3 ounces SPAM® with Bacon, finely diced
2 tablespoons minced dill pickle
1 tablespoon prepared yellow mustard
⅛ teaspoon salt
1 pinch paprika, for garnish

Steps:

  • Place eggs in a single layer in a pot; add water to cover eggs plus one inch. Bring to a boil; cover and remove from heat. Let stand 15 minutes.
  • Transfer eggs immediately to cold water to speed cooling. Tap eggs on a flat surface to break the shell and peel.
  • Slice eggs in half lengthwise; place yolks in a small bowl and set whites aside.
  • Mash yolks and mayonnaise together with a fork; stir in SPAM® with bacon, pickle, mustard, and salt. Spoon yolk mixture into egg whites. Garnish, if desired, with paprika.

6 slices peppered bacon
1 dozen eggs
1/4 cup mayonnaise
1/4 cup heavy cream
1 teaspoon yellow mustard
1 teaspoon sugar
1 teaspoon white vinegar
Hot sauce, such as Tabasco, as needed
Kosher salt and freshly ground black pepper
Paprika, for sprinkling

Steps:

  • Fry the peppered bacon in a pan over medium heat until crisp, 12 to 15 minutes. Remove to a paper-lined plate.
  • Fill a large pot with enough water to cover the eggs, then bring to a boil (without the eggs). Using a slotted spoon, gently lower the eggs into the boiling water. Cover and simmer for 10 minutes. Run the eggs under cold water until completely cooled.
  • Peel the eggs, cut in half and scoop out the yolks into the bowl of a stand mixer fitted with the whisk attachment. Add the mayo, cream, mustard, sugar and vinegar. Add hot sauce if using and salt and pepper to taste. Whip until smooth.
  • Using a small spoon, fill each egg white half with a generous teaspoon of the filling. Lightly sprinkle with paprika. Cut the bacon into chunks and decorate the tops of the egg halves with a shard of bacon.

1 can(s) (12 ounces) spam, low sodium spam, spam with bacon or hot & spicy spam
1/2 c good mayonnaise
1 Tbsp lemon juice
1 1/2 tsp yellow prepared mustard
1 1/2 tsp granulated white sugar
5 dash(es) hot pepper sauce
3 green onions, minced
pinch kosher salt
pinch freshly ground black pepper
paprika or pico de gallo for garnish

Steps:

  • 1. Cut the eggs in half lengthwise and pop the yolks into a medium mixing bowl. Set the whites aside.
  • 2. To the bowl with the yolks, add the Spam cubes and mayonnaise. With the back of a fork, mash it all together until the mixture is relatively smooth.
  • 3. Add the lemon juice, mustard, sugar, pepper sauce, and green onions. Mix well and add a little salt and pepper to your liking. If the mixture is too stiff add a little more mayonnaise and mix.
  • 4. Spoon or pipe the filling back into the egg whites. If desired, dust the tops of the eggs with paprika or pico de gallo. Cover and refrigerate at least one hour before serving.

4 slices bacon (cooked and drained)
8 hard-cooked eggs (peeled)
1/3 cup mayonnaise
1 teaspoon prepared yellow mustard
1/2 teaspoon curry powder
salt and freshly ground black pepper to taste

Steps:

  • Crumble 2 of the bacon slices finely. Break the remaining 2 bacon slices in 8 larger pieces each, for a total of 16 garnish pieces. Reserve.
  • Cut a 1/4-inch thick slice from the end of each hard-cooked egg and reserve the pieces.
  • Cut each egg in half crosswise. If any of the egg halves have holes, place an egg end piece inside to fill the hole.
  • Gently scoop out yolks and place in a bowl.
  • Mash yolks with a fork, then stir in mayonnaise, mustard, and curry powder until well blended. Add salt and pepper to taste.

Pinch Cayenne Pepper
Pinch Cinnamon
4 pieces Bacon, thick cut, applewood smoked
8 Eggs, large
⅓ cup Mayonnaise
2 teaspoons Dijon Mustard
1 ½ tablespoons Dill, fresh (plus more for garnish)
1 tablespoon Cider Vinegar
1 teaspoon Worcestershire Sauce
¼ teaspoon Lemon Pepper
2 Green Onions, minced fine
½ teaspoon Salt
Paprika (for garnish)

Steps:

  • COOK THE BACON
  • In a small bowl, combine the brown sugar, cayenne and cinnamon. Place the bacon on a large baking sheet and sprinkle a teaspoon or so of the brown sugar mixture over each slice of bacon, using only half the total mixture.
  • Bake for 10-15 minutes until the edges are starting to brown. Turn the bacon over and sprinkle the rest of the brown sugar mixture on top and continue to bake until crispy, another 10-15 minutes. Remove and let cool.
  • PREPARE THE EGGS
  • Place the cold eggs directly from the refrigerator into the bottom of a medium size saucepan and cover with cold water, at least 1 inch above the eggs. Bring the water to a boil and let it go for 3 minutes.
  • Remove from the heat and cover with a lid, letting the eggs sit for another 12 minutes. They will continue to cook as they sit in the hot water.
  • Drain the eggs and add cold water to the pan for a couple more minutes to lightly cool the eggs. Drain again and peel while warm. Set aside.
  • MAKE THE EGG YOLK/MAYO MIXTURE
  • In a medium-sized bowl, mix the mayo, mustard, dill, cider vinegar, Worcestershire sauce, lemon pepper, green onions and salt.
  • Slice the eggs in half and gently remove the cooled and cooked yolk. On a plate, smash the yolks with a fork until smooth and there are no large lumps. Alternatively, use a food processor to make the egg yolk/mayo mixture.
  • Chop the bacon into small pieces and add one tablespoon of it to the egg yolk mixture. Reserve the rest of the bacon for garnish.
  • Place the egg/mayo mixture into a large plastic bag to pipe into the egg white shells. Tip: Set an unfilled plastic bag in an empty glass with a wide rim to make it easier to spoon the egg mixture inside.
  • Twist the top of the bag and snip the end with scissors to make a hole. Pipe the filling into the egg white halves.
  • Sprinkle the filled eggs with the remaining candied bacon, more fresh dill and a light dusting of paprika for serving.
