Delicious Italian Avocado Appetizer Food
DELICIOUS ITALIAN AVOCADO APPETIZER
My mom gave me this reciped years ago. It is so different from guacamole. Here in west Texas, we get our share of guacamole and this is a welcome change. The flavor of the Italian dressing adds the zing, and the green chilis add a little punch. If you like it hotter, just add one chopped jalapeno. The avocadoes need to be firm enough to chop and not mushy like you want them to be for guacamole. Buy firm, not hard as a rock, avocadoes. Cooking time is for refrigeration. Enjoy!

Steps:
- Peel and seed avocadoes, dice.
- Dice tomatoes.
- Chop green onion.
- Mince garlic.
- Add all ingredients to a mixing bowl.
- Stir gently together. Be gentle about this as you don't want to mash the avocado.
- Cover and refrigerate at least 4 hours for flavors to develop.
- Serve with tostadas or hefty chips.
- Enjoy all the compliments.
- You may have to take copies of this recipe where ever you serve it.

AVOCADO, TOMATO & FETA CHEESE APPETIZER
This came in the mail from a Ralphs Grocery Store flyer. My whole family loved it. I didn't have cumin, so I used coriander and it was great. I served this with "Sesame Thin" crackers from Trader Joes and "Just Chips" from Just Off Melrose.

Steps:
- Combine the avocados, tomatoes and onion in a bowl. Mix gently. Stir in cilantro. Add feta cheese, olive oil, vinegar, cumin and salt and mix until combined. Chill covered in the refrigerator. Serve with warm pita wedges, tortilla chips or crostini. Refrigerate leftovers.

- Preheat a cast iron plate for griddle over medium high flame. Grill the bread on each side until charred.
- Rub one side of each slice of the grilled bread with the garlic clove to your liking, the brush lightly with olive oil. Season with a pinch of sea salt.
- Slice the avocado, discard the pit and scoop the flesh into a bowl. Squeeze some of the lemon juice on top, add a pinch of sea salt and lightly smash it with the back of a spoon or fork.
