SUPER SIMPLE SUCCOTASH

4 thick slices bacon, chopped
1 pint cherry tomatoes, halved
2 cloves garlic, chopped
1 small yellow onion, chopped
5 ears corn, shucked and kernels cut off (about 5 cups)
5 ears corn, shucked and kernels cut off (about 5 cups)
2 cups canned lima beans, rinsed
1/4 cup fresh basil leaves, torn
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Place a large skillet over medium heat, then add the bacon and cook until the fat has rendered and the bacon has crisped, about 10 minutes. Add the tomatoes, garlic and onions and cook until the onions have softened a bit, about 5 minutes. Add the corn and cook another 2 minutes. Add the lima beans and then remove from the heat. Stir in the basil and red wine vinegar, season with salt and pepper and serve.

This recipe is from a Church Cook Book ,"The Early Days of Yore". A previous neighbor copied it, and mailed to me a few years back. It is a very old recipe from the eastern colonies. MADE WITH LIMA BEANS, CORN, AND SALT PORK. It is a wonderful dish to take to pot luck dinners. It is always an unexpected dish, and enjoyed by all.

2 c fresh or frozen lima beans
2 ounces salt pork
1/2 c water
1/2 tsp salt
1/2 tsp sugar
dash(es) pepper
2 c fresh or frozen whole corn
1/3 c light cream.. ..* see note
1 Tbsp flour

Steps:

  • 1. In a saucepan combine limas,pork,water salt,sugar and pepper. Cover, & simmer till beans are ALMOST tender. No cooking time given..it varies with fresh or frozen vegetables. Watch your pot. (and maybe while you are in the kitchen anyway, make some Corn Pone! YUM!) Cover and simmer till vegatables are tender. Remove salt pork. Blend cream slowly into flour. Stir into vegatable mixture. Cook till thickened and bubbly. Stir in corn
  • 2. *** No light cream?? Not to worry, make your own! Use 7/8 a cup of whole milk plus 3 Tablespoons of melted butter. Combine. Easy...eh?

2 tablespoons chopped parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 tablespoon brown sugar
4 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
3 cups roasted corn, about 6 ears
Vegetable oil
1 1/2 pounds green beans, washed
Salt
2 cups diced tomato
2 cups canned lima beans, rinsed
1 cup orange bell pepper, diced

Steps:

  • For the dressing:
  • Add all ingredients in a bowl and mix well.
  • For the salad:
  • Preheat grill to medium heat.
  • Peel husks off of corn. Remove the fine hairs along the corn. Lightly oil corn ears and place on grill and turn occasionally. Cook for 15 minutes. Cut the corn away from the cob and place into a large bowl.
  • Slice green beans into thirds. Cook the green beans in salted boiling water for about 3 minutes. Drain and run under cold water until cooled. Chop and mix with diced tomatoes, lima beans, bell pepper and roasted corn. Add dressing and mix well. Refrigerate until ready to serve.

Steps:

  • In a large skillet, cook bacon until crisp. Remove bacon to paper towels and drain all but 1 tablespoon drippings. , In the same skillet, add the corn, beans, green pepper and onion. Simmer for 10-15 minutes or until vegetables are almost tender, adding water if necessary. Stir in tomatoes and bacon; cook just until tomatoes are heated through.

1 cup tomatoes, peeled,cored,seeded and diced

  • Boil lima beans in salted water for 5 minutes or until tender.
  • Drain well.
  • Melt butter in saute pan over medium low heat.
  • Add onions, beans, corn and tomatoes.
  • Saute, stirring often for approximately 5 minutes.
  • Add salt and pepper to taste.
  • Serve hot.

4 sweetcorn cobs
1 tbsp olive oil
2 garlic cloves , crushed
100g frozen baby broad bean
1 red chilli , deseeded and chopped
large handful basil , chopped
large handful mint , chopped
1-2 tsp sherry vinegar

Steps:

  • Use a knife to cut down the length of the sweetcorn to remove the kernels. Heat the oil in a large lidded pan. Cook the kernels and garlic over a medium heat for 5 mins, stirring all the time.
  • Add the frozen beans to the pan, cover and cook, stirring every so often, for another 4-5 mins or until the beans are cooked through. Turn off the heat and add the chilli, herbs and vinegar. Taste and add seasoning, if you like.

1/2 cup milk
2 Tbsp. butter
2 Tbsp. HEINZ Apple Cider Vinegar
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • Cook bacon in large skillet on medium-high heat until crisp. Remove bacon with slotted spoon; drain on paper towel. Cook and stir onions in reserved bacon drippings until tender.
  • Add lima beans and water; stir. Cook 5 min. or until beans are just tender, stirring occasionally.
  • Stir in corn, milk, butter and vinegar. Bring to boil. Reduce heat to medium; simmer 10 min. Stir in bacon. Season with the salt and pepper.
