EASY CINNAMON RAISIN BREAD



Easy Cinnamon Raisin Bread image

Inspired by my love of Hot Cross Buns, this easy cinnamon raisin bread is the perfect recipe for Easter. Soft, fluffy and perfectly spiced.

3/4 cup warm water
3/4 cup warm milk
10 g (2tsp) instant yeast
2/3 cup sugar
3-4 cups flour ((any white flour can be used: Cake, all purpose or bread) )
1 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
½ tsp ground ginger
1/3 cup butter / oil ((room temperature butter) )
1 cup raisins
1 egg (beaten (for egg wash) (optional))

Steps:

  • Whisk water, milk, sugar and yeast together. Allow to stand for 10 minutes until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, spiced and salt.
  • With the mixer running, add the yeast mixture and allow to knead in.
  • Add the butter or oil, allow to knead in then add more flour, one third cup at a time until the dough is smooth. Add the raisins.
  • Knead for another minuted until the dough comes away from the sides of the bowl.
  • If the dough is still very sticky, add more flour and knead in.
  • The dough should be smooth and soft and only a slight bit sticky.
  • Cover with plastic wrap or a damp tea towel and allow to rise for 1 hour.
  • Once the dough has proofed, press it into rectangle on a lightly floured surface. Press any raisins that have fallen out of the dough into the center. Roll onto its self into a log, pinch the seam then transfer to a loaf pan that has been lightly greased.
  • Cover again and allow to rise for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush with beaten egg and place in the oven and allow to bake for 30-45 minutes until golden brown and risen. If the bread browns too quickly, loosely cover with a piece of foil and continue baking. Once baked the bread will sound hollow when tapped on the bottom.
  • Remove from the oven, brush with melted butter (optional) and allow to cool before slicing.

Steps:

  • Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.
  • If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.
  • Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5 inch bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush tops of risen loaves with melted butter and bake in preheated oven for 30 to 40 minutes, until crust is brown and loaves sound hollow when tapped.

1 ½ cups milk
1 cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
3 eggs
½ cup white sugar
1 teaspoon salt
½ cup margarine, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
¾ cup white sugar
2 tablespoons ground cinnamon
2 tablespoons butter, melted

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
  • Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
  • Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick. Moisten dough with 2 tablespoons milk. Mix together 3/4 cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

This is the best Cinnamon Raisin Bread I've ever had! It really has a great consistency and smells WONDERFUL while baking. I made this for the first time about a year ago and since it makes 3 loaves, I gave one to my neighbor. Now she asks for it constantly and since it is so fun to make, I oblige her, plus I get to keep the other 2 loaves!

1 1/2 cups milk
1 cup warm water (must be between 110-115 degrees)
2 (1/4 ounce) packages active dry yeast
3 eggs
1/2 cup white sugar
1 teaspoon salt
1/2 cup unsalted butter, softened
1 cup raisins
8 cups all-purpose flour
2 tablespoons milk
1 cup white sugar
3 tablespoons ground cinnamon
2 tablespoons butter, melted (approx.)

Steps:

  • Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.
  • Remove from heat.
  • Let cool until lukewarm, about 120-125 degrees.
  • Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make a stiff dough.
  • Knead the dough on a lightly floured surface for a few minutes until smooth.
  • Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.
  • Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on. It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.
  • Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.
  • Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.
  • Roll up tightly (the long way).
  • The roll should be about 3 inches in diameter.
  • Cut into thirds, and tuck under ends and pinch bottom together.
  • Place loaves into well greased (you can use Crisco or butter for this) 9 x 5 inch pans and lightly grease tops of loaves.
  • Let rise in warm place, uncovered, again for about an hour.
  • Bake at 350 degrees for 45 minutes or until loaves are lightly browned and sound hollow when tapped.
  • Remove from oven and let cool on rack.
  • Take melted butter and spread over tops of loaves.
  • After about 20 minutes, lay loaves on their sides and remove from pans.
  • Allow to cool before slicing.

STARTER:
1 c 95-105 degree water
2 tsp active yeast
1 c 4 7/8 ounces bread flour (or all purpose)
REMAINDER
3/4 c 95-105 degree water
4 tsp active yeast
3 Tbsp honey or agave nectar
1/4 c plus 1 teaspoon butter crisco
4 3/4 c 23 ounces bread flour (or all purpose)
4 tsp hodgson's vital wheat gluten
1 Tbsp salt (regular or kosher)
2-3 tsp ground cinnamon
1 1/4 c raisins, plumped & squeezed
5 oz cinnamon chips (half the bag)

Steps:

