LONDON BROIL WITH HERB BUTTER

1 beef bouillon cube
3 tablespoons extra-virgin olive oil
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 top round London broil steak (about 2 pounds)
4 tablespoons unsalted butter, softened
1 1/2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil or tarragon
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice

Steps:

  • Prepare the steak: Dissolve the bouillon cube in 3/4 cup hot water in a bowl; set aside to cool. Whisk in 2 tablespoons olive oil, the soy sauce, Worcestershire sauce, lemon juice, 1 teaspoon salt and 1/2 teaspoon pepper. Place the steak in a large resealable plastic bag, pour in the marinade and seal, squeezing out the air. Refrigerate for at least 4 hours or up to 1 day.
  • Prepare the herb butter: Mix the butter with the chives, parsley, chervil, a pinch of salt, 1/2 teaspoon pepper and the lemon juice in a bowl.
  • About 30 minutes before cooking, remove the meat from the bag (discard the marinade), dry it well and bring to room temperature. Heat a large heavy skillet over high heat, about 2 minutes. Rub the steak with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon salt over the surface of the pan; add the meat and set a heavy skillet on top to weigh it down. Sear for about 7 minutes; turn the steak, replace the weight and cook until a thermometer inserted into the side reads 110 degrees for medium-rare, about 5 minutes.
  • Transfer the steak to a cutting board; brush with some of the herb butter, tent with foil and let rest for about 10 minutes. Thinly slice against the grain; top with more herb butter and drizzle with the pan juices.

1 1/2 lbs london broil beef or flank steaks about 1 1/2 inches thick
1 tablespoon Worcestershire Sauce
1/2 teaspoon Garlic powder
1/2 teaspoon Onion powder
salt and pepper

2 tablespoons butter no margarine please
1 shallot finely chopped
2 tablespoons All-purpose flour
2 cups Beef broth
1/4 cup steak sauce your favorite

Steps:

  • Turn broiler on. Brush meat with Worcestershire and season with onion and garlic powder and salt and pepper. I like to massage this all into the meat and let it rest while the broiler preheats. Cook London broil on top rack for 6 minutes on each side, for medium rare to medium doneness. Remove meat from broiler and let it rest 5 minutes. IMPORTANT- do NOT skip this step. The juices will redistribute throughout the meat during this rest time and continue to cook. This will give you a very juicy steak. Place a small skillet over medium heat. Melt 2 tablespoons butter, add finely chopped shallot, cook 2 minutes, then whisk in flour and cook 1 minute. Add 2 cups beef broth to the pan and bring to a bubble. Cook for 2 minutes to allow the broth to reduce a little. Add 1/4 cup steak sauce and black pepper, to taste. Very thinly slice the meat on an angle against the grain (the lines in the meat). The degree to which you can slice thinly slice the meat will determine how tender it is to cut and chew, so make sure the carving knife is sharp ? the thinner the better! Transfer the slices to a platter keeping them lined up as you sliced them, forming a whole steak, just sliced. Pour gravy down the center and serve any remaining gravy on the side. We like this with egg noodles or a baked potato, a green salad and some crusty bread. Oh and of course a nice glass of wine!

1 teaspoon salt
3 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon vegetable oil
½ teaspoon ground black pepper

4 pounds flank steak

Steps:

  • In a small bowl, mix together garlic, salt, soy sauce, ketchup, vegetable oil, black pepper and oregano.
  • Score both sides of the meat, diamond cut, about 1/8 inch deep. Rub garlic mixture into both sides of the meat. Wrap tightly in aluminum foil, and refrigerate for 5 to 6 hours, or overnight. Flip meat every few hours.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Place meat on the prepared grill. Cook for 3 to 7 minutes per side, or to desired doneness.

