Through several trials and errors, this is what I've come up with. I hope you enjoy as much as my family does.

Number Of Ingredients 18

1 1/2 cups sugar
1/2 cup butter, softened
3 bananas, overly ripened
1 cup sour cream
2 eggs, slightly beaten
2 teaspoons vanilla extract
1 teaspoon banana extract
1 teaspoon baking soda
3/4 teaspoon salt
2 cups flour
1/2 cup walnuts (optional)
1 1/2 cups powdered sugar
2 tablespoons butter, softened
4 tablespoons cream cheese, softened
3/4 teaspoon vanilla extract
1/2 teaspoon banana extract
1 teaspoon milk
1/2 cup banana, mashed

Steps:

  • In a large mixing bowl, cream together the sugar and butter. Add the mashed bananas; combining well. To this mixture, add the sour cream, eggs, vanilla, baking soda adn salt. Beat until well combined. Add the flour and nuts. Mixing to combine well.
  • Pour into prepared, greased and floured pan. Bake at 350 degrees. Depending on size of pan used; bake until a toothpick inserted in center comes out clean. You can bake this in any size or type pan. It's not a huge rising cake, so fill your pans accordingly.
  • To make the frosting, mix powdered sugar, banana, butter and cream cheese. Stir in vanilla and enough milk to make spreading consistency. Frost cooled banana cake.
  • This recipe can easily be doubled or tripled for larger quantity without trouble.
  • One note on the bananas for the cake portion -- the riper the better! I actually prefer that the bananas to be engrossly black for this recipe.

This is one of my favorite cake recipes...I usually bake a different cake recipe every week, so I have collected a lot of great cake recipes over the years....this one comes from "The all New Blue Ribbon" cookbook featuring prize winning recipes from America's state fairs...I think you will love this one....enjoy!

1/2 cup vegetable shortening (Crisco is best)
1 cup sugar
2 eggs
1 cup mashed ripe banana
1 teaspoon vanilla
1/2 cup sour cream
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups chopped nuts
1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • Set oven to 350 degrees.
  • Grease 2 (8-in) round cake pans (cake can also be baked in a 13x9-in pan).
  • Prepare streusel mix; set aside.
  • In a med bowl, beat together the shortening and sugar until creamy.
  • Beat in eggs, bananas and vanilla; fold in sour cream.
  • In a small bowl, combine flour, baking soda, baking powder and salt.
  • Fold into creamed mixture, stirring only enough to blend (don't overbeat).
  • In baking pans, sprinkle 1/3 of the streusel mix on the bottom.
  • Carefully spread 1/2 of cake batter on top of the streusel.
  • Sprinkle with another 1/3 of the streusel mix.
  • Spread the remaining cake batter over top.
  • Sprinkle with the remaining streusel mix on top.
  • Bake for 40 mins, or until cakes test done.
  • Cool 10 mins before removing out onto serving plates.
  • Serve warm, or at room temp.
