellow mustard
2 teaspoons cider vinegar
2 tablespoons green onions, minced
salt and pepper

Steps:

  • Place eggs,celery and green onion in a mixing bowl. In a small bowl, stir together mayonnaise, mustard, vinegar, salt and pepper.
  • Pour mayonnaise mixture over eggs and celery and toss gently to combine.
  • Place about 1/2 cup on each of four slices of bread and top with remaining four slices of bread.
  • Tips: if desired, add a lettuce leaf to each sandwich. Also, for added flavor, add one jar (2 ounces) pimiento, drained or 2 tablespoons chopped, drained roasted red pepper to the egg salad; prepare as directed. Also great with a slice of cheese.

4 tablespoons unsalted butter
4 slices pepper jack cheese
2 cups Winning Deviled Ham, recipe follows
1 pound smoked ham, cut into 1-inch cubes
1/2 cup mayonnaise
1/4 cup prepared mustard
1/2 cup chopped onion
2 tablespoons chopped fresh parsley leaves
3 tablespoons maple syrup
2 tablespoons hot sauce (recommended: Tabasco)
1 tablespoon Worcestershire sauce
2 teaspoons paprika
1 teaspoon mustard powder
Salt
Pepper

Steps:

  • Butter each slice of bread on 1 side. Put 4 slices of bread, butter side down, into a large skillet. Top with a slice of cheese and 1/2 cup deviled ham. Place another slice of bread, butter-side up, onto each sandwich. Cover the skillet, put it on medium heat, and cook until the bottoms are nicely browned, about 5 minutes. Turn the sandwiches over and cook until the bottoms are browned, about 3 minutes. Serve while hot.
  • Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.

4 ounces cream cheese, softened
1/4 cup mayonnaise
1/4 cup fresh flat leaf parsley leaves
1 1/2 teaspoons spicy brown mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground black pepper
4 pickled okra plus 1 teaspoon brine (see Cook's Note)
1 shallot, peeled and quartered
8 slices white bread
8 slices pumpernickel bread

Steps:

  • Add the ham, cream cheese, mayo, parsley, mustard, Worcestershire, pepper, okra brine and shallot to a food processor and pulse until you have a pastelike consistency. (You can make this ahead and store in an airtight container, refrigerated, until ready to serve.)
  • Spread 1/4 cup deviled ham over a piece of white bread. Top with a slice of pumpernickel bread to form a black-and-white sandwich. Repeat to form 8 sandwiches total. Gently trim the crusts of the sandwiches. Cut each sandwich on the bias to form 2 triangular tea sandwiches. Serve immediately.

6 ounces sliced boiled ham, coarsely chopped
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon hot sauce
1/4 teaspoon cayenne pepper
2 tablespoons snipped chives
2 English muffins (3/4-inch slices) or 4 slices of firm white bread (3/4-inch slices)
1 tablespoon unsalted butter, softened
2 teaspoons unsalted butter, softened
1 tablespoon extra virgin olive oil
4 large eggs
kosher salt & freshly ground black pepper

Steps:

  • In a food processor, pulse the ham until finely chopped.
  • Transfer the ham to a bowl and stir in the mayonnaise, mustard, hot sauce, cayenne and chives.
  • Toast the bread until golden.
  • Spread the toast with 2 teaspoons of the butter and top with the deviled ham.
  • In a very large nonstick skillet, melt the remaining 1 tablespoon of butter in the olive oil.
  • Crack the eggs into the skillet and cook over moderately high heat until the whites are set, about 2 minutes.
  • Season each egg lightly with salt and black pepper.
  • Using a spatula, set the eggs on the deviled ham sandwiches and serve immediately with a nice fresh fruit salad or sliced wedges of fruit.

1 tablespoon dill relish, drained (more or less to taste)

2 slices garden-ripe tomatoes
1/4 cup Velveeta cheese, cubed very small

  • Mix the first 3 ingredients together.