  • 1. For the starter: in a regular medium bowl, add the first three ingredients, whisk until only small lumps. Cover and let stand for 30 minutes. If desired, this part can be done the day before. Let sit on counter for an hour or two at most and then put in the refrigerator overnight to develop flavor.
  • 2. For the dough: In the stand mixer bowl, using the bread hook, add the remainder of the ingredients (except the cinnamon chips), add ALL of the starter. Mix until the dough has nearly cleaned the sides of the bowl.
  • 3. Add the cinnamon chips and mix again until dough is well formed.
  • 4. While dough is mixing, coat two med-large bowls with Pam or other cooking spray. Set aside. You can knead the dough by hand more if you choose but if you used a stand mixer, it's not necessary.
  • 5. Pinch dough into two fairly equal parts. Form into balls, creating smooth top and pinching the bottom seams a little. Place in bowls. Cover with a warm-hot damp towel and another dry one. Let rise 30 minutes.
  • 6. Preheat oven to 400 degrees. For the 2nd rise, coat two large loaf pans with Pam or other cooking spray. Turn the first bowl out into your hand. Gently fold under, keeping the smooth part on top and place seam side down in loaf pan. Do not punch down, just fold into an oval. Repeat with 2nd loaf. Refresh the damp hot towel and cover with that and the dry one again. Let rise 30 minutes.
  • 7. With a sharp knife, cut two diagonal slashes in the top. Spray with water and bake @ 400 degrees for 30 minutes. Remove from oven, brush on butter until top is shiny. Let cool about 10 minutes and remove to towel or baking rack, on it's side. If using a towel, flip sides (so bottom does not get soggy) every 10-15 minutes until cool.

Steps:

  • Preheat oven to 350*.
  • Brush a 2 quart casserole dish or 6 ramekins with melted butter or spray with cooking spray.
  • Combine raisins and orange juice in a bowl and allow to soak for 15 minute
  • Place raisin bread cubes in a large bowl. Add melted butter and toss to coat.
  • Spread buttered bread cubes on a cookie sheet and bake until golden brown. Allow to cool.
  • Evenly distribute cooled bread cubes in the casserole dish or ramekins.
  • Top bread cubes with soaked raisins so they are evenly distributed.
  • In a medium bowl, whisk milk, eggs, sugar, salt and vanilla, stirring until sugar is completely dissolved and mixture is smooth.
  • Pour mixture over bread cubes and refridgerate at least 15 minute

3 -3 1/2 cups flour
1 package dry yeast
1 tablespoon sugar
1 teaspoon salt
1 tablespoon cinnamon
3/4 cup unsweetened apple juice
1 tablespoon oil
1/2 cup water
3/4 cup raisins

Steps:

  • Combine 1 1/2 c.
  • flour, yeast, sugar, salt and cinnamon; mix well.
  • Heat apple juice, oil and water to 120-130 degrees F; add to flour mixture.
  • Blend at low speed until moistened, then beat 3 minutes at medium speed.
  • Gradually stir in remaining flour and raisins to make a firm dough.
  • Knead until smooth and elastic, about 5 minutes.
  • Place in a greased bowl, turning to grease top.
  • Cover and let rise until light and doubled, about 1 hour; punch down dough.
  • On lightly floured surface, roll or pat to a 14x7 inch rectangle.
  • Starting with the shorter side, roll up tightly, pressing dough into roll with each turn.

This bread is bee-YEW-tiful toasted and even better as cinnamon toast, but you won't believe how amazingly delicious it is for grilled cheese sandwiches! It's soft and tender, moist and flexible enough to fold without cracking or tearing. It is the texture of your husband's and children's white bread dreams. That's how I finally got mine to eat true whole wheat bread (but I still have to leave out the nuts, grains, and seeds from theirs). It's the lecithin. I have never been able to achieve this texture without it. So, while it is not necessary to the successful taste or rising of the bread, it is definitely necessary for this specific texture and softness.

2 1/2 cups warm water
1/2 cup brown sugar
2 tablespoons yeast
1/4 cup butter, melted

  • Put the warm water, sugar and yeast into the bowl on the Bosch (or your mixer of choice) and stir gently.
  • Add melted butter, lecithin, wheat gluten, cinnamon and salt and mix until combined. (I only used 2 tsp of cinnamon when I made this recipe and wished, when I had finished, that I had used more. The cinnamon flavor was only mildly discernible and next time I will definitely double that, so go by your own personal taste, as to how much seems right.)
  • Mix in about 3½ cups of the flour and then in small increments, gradually add just what you need to complete the dough. In total for this batch, I used 4½ cups of flour.
  • (After all my bread posts, you are probably tired of hearing this, but it is really important if you want the best possible bread. Humidity will dramatically affect the amount of flour you need to make bread dough. Add a portion of what is called for, mix it in and then begin adding flour in 1/2 cup to 1/4 cup intervals, mixing and adding more when needed, until the dough in your machine just starts to pull away from the sides of the bowl and leaves the bowl sides clean. The dough will be very soft, but not sticky to the touch. That is perfect dough.).
  • Add the grain and raisins and mix until incorporated. (See below for a tip on baking with raisins.).
  • Knead on power level 2 for seven minutes or turn onto a floured board and knead by hand for ten to fifteen minutes.
  • Place in a lightly oiled bowl and cover with a warm, damp tea towel and let rise until doubled in size.
  • Punch down the dough. Knead slightly until it forms a smooth ball. Divide in half.
  • Form each half into a loaf and place in a greased loaf pan. Cover with a warm, damp tea towel and let rise until doubled in size.
  • Bake in a 350° oven for 35-40 minutes. Brush tops of loaves lightly with butter. Remove from pans onto cooling rack to cool before slicing.

