Steps:
- Prep Angel Food Cake
- Tear up into bite sized pieces - not super large but also not too small. Place in bowl or on plate and set aside.

- Smother with half the strawberries.
- For the last layer, add half of the whipped cream mixture and smooth with a spatula.
- Now repeat the process with angel food cake, strawberries, and whipped cream mixture.

WIL'S MOM'S RHUBARB ANGEL FOOD CAKE
This recipe is from my co-worker's mother. It is his favorite cake - has requested it every year for his birthday for as long as he can remember. He brought it to work last month and oh my.....YUMMY!!! I don't like rhubarb - but this is awesome!! A definite treat to try! Thanks Wil! Prep time DOES NOT include chill time.

- Chill thoroughly.
- Whip one cup whipping cream until very stiff.

- Take one cup of the rhubarb mixture and spread 1/3 cup between each layer of the cake.

MOM'S STRAWBERRY ANGEL FOOD CAKE
My Mom has always made this angel food cake for her children. I have made this several times for different functions, and the response is overwhelming. It's a perfect summer dessert!! It is light, cool and refreshing. I use sugar free jell-o and lite cool whip, for an extra light dessert. I have also used other jell-o flavors along with different fruits. Very versatile!!

Steps:
- Cut the angel food cake horizontally approximately two inches from the top. Remove the top cover of the angel food cake, put to the side. Begin pulling out the inside of the angel food cake in little pieces; be careful not to make any holes to the outer shell of the cake. Pull out approximately two inches down of the angel food cake reserving all of your pieces.
- In a separate bowl dissolve the jell-o and boiling water. Once the jell-o is completely dissolved, add the frozen strawberries to the mix. The mixture will become thicker and more jelly like. Once the frozen strawberries have thawed in the mixture, begin adding the reserved pieces of angel food cake. Mix well. Place mixture in refrigerator for 15-20 minutes or until well chilled.
- Scoop out the jell-o mixture into the hollow angel food cake, filling it to the top. Place the cover of the cake back on the top, and finish off my creaming the entire cake with cool whip. Place the cake in the refrigerator for 2-3 hours before serving, serve cold. Fresh strawberries can be placed on top for decorations.
- Try experimenting with different flavors of jell-o and fruit-delicious!
- Enjoy!

- Place a metal mixing bowl and the whisk attachment for your electric mixer into your freezer or refrigerator for at least 15-20 minutes before you make the whipped cream.
- In a large bowl combine the strawberry slices, one cup of sugar, lemon juice, and zest and a pinch of salt. Optional, add a splash of Grand Marnier. Set aside for about 30 minutes and stir occasionally. This allows the strawberries to macerate or to soften slightly and start releasing their juices.
- To make the whipped cream, pour the whipping cream into the chilled bowl and add 1/4 cup sugar. Use the whisk attachment and beat the cream mixture on medium speed until stiff peaks form. This should take 7-8 minutes. Do not overbeat or the cream will turn to butter. Cream doubles in size when whipped and the two cups of heavy cream will turn into four cups of whipped cream.
- To assemble the trifle, for the first layer, put one layer of torn pieces of angel food cake in the bottom of a large trifle bowl.

- Preheat the oven to 350° F. Prepare a tube pan by doing absolutely NOTHING to it! That especially means NO GREASE!! We need the tube grease free so the cake will climb up the sides.
- Pour granulated sugar into the bowl of a food processor and process until a finer texture is achieved. This only takes a minute or so on high. Dump into another bowl and set aside.
- Pour the 2 bags of freeze dried strawberries into the same bowl of a food processor (if you have to do this in 2 batches, that's fine). Process into a fine powder. Divide the strawberry powder equally. Put half into a small bowl and set aside. Place the other half into a medium bowl and measure the flour, cornstarch, and salt into that same bowl.
- Dump the contents of the bowl into a sieve set over a large piece of waxed or parchment paper and sift onto the paper. If there are any seeds left in the sieve, throw them away.
