2 (4-inch-long) daikon radishes, thinly sliced
Extra virgin olive oil
Dash of smoked salt
2 wild salmon fillets, 6 to 8 ounces each
3/4 cup raw walnuts or pecans
2 tablespoons pomegranate molasses
1 teaspoon ground anise seed or ground star anise
3/4 teaspoon sea salt
Cilantro, chopped, for garnish

Steps:

  • Place oven rack in the middle position and preheat oven to 350°F.
  • In a baking dish, toss the radishes with a drizzle of olive oil and smoked salt.
  • Place the salmon on top of the radishes, skin down.
  • Pulse the walnuts in a grinder until finely ground.
  • In a medium bowl, whisk molasses, anise seed, and salt to create a smooth glaze. Stir in the ground walnuts to form a thick paste.
  • Spoon the paste over the salmon, distributing it evenly.
  • Bake uncovered for 15 minutes or until the salmon easily flakes away when tested with a fork.
  • Place on serving plates and sprinkle with cilantro.
  • Serve right away.

4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces

  • Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Pinch of cayenne pepper
1 tablespoon fresh lemon juice
1 teaspoon honey
2 tablespoons diced roasted red pepper
1 tablespoon walnut oil
2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh parsley
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives
1 teaspoon grated lemon zest
1 2-to-3-pound piece wild salmon (about 1 1/2 inches thick)

Steps:

  • Make the relish: Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and bake until toasted, 7 to 10 minutes. Let cool, then finely chop and transfer to a bowl. Add the cayenne, lemon juice, honey, roasted red pepper, walnut oil, 1 tablespoon olive oil and 2 tablespoons parsley. Add 1/2 teaspoon salt and black pepper to taste and toss to combine. (The relish can be made up to 1 day ahead; cover and refrigerate.)
  • Make the salmon: Raise the oven temperature to 425 degrees F. 3 cups California walnuts
6 tablespoons dry bread crumbs
6 tablespoons lemon rind, finely grated
3 tablespoons extra virgin olive oil
3 tablespoons fresh dill, chopped
1 pinch Salt and pepper
12 (3 ounce) salmon filets, skin on
1 tablespoon Dijon mustard
¼ cup fresh lemon juice

Steps:

  • Place walnuts in food processor; coarsely chop. Add bread crumbs, lemon rind, olive oil and dill; pulse until crumbly. Mixture should stick together. Season; set aside.
  • Arrange salmon fillets skin side down on parchment paper lined baking sheets. Brush tops with mustard.
  • Spoon 1/3 cup of walnut crumb mixture over each fillet; gently press the crumb mixture into the surface of the fish. Cover with plastic wrap; refrigerate for up to 2 hours.
  • Bake at 350 degrees F 15 to 20 minutes, or until salmon flakes with a fork. Just before serving, sprinkle each with 1 tsp lemon juice.
