Easy Grilled Honey-Dijon Chicken image

2 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon extra-virgin olive oil, plus more for grill
1/2 teaspoon kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts, butterflied
1 lime, cut into wedges

Steps:

  • In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate. Refrigerate at least 2 hours.
  • Preheat the grill to medium heat.
  • Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.

2 cups water
1 cup light brown sugar
1/2 head garlic, unpeeled
4 slices fresh ginger root, gently bashed to open up
2 tablespoons kosher salt
8 sprigs fresh thyme
2 cups teriyaki sauce
1/4 cup honey
1 large (1-inch) piece fresh ginger root, sliced and bashed to open up
1 head garlic, halved crosswise
1 teaspoon toasted sesame oil, plus 1/2 cup
Freshly ground black pepper
Scallion threads, for garnish
Toasted sesame seeds, for garnish

Steps:

  • Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
  • Preheat grill to low-medium heat.
  • Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.
  • Remove chicken from brine and pat dry. Discard the brine. Add the chicken to a large mixing bowl, drizzle with the 1/4 cup toasted sesame oil and season with freshly ground black pepper. Toss to coat and cook on a low-medium grill for 17 to 20 minutes per side until cooked through. Baste with teriyaki glaze for the last 5 to 7 minutes of cooking. Serve garnish with scallion threads (finely sliced scallions cut on the bias soaked in ice cold water), and toasted sesame seeds.

Steps:

  • Mix mustard, marmalade, ginger and garlic.
  • Place chicken in glass dish or plastic bag. Pour 1/4 cup of the mustard mixture over chicken; turn to coat. Cover. Refrigerate at least 1 hour. Remove chicken from mustard mixture; discard mustard mixture.
  • Grill or broil chicken 5 to 6 minutes on each side or until cooked through. Heat remaining mustard mixture. Serve over chicken.

4 skinless boneless chicken thighs, cut into bite-size pieces
1 tbsp vegetable oil, plus extra for frying
½ tsp sea salt
1 large free-range egg, beaten
60g/2¼oz plain flour
25g/1oz cornflour
1 large garlic clove, minced
3-4cm/1-1½in fresh root ginger, peeled and grated
1 red chilli, thinly sliced
2 large spring onions, roughly chopped
2 tbsp runny honey
1 tsp dark soy sauce
1 tsp Shaoxing rice wine, or dry sherry
½ tsp toasted sesame oil
½ lime, juice only

Steps:

  • Make the sauce by whisking together all the ingredients along with 4 tablespoons cold water. Set aside.
  • In a medium bowl, toss the chicken pieces with the vegetable oil and sea salt. Stir the egg into the chicken, then add the flour and the cornflour and stir with a metal spoon until the chicken is well coated.
  • Heat enough oil to just cover the bottom of a large wok or frying pan over a medium-high heat. Once the oil is shimmering, add the chicken pieces in batches and fry for a few minutes on each side until golden. Set the chicken aside to drain on a plate lined with kitchen paper.
  • Discard all the oil in the pan and carefully wipe it clean with another piece of kitchen paper. Return the pan to a medium heat and gently fry the garlic, ginger and chilli in a teaspoon of oil for about a minute until fragrant. Return the chicken to the pan and stir in the sauce. Bring the sauce to a simmer and allow it to bubble away for a minute or so until it has thickened slightly and is coating the chicken.
  • Serve immediately, with the chopped spring onions sprinkled over the top.

2/3 cup finely chopped fresh basil
2/3 cup honey
2 tablespoons olive oil

2 medium yellow sweet peppers
2 medium sweet red peppers
vegetable oil cooking spray

Steps:

  • Combine the first 6 ingredients.
  • Cut the peppers into 1-2" pieces.
  • Add the chicken breasts& peppers to the honey mixture.
  • I put all the ingredients in a heavy-duty zip lock bag.
  • Seal the bag and shake it until the chicken& peppers are coated with the honey mixture.
  • Put it in the refrigerator and let it marinate for 3 hours.
  • Turn the bag several times to make sure the chicken and the vegetables are well coated with the marinade.
  • Take the chicken and peppers out of the marinade.
  • Put the marinade in a saucepan and bring it to a boil.
  • Reduce the heat and simmer until the sauce reduces a small amount.
  • This usually takes about 5 minutes.
  • Spray the grill rack with cooking spray.
  • Heat the grill to medium heat.
  • Put the chicken on the rack and close the grill lid.
  • Cook for 8-10 minutes.
  • Turn the chicken and continue cooking for 8-10 minutes.
  • Baste with the marinade during the last few minutes of cooking.
  • The peppers can be grilled in a grilling basket or on skewers.
  • The peppers will need to grill for about 5 minutes on each side.
  • The chicken and peppers can be cooked in your oven broiler.
  • Place them in a single layer on the broiler pan which has been sprayed with cooking spray.
  • Broil 5-6 inches from the heat for 10 minutes.
  • Turn the chicken and peppers and baste with the marinade.
  • Cook for an additional 8-10 minutes or until chicken is done.

  • Preheat a grill to medium high. Whisk the honey mustard, molasses, vinegar, melted butter and hot sauce in a bowl until smooth; season with salt and pepper. Remove 1/4 cup to a small bowl for basting the chicken; set aside the rest for serving.
  • Toss the okra and bell peppers with the vegetable oil in a bowl; season with salt and pepper. Tear off a 16-inch piece of foil. Spread the vegetables on the left side of the foil. Fold the right side of the foil over and seal the edges to form a packet.

1/2 cup white wine vinegar
3 tablespoons chopped fresh mint leaves

2 skinless boneless chicken breasts
2 tablespoons honey
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons soy sauce
1/2 teaspoon garlic powder
Kosher salt and pepper to taste
2 cups water
1 tablespoon salt

Steps:

  • Start with skinless boneless chicken breasts-trim nicely. If you have time, brine in 2 cups water and 1 tablespoon salt for an hour or two. Be sure to rinse well after brining.
  • Mix the glaze of 2 tablespoons each of honey, soy sauce, lemon juice, and olive oil. Add 1/2 teaspoon garlic powder. Mix well. Reserve 3/4 of the mixture for later.
  • Give each breast a little salt (if not brined) and pepper to taste, then brush the glaze on both sides of the chicken. Don't forget to reserve 3/4 of the glaze for brushing during grilling.
  • Allow the chicken to rest at room temperature for 15 minutes (maximum) while cleaning, oiling, and preheating the grill to a surface temperature of about 450°-500°-medium-high on most grills.
  • Place over direct heat. Be sure the grates are well oiled.
  • After about 5-6 minutes, flip the chicken and brush with glaze. Continue to flip every 5-6 minutes and brush until an internal temperature of 165°-about 25 minutes. But your time may vary-cook to the final internal temperature of 165° in the thickest area.
  • Allow to rest for 5 minutes before serving.
