HOW TO MAKE PERFECT SCONES
Use this basic scone dough for any sweet scone variety. See blog post for a couple savory scone options. Feel free to increase the vanilla extract and/or add other flavor extracts such as lemon extract or coconut extract. Read through the recipe before beginning. You can skip the chilling for 15 minutes prior to baking, but I highly recommend it to prevent the scones from over-spreading.

- Whisk flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
- Whisk 1/2 cup heavy cream, the egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the add-ins, then mix together until everything appears moistened.
- Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it's too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges. For smaller scones, press dough into two 5-inch discs and cut each into 8 wedges. To make 10-12 drop scones: Keep mixing dough in the bowl until it comes together. Drop scones, about 1/4 cup of dough each, 3 inches apart on a lined baking sheet. To make mini (petite) scones, see recipe note.
- Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
- Place scones on a plate or lined baking sheet (if your fridge has space!) and refrigerate for at least 15 minutes.
- Meanwhile, preheat oven to 400°F (204°C).
- Line a large baking sheet with parchment paper or silicone baking mat(s). If making mini or drop scones, use 2 baking sheets. After refrigerating, arrange scones 2-3 inches apart on the prepared baking sheet(s).
- Bake for 18-26 minutes or until golden brown around the edges and lightly browned on top. Larger scones take closer to 25 minutes. Remove from the oven and cool for a few minutes. Feel free to top with any of the toppings listed in the recipe Note below.
- Leftover scones keep well at room temperature for 2 days or in the refrigerator for 5 days.

- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

- Preheat the convection oven to 350 degrees F.
- Add all the dry ingredients into a large bowl and stir to combine. Grate the frozen butter into the dry ingredients. Add the blue cheese, spinach, parsley, and green onions. Make a well and add the eggs and half the buttermilk. Fold until just holding together , adding more buttermilk as needed. Line a sheet pan with parchment paper. Scoop 3-ounce portions of batter onto the paper. Bake for 22 minutes.
EASY FOOD PROCESSOR SCONES
Steps:
- Combine the flour, sugar, baking powder, and salt in a food processor.
- Add in the cold butter cut into smaller pieces and blend until the mixture looks like crumbs.
- In a bowl beat the egg and stir in the heavy cream. Add to the food processor and pulse until it's completely combined and comes together to form a dough. Be careful not to over mix.
- Turn dough out onto a lightly floured surface and form into a ball. Cut the ball in half. Form each half into a flat disk about 3/4 inch thick. Cut each disk into 6 wedges. Brush with more heavy cream and sprinkle with some sugar.
- Bake at 425 F on a cookie sheet for about 10 minutes, or until the tips of the wedges start to turn golden brown.

QUICK AND EASY HOMEMADE SCONES
Homemade scones, dripping with strawberry jam, are a favourite British tea-time treat. I've been making this quick and easy recipe for years, and it never fails. The scones are fluffy and delicious, and with only 4 basic store cupboard ingredients and 10 minutes of prep time, you could be enjoying your own homemade scones today!

- Pre-heat oven to 200°C / 400°F
- Sift flour into a mixing bowl and add the salt.
- Rub the butter into the flour until it resembles fine breadcrumbs
- Mix in the sugar.
- Add the milk and stir with a knife until just incorporated. Add extra milk, one tablespoon at time, if the mixture is too dry.
- Tip out onto a lightly floured surface and knead lightly until the mixture comes together in a soft ball.
- Press out into a flat circle or rectangle to roughly 2 cm thickness.
- Cut circles with a fluted cookie cutter and place on a baking tray lined with baking parchment
- Brush the top of the scones lightly with milk
- Place the tray into the centre of a pre-heated oven and bake for 20 minutes until nicely browned.
- Remove from the oven and allow to cool.
- Serve spread with butter and strawberry jam. You could also top with a spoonful of whipped cream.
- Best eaten fresh.

- Preheat oven to 375°F Grease a mini loaf pan or tin pie plate. Mix flour, oats, baking poder, salt, and nutmeg in a bowl. Cut in chilled butter (be generous with that "tablespoon" -- ).
- Add honey, almond extract, egg white, and half & half, and mix briefly. (Batter will be wet.).
- Scrape into greased tin and bake for 10-15 minutes, or until a toothpick inserted into the center comes out clean. Enjoy hot, with a steaming mug of coffee!

MARMALADE SCONES
I adapted this recipe from my "delicious tea scones" one, after making 3 jars of marmalade which failed to set! It was a great way to use up all that marmalade syrup, in a way which didn't end in the garbage bin. Although I haven't tried it, I am sure any good marmalade would do the trick in the place of "liquid marmalade."

- Combine the sugar, salt, baking powder, and flour. I usually do 2/3 white, and 1/3 wholewheat flour for a slightly grainy look.
- Add the butter with your hands, until the mixture looks crumbly.
- In a smaller separate bowl, blend the eggs and milk, then add these to the above, not mixing thoroughly.
- Now, measure out 1/4 cup marmalade (or less) and gradually add the full amount of marmalade until a satisfactory taste level is reached. I usually do the full 1/2 cup, but do as you please- not everyone likes marmalade as much as I do!
- Roll into a flat-ish disc about 1 1/2" thick. Cut into 12 triangles/square shapes. Place on a baking sheet lined with parchment paper for an easy cleanup.
- Bake for 10-15 minutes at 425F until golden brown. For an elegant look, bake for the last 3-5 minutes with brown sugar sprinkled on top.
- Finally, enjoy! These are best when served hot.

- Preheat oven to 400°F. Sprinkle baking sheet lightly with flour. Combine 2 cups cake flour, sugar, baking powder and salt in large bowl. Add butter and rub in with fingertips until mixture resembles coarse meal. Beat egg and 7 tablespoons milk in small bowl. Pour egg mixture over dry ingredients, tossing with fork until moist and adding 1 more tablespoon milk if dry. Gather dough into ball. Turn out onto lightly floured surface. - Preheat oven to 400° F and butter a baking sheet.
- Pour boiling water into a small cup and steep tea bag 2 minutes. Remove and reserve tea bag and stir in currants. Into a bowl sift together flour, 2 tablespoons sugar, baking powder, and salt. Cut butter into 1/2-inch cubes and add to flour mixture, blending with fingertips until most of mixture resembles coarse meal with remainder in small (roughly pea-size) lumps. Squeeze liquid from tea bag into cup and discard bag. With a fork stir 6 tablespoons half-and-half into flour mixture until just combined and a sticky dough is formed. Stir in currant mixture.
- Turn dough out onto a lightly floured surface and form into a 5-inch round. Transfer round to baking sheet and with a pastry brush lightly coat with additional half-and-half. Sprinkle dough with remaining 1/2 teaspoon sugar and with a knife score 1/4-inch deep into quarters.
- Bake scones in middle of oven 20 to 25 minutes, or until golden, and transfer to a rack to cool. Break scones along score marks and serve warm or at room temperature.