  • **The promised tip for baking with raisins** If your raisins are particularly dried, they can often scorch and have an almost burnt, bitter taste after further dehydrating in your oven. So, before I add them to mixtures I will be baking, I measure them into a microwave safe container, completely cover them in water and microwave on full power for 1 - 2 minutes. I leave them in that warm water while I mix the rest of my ingredients and then thoroughly drain them just before adding them to my dough or batter. They are plump, juicy and sweet even after the baking is complete.

You can use any white bread recipe to make any swirl breads listed below. The cinnamon raisin version is a classic, inspired by a recipe from James Beard. The sherry gives an unusual complexity to the sweet raisins and brown sugar, and most of the alcohol is cooked off while the mixture simmers. Feel free to use apple cider instead. This recipe makes two loaves, one to eat right away, preferably warm from the oven, or toasted and buttered the next day. Freeze the other loaf and use it to make what is arguably the best French toast imaginable.

2 1/4 teaspoons/7 grams active dry yeast (1 package)
1 1/2 cups/355 grams lukewarm milk
1/3 cup/67 grams granulated sugar
1 tablespoon/15 grams kosher salt
3 tablespoons/43 grams butter, melted, more for greasing bowl and pans
2 eggs
5 to 6 cups/625 grams to 750 grams all-purpose flour

Steps:

  • Make the dough: In a large electric mixer bowl, dissolve yeast in 1/4 cup warm milk. Add the remaining warm milk, the sugar, the salt, the butter and the eggs. Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
  • Grease a large bowl with butter and turn dough out into the bowl. Flip dough over so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 11/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
  • Meanwhile, make the filling: In a small pot, bring sherry to a low boil and simmer until reduced by half, about 8 to 10 minutes. Add raisins, cover and let sit until needed for filling.
  • When dough has doubled in size, turn dough out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
  • Press down dough with your hand to expel the air. Divide dough in half and roll one half into a 16-x-8-inch rectangle. Brush with some of the melted butter. Drain raisins and mix with sugar and cinnamon; scatter half of the mixture over the dough and, starting with the shorter side, roll up tightly into an 8-inch log, tucking the ends under. Place roll seam-side down in a loaf pan and brush top with melted butter; dust with cinnamon sugar if desired. Repeat with second dough half.
  • Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.
  • Meanwhile, heat oven to 400 degrees. Bake bread for 10 minutes, then reduce heat to 350 degrees and bake for an additional 20 to 30 minutes, or until loaves sound hollow when tapped, the tops are brown and the internal temperatures are 200 degrees. I looked and looked for a cinnamon raisin bread with wheat flour that wasn't for the ABM and couldn't find one.... so I made my own! Makes a very large loaf or two small loaves. **NOTE** This recipe calls for instant yeast! If you use regular active yeast, you will need to adjust the amount of yeast, your dough will take longer to raise, the water temperature will need to be reduced and method of mixing should include proofing the yeast before adding it to the mixture. Both poor reviews came when reviewer used active yeast - I suggest only using instant yeast unless you are an experienced bread maker (I am not, thus why I use the instant yeast, its much more forgiving).

2 1/2 cups bread flour, plus
2 1/4 teaspoons instant yeast
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/4 cups water, hot 120-130 degrees
1/4 cup honey
1/4 cup sugar-free maple syrup
3/4 cup raisins
1 tablespoon oil
1 cup wheat flour
1 cup oatmeal

Steps:

  • In your mixer, combine 1 1/2 cup bread flour, yeast, cinnamon, and salt.
  • Heat water, honey and maple syrup in a saucepan over low heat until it reaches 120-130 degrees.
  • Using low speed, slowly add water mixture to flour mixture. Mix on medium speed until there are no lumps, about 2-3 minutes.
  • With your mixer on low speed, add wheat flour and oatmeal half a cup at a time. Then add remaining bread flour half a cup at a time until dough clears the side of the bowl. Dough will be sticky.
  • Turn onto a floured surface and knead until dough is smooth (apx 5 minutes) adding the raisins as you go along. Add more flour 1 tablespoon at a time as necessary.
  • Turn into oiled bowl and flip dough so that top of dough is oiled. Cover and let rise until double, approximately 60-90 minutes.
  • Using lightly oiled hands, turn out dough and shape into 2 small round loaves and place on greased baking sheet OR 1 large loaf and place in 9x5 bread ban, cover and let rise 60-90 minutes.
  • If you like a softer crust, brush tops of loaves with oil.
