CHERRY ENCHILADAS

Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds.

½ cup water
½ cup butter
½ cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie filling
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 tablespoon crushed sliced almonds

Steps:

  • Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
  • Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

I am sure you have seen these all over facebook and so on, and my only claim to fame is I did change mine a wee bit.The original recipe calls for water but really how much flavor is in water? Plus the only ones I have seen are apple and peach, and you are only limited by your own mind. If there is not a canned pie filling to use...

1 (21) oz can pie filling *see note*
8 (8 inch) round flour tortillas
1 tsp cinnamon
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1/2 c sprite
1/2 tsp flavoring such as vanilla, rum, maple etc
seasonings of choice optional *see note*

Steps:

  • 1. Butter a 9x13 inch casserole dish. Seperate your tortillas.
  • 2. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon and any additional seasoning; roll up, tucking in edges; and place seam side down in prepared dish.
  • 3. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and sprite. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Stir in flavoring of choice or omit if desired. Pour sauce over enchiladas and let stand 45 minutes.
  • 4. Bake in preheated 350 degree oven 20 minutes, or until golden. Serve with vanilla ice cream, whipped cream or a bourbon butter sauce.
  • 5. Note* On the pie fillings, lucky leaf is what I have access to, the premium seems to have a lot more fruit but they are not always available so, I will add about 1/2 can of additional fruit such as peach slices. I also dice all the fruits so they are easier to fold and cut.
  • 6. As for seasonings and flavorings, you can certainly individualize these, when I do berries I usually only put in a bit of nutmeg and use almond flavorings. For Apple, I like to use cinnamon and a bit of ginger and nutmeg, then I add a wee bit of maple. Peach I use cinnamon and cloves an a bit of vanilla. Cherry, I completely omit spices and sprinkle the top with a coarse sugar and add almond flavoring to the sauce. If you do not have what you like then make what you like, I have made mango and sweet potato.

These are SOOOOOOO delicious! I have also made these using peach pie filling in place of apple, it is just as good as the apple! I strongly suggest to double the complete recipe, I could eat pretty much this whole dish just myself, they are that good! you can use your own homemade apple pie filling for this in place of canned --- top these with vanilla ice cream or whipped cream :)

1/2 cup raisins
6 (8 inch) flour tortillas
1 1/2 teaspoons cinnamon
1/3 cup butter (no subs!)
1/2 cup sugar
1/2 cup light brown sugar
1/4 cup water
1/4 cup whipping cream
vanilla ice cream

Steps:

  • Butter a 2-quart baking dish (I use an 11 x 7-inch baking dish).
  • Divide and spoon the pie filling down the center of each tortilla, then sprinkle with raisins (if using).
  • Sprinkle the cinnamon lightly over the filling and raisins.
  • Roll up tortillas and place seam side down in the baking dish.
  • In a saucepan bring butter, white sugar, brown sugar, water and whipping cream to a boil; reduce heat and simmer, stirring constantly for about 3-4 minutes; pour over the enchiladas in the dish.
  • Let stand at room temperature for 30 minutes before baking.
  • Set oven to 350 degrees F.
  • Bake for about 20 minutes.
  • Serve warm with vanilla ice cream.

One 12-ounce jar jalapeno slices, drained
2 cups sour cream, at room temperature
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
3 green onions, sliced, plus more for sprinkling
4 cups grated sharp Cheddar
18 corn tortillas
Enchilada Sauce, recipe follows
1/4 cup olive oil
1/2 cup finely chopped red bell peppers
1/2 cup finely chopped onions
2 tablespoons finely chopped garlic
4 teaspoons chili powder
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
2 beef, chicken or tomato bouillon cubes
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
1 cup chicken stock
Two 15-ounce cans tomato sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a cast-iron skillet over medium-high heat until hot. Add the jalapeno slices to the dry skillet and cook until just starting to blacken. Set aside to cool.
  • Mix together the sour cream, cumin, cayenne pepper, green onions, cooled jalapenos and 2 1/2 cups of the grated Cheddar in a bowl.
  • Using tongs, char the tortillas one at a time over a gas flame for 5 to 10 seconds per side, then dunk each tortilla in the Enchilada Sauce. Lay a tortilla on a plate, then spoon a good 2 to 3 tablespoons of the sour cream mixture in the middle. Roll the tortilla, then place it seam-side down in a 9-by-13-inch baking pan. Repeat with the remaining tortillas and sour cream mixture.
  • Cover the dish with the remaining 1 1/2 cups cheese, then bake until bubbly, 15 to 20 minutes. Sprinkle with extra green onions and serve immediately.
  • Heat the oil in a medium saucepan over medium heat. Add the peppers, onions and garlic and cook until soft, about 2 minutes. Add the chili powder, cumin, cayenne, bouillon cubes and some salt and pepper and cook for 2 minutes. Add the flour and cook for another minute. Add the stock and stir to combine. Add the tomato sauce and 3 cups water and bring to a boil. Lower the heat to a simmer and cook until reduced by one-third, about 20 minutes.
  • Let the mixture cool slightly, then transfer to a blender and puree until smooth.
  • The sauce will keep in the refrigerator for up to a week and can also be frozen.