1 ½ pounds top round, London Broil cut
1 tablespoon meat tenderizer
⅓ cup vegetable oil
2 teaspoons lemon juice
2 teaspoons seasoning salt
¼ teaspoon lemon pepper
2 cloves garlic, minced
4 teaspoons chopped fresh parsley
2 teaspoons tarragon vinegar

Steps:

  • Score top and bottom of meat with a 1 1/2 inch square pattern, and score the side. Sprinkle meat liberally with unseasoned meat tenderizer, then pierce with fork 1/8 inch apart and at least half-way through the meat on both sides. Sprinkle lightly with water, and rub in tenderizer. Place on a plate, cover, and set aside for an hour.
  • In a small bowl, mix together oil, lemon juice, seasoned salt, lemon pepper, garlic, parsley, and tarragon vinegar. Pour marinade over meat, reserving a portion to be used for brushing (Note: DO NOT mix the reserved marinade with the meat; set aside for later). Pour remaining marinade over meat, recover dish and refrigerate for three hours, turning every half hour.
  • Preheat grill for hot heat.
  • Lightly oil grate, and position it 2 inches above the coals. Place meat on grill, and cook for 5 minutes. Turn meat over, brush with marinade, and cook for another 5 minutes.

1 pound top round London broil steak
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
1 cup fresh parsley leaves
1/4 cup fresh rosemary leaves
2 tablespoons fresh thyme leaves
4 cloves garlic, grated
2 scallions
Zest and juice of 1 lemon, plus lemon wedges for serving
1/2 teaspoon fennel seeds
1/2 teaspoon crushed red pepper flakes
1/2 cup extra-virgin olive oil
1 head broccoli rabe (about 1 pound), trimmed
1 bunch kale, stems removed, leaves roughly chopped (about 4 cups)

Steps:

  • Pat the London broil dry with paper towels and set on a plate. Rub both sides of the meat with the vegetable oil, then season both sides generously with salt and black pepper, coating the surface evenly. Set aside to rest at room temperature for at least 30 minutes or up to 1 hour. (The seasoned meat can also be transferred to a large resealable plastic bag and stored in the refrigerator overnight. Let rest at room temperature for 20 minutes before cooking.)
  • While the meat rests, add the parsley, rosemary, thyme, garlic, scallions, lemon zest and juice, fennel seeds, red pepper flakes, 1 teaspoon salt and 1/2 teaspoon black pepper to a food processor. Pulse, stopping to scrape the sides as needed, until the herbs are finely chopped, about 10 times. Transfer the herb mixture to a small bowl and whisk in the olive oil. Set aside.
  • Set a 10-inch cast-iron skillet over high heat until just starting to smoke, about 3 minutes. Add the steak and cook until seared on the bottom, about 3 minutes. Flip the steak and continue cooking until an instant-read thermometer inserted sideways into the center of the steak registers between 120 and 125 degrees F, about 3 minutes more. Transfer the steak to a clean plate and spoon 1/2 cup of the herb oil over top. Set aside to marinate for 5 minutes.
  • While the steak marinates, heat the broccoli rabe to the same cast-iron skillet over high heat. Cook, using tongs to toss the broccoli rabe, until it's vibrantly green and starting to soften, about 2 minutes. Add the kale and continue cooking and tossing until the kale is wilted and the broccoli rabe is crisp-tender, about 2 minutes more. Add 1/4 cup of the herb oil and toss to combine. Remove the skillet from the heat.
  • Thinly slice the rested steak against the grain. Transfer the steak to the skillet on top of the greens and spoon the remaining 1/4 cup of herb oil over the steak. Serve with lemon wedges.

1 large head cauliflower, cut into florets
3 cups chicken stock
4 tablespoons butter, cut into pieces
1 cup shredded white extra-sharp Vermont Cheddar (recommended: Cabot brand)
1/4 cup grated Parmigiano
Coarse black pepper and salt
A generous grating nutmeg
1 1/2 pounds shoulder London broil steak, 1 1/2 inches thick
1 tablespoon Worcestershire sauce
2 tablespoons vegetable oil or olive oil, 2 turns of the pan
1/2 pound ham, chopped
6 cups chopped red chard, 1 large bundle
3 tablespoons red wine vinegar, eyeball it
1 tablespoon honey
1 shallot, finely chopped
2 tablespoons all-purpose flour
2 cups beef broth
1/4 cup steak sauce (recommended: A1 or Lea and Perrin's brands)

