CRISPY TOFU WITH MAPLE-SOY GLAZE
Whenever you're cooking tofu, here's one of our no-fail techniques: Draining the tofu, then squeezing out as much water as possible (without smashing it), is the key to the crispiest cubes.

Steps:
- Drain tofu, then sandwich between several layers of kitchen towels to remove excess liquid. Cut into 9 cubes.
- Whisk soy sauce, maple syrup, rice vinegar, red pepper flakes, and ginger in a small bowl.
- Heat oil in a large nonstick skillet over medium-high. When oil is rippling across the surface, carefully add tofu so it doesn't splash. Cook, undisturbed, until very crisp and dark brown underneath, 3-4 minutes. Carefully turn and repeat on opposite side. Holding tofu back with a spatula or slotted spoon, pour out oil into a small bowl. Return skillet to medium-high heat and add soy sauce mixture. Cook, reducing heat to medium so it doesn't over-reduce or burn and basting tofu occasionally, until glaze is thick enough to coat a spoon, about 4 minutes.
- Divide tofu among plates. Drizzle with glaze, then top with scallions. Serve with rice alongside.

Steps:
- In a medium saucepan on medium high heat, saute the tofu in olive oil until browned.
- Reduce the heat to medium low and add the garlic, ginger, and chili sauce. Saute for 5 minutes.
- Add the maple syrup, Braggs, and lemon juice.
- Cover and cook until the liquid has evaporated.
- Garnish with the roasted almonds. Enjoy!

Recently came across this on the Internet and want to try it soon as I love sweet/spicy combinations. Note actual nutritionals are not adjusted for discarding the marinade. Total time does not include marinading time. Posting for the 2005 'Zaar World Tour.

Steps:
- Place tofu block onto short-side and slice into 4 square wedges (they will be thin). Lay the tofu flat again, and cut the block diagonally to make 8 triangles. Without separating the pieces, place tofu on a plate. Cover with a paper towel, and place a heavy skillet on top. Set aside for 30 minutes to drain excess water from the tofu.
- In a medium bowl, whisk together the orange juice, vinegar, soy sauce, oils, garlic, ginger.
- Separate the pressed tofu pieces, and arrange in a baking dish in a single layer. Cover with the marinade, and sprinkle with the green onion, chili strips and cilantro. Cover with plastic wrap, and refrigerate for at least 30 minutes and up to overnight.
- Preheat oven to 350 degrees.
- Pour off some of the marinade, so the tofu is covered halfway. Bake for 40 to 45 minutes, without turning, until the tofu is golden and most of the marinade has been absorbed.

- In a greased 10x15 pan, place the corn chips.
- In a saucepan, bring the sugar and corn syrup to a boil over medium heat.
- Remove from heat and stir in the peanut butter until smooth.
- Pour this over the chips and smooth it out level.
- Place the chocolate bars in a single layer over the hot mixture and wait a few minutes until the heat melts them and then smooth the chocolate out to form a thin layer.
- Allow to cool and then break into pieces.

- Combine the chili paste and lemongrass.
- Season tofu with salt then coat with chili paste/lemongrass mixture. Allow the tofu to marinate for about 10 minutes.
- Heat the oil in a pan. Once the oil is hot enough; carefully add the tofu cubes. Fry for 2-3 minutes on each side until carmelized, careful not to crowd. Remove from oil. Sprinkle with sesame seeds.
- Note: 1. Soft tofu produces a better 'bite', but firm tofu produces a crispier end product. 2. I might even consider sprinkling on the sesame seeds prior to cooking just as a test.

- Press the tofu using a tofu press or by wrapping the block in a dish towel and placing a heavy object on it. Let it sit for 20-30 minutes. This removes excess moisture for a crisper and more flavourful result.
- Cut the tofu into small cubes and add them to a bowl or plastic bag. Add the cornstarch and soy sauce and toss to coat.