SIMPLE PERFECT ENCHILADAS

1 tablespoon canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon canola oil
1 pound ground beef
1 medium onion, chopped
Two 4-ounce cans diced green chiles
1/2 teaspoon salt
10 to 14 corn tortillas
Canola oil, for frying
1/2 cup chopped black olives
1 cup chopped green onions
3 cups grated sharp Cheddar
Chopped fresh cilantro, for garnish
Beans and/or rice, for serving

Steps:

  • For the sauce: In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • For the meat: In a large skillet over medium-high heat, add the oil. Brown the ground beef with the onions. Drain the fat, and then add the green chiles. Add the salt and stir to combine. Turn off the heat and set aside.
  • For the rest: In a small skillet over medium heat, lightly fry the tortillas in canola oil just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9 by 13-inch baking dish. Dip each tortilla into the sauce. Set the sauce-soaked tortillas on a cookie sheet. Onto each tortilla, place some of the meat mixture, black olives and green onions. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam-side down in the baking dish. Repeat with the rest of the tortillas. Stir the cilantro into the sauce and ladle a little sauce over the top. End with a generous sprinkling of cheese.
  • Bake the enchiladas until bubbly, about 20 minutes. Sprinkle extra chopped cilantro over the top. Serve with beans and/or rice.

  • Mix apple pie filling, 1 teaspoon cinnamon, and nutmeg in a bowl.
  • Beat cream cheese, confectioners' sugar, and 1/4 teaspoon cinnamon in a separate bowl until whipped and smooth. Stir apple pie filling mixture into cream cheese mixture.
  • Spoon apple-cream cheese mixture into each tortilla; roll tortilla around filling. Arrange rolled tortillas, seam-side down, in a 9x13-inch baking dish.
  • Mix white sugar, brown sugar, water, butter, cornstarch, and vanilla extract in a saucepan; bring to a boil. Reduce heat and simmer, stirring constantly, until sugar is dissolved, about 3 minutes. Spread sauce over rolled tortillas.
  • Bake in the preheated oven on the top rack until enchiladas are bubbling, about 50 minutes.

1 teaspoon cinnamon

1 tsp ground cinnamon
1/2 c butter
1/2 c white sugar (or splenda)
1/2 c brown sugar
1/2 c water
1 tsp vanilla
(6)8 inch-flour tortillas {pre cooked - store bought is great for this, just be sure to buy flour tortillas

Steps:

  • 1. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon (I have my cinnamon in a shaker bottle, so I just sprinkle some on each as I am rolling them) roll up, tucking in edges; and place seam side down in prepared dish.
  • 2. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes, remove from heat and stir in 1 teaspoon vanilla.
  • 3. Pour sauce over enchiladas and let stand 45 minutes .. Don't rush the 45 minute resting time for the sauce on the enchiladas before baking, this step helps to magically transforms the flour tortillas into a faux pasty dough.
  • 4. Bake in preheated oven at 350 degrees F for 30 minutes, or until golden Enjoy!!

1 (21 ounce) can peach pie filling (or flavor of your choice) or 1 (21 ounce) can apple pie filling (or flavor of your choice)
10 (6 inch) flour tortillas
1 teaspoon cinnamon
1/3 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup water
1/2 teaspoon vanilla (optional)

Steps:

  • Preheat oven to 350 degrees Heat whole package of tortilas in microwave for 30-45 seconds.
  • Spoon fruit evenly onto heated tortilas, roll and place seam side down in a lightly greased baking dish (I used 9x13 but probably could use 8x8) In a small sauce pan combine cinnamon, butter, sugars and water.
  • Bring to boil, reduce heat and simmer for 3 minutes, add vanilla.
  • Pour sauce over tortilas.
  • Cover and bake for 20 minutes.
  • Serve warm.

These are delish! Very simple to make. They are so rich, that you may want to share half of it with someone else. I ate this at a local restaurant and had to ask for the recipe. They were so good, that I could hardly believe that they were so simple to make.

4 -60 g chocolate candy bars (I used regular sized Hershey bars, can also use king sized bars)
4 -8 inches flour tortillas
2 scoops vanilla ice cream (I'm a Blue Bunny kinda gal!)
2 teaspoons chocolate syrup, to drizzle (I used Hershey's)
1/2-1 teaspoon powdered sugar, for dusting on top
1/4 cup oil (for frying, I used vegetable oil)

Steps:

  • Place chocolate bar on flour tortilla.
  • Wrap by folding the side closest to you over the chocolate bar and fold in sides, roll up away from you making a burrito fold. Make sure they are folded tight so no chocolate will melt out of the sides when you are frying.
  • Place enough oil to coat bottom of non stick skillet. Depending on size of skillet you use, is how much oil you need. Heat oil. I have an electric glass top stove, and I turned it up to medium heat to heat the oil, and then turned it down between medium and low. This may splatter grease so make sure no kiddios are near by!
  • Fry each enchilada on each side to brown.
  • Place on paper towels to absorb grease.
  • Place on plate.
  • Scoop ice cream on top.
  • Drizzle chocolate syrup over top.
  • Dust with powdered sugar.
  • Enjoy!