Steps:

  • Place cauliflower in a medium shallow pot or pan. Add stock, cover and place pot over high heat. When liquid boils, reduce heat to simmer and cook covered 10 minutes. Remove cover, raise heat to medium high and allow the broth to reduce by half, 2 minutes. Add 2 tablespoons butter, cut into pieces and the cheeses and smash the cauliflower with a masher to the same consistency as desired for mashed potatoes. Season the cauliflower with black pepper, a pinch of salt and nutmeg.
  • Turn broiler on. Brush meat with Worcestershire and season with salt and pepper. Cook London broil on top rack for 6 minutes on each side, for medium rare to medium doneness.
  • While steak and cauliflower cook, heat a second large skillet over medium-high heat. Add oil, 2 turns of the pan, and ham. Sear ham and caramelize at edges, 2 minutes.
  • Add chard and wilt the greens into the pan then season with salt, pepper and a dash of nutmeg, optional. Cook 5 to 7 minutes more, turning frequently with tongs then add vinegar to the pan and a drizzle of honey. Turn to coat the greens, adjust seasoning and transfer to a serving dish.
  • Remove meat from broiler and let it rest 5 minutes.
  • Place a small skillet over medium heat. Melt remaining 2 tablespoons butter, add finely chopped shallot, cook 2 minutes, then whisk in flour and cook 1 minute. Add 2 cups beef broth to the pan and bring to a bubble. Reduce the broth 2 minutes then add 1/4 cup steak sauce and black pepper, to taste.
  • Very thinly slice the meat on an angle against the grain (the lines in the meat). The degree to which you can slice thinly slice the meat will determine how tender it is to cut and chew, so make sure the carving knife is sharp ¿ the thinner the better!

1 london broil beef, thick cut
salt, to taste
black pepper, to taste and preferably freshly ground
1 tablespoon canola oil
8 green onions, green and white parts chopped into 1/2 inch pieces
8 ounces sliced mushrooms
2 garlic cloves, smashed or pressed through a garlic press
3/4 cup dry white wine
3/4 teaspoon beef bouillon paste

Steps:

  • Heat a large, heavy saute pan over medium high heat.
  • When hot, add oil and swirl pan to cover bottom of pan completely.
  • Salt and pepper one side of the London Broil.
  • Place seasoned side down in the prepared pan.
  • Salt and pepper the remaining side and add a splatter screen to the pan.
  • For medium-rare, saute meat for three minutes on the first side.
  • Turn and saute for three and a half minutes on the other side.
  • For more well-done meat, saute four minutes per side.
  • Using tongs, transfer meat to a heated plate and place in very low-heat oven (150 degrees).
  • Return pan to burner and while stirring, add the green onions, garlic and mushrooms.
  • Stir just until onions start to wilt.
  • Pour in wine and add bouillon paste.
  • Stir up any browned bits and boil until liquid decreases by half.
  • When sauce has reduced, slice meat on the bias into thin strips and serve with sauce.

4 tablespoons chipotle chiles in adobo, minced
2 tablespoons honey
6 garlic cloves, finely chopped
4 tablespoons olive oil
1 (2 1/2 lb) flank steaks
2 teaspoons kosher salt
fresh cilantro, chopped for garnish
lime wedge, for serving

Steps:

  • In a bowl, whisk together the minced chipotles, honey and garlic; whisk in the oil.

I have made London Broil frequently in the past, sometimes from recipes, sometimes my own concoctions but the preparation has always involved a long marinade to help tenderize and flavorize the meat. I have used a myriad of different combinations; soy, garlic, balsamic, honey, brown sugar and ginger have all been employed and generally the results have been quite good. This recipe, from Cooks Illustrated, is quite different; no marinade, no special flavorings, just a sprinkle of salt, a good tight wrap, a sit in the refrigerator and a a shower of freshly ground pepper. Sound boring? Au contraire, mon ami! It brought rave reviews from the chief culinary consultant and I thought it definitely ranked as the best London Broil I've ever made.
