JAPANESE SHRIMP ONIGIRI RECIPE

Onigiri is a popular Japanese snack made of seaweed-wrapped rice balls. Make this deep-fried tempura onigiri recipe as a great to-go snack.

1 egg
1 cup divided all-purpose flour
½ cup cold water
8 peeled and deveined, tails left on raw shrimps
for frying oil
¾ cup dashi
¼ cup soy sauce
¼ cup mirin
2½ cups cooked, for serving rice
to taste salt
1 roasted, cut into 8 equal pieces seaweed strip

Steps:

  • Whisk the egg in a small bowl. Add 1/2 cup of flour and the cold water and whisk to combine.
  • Cover with plastic wrap and chill in the refrigerator.
  • Add the remaining flour to a shallow dish. Dredge each shrimp in the flour, shaking off any excess.
  • Heat the oil in a large pot until it reaches 350 degrees F.
  • Dip the floured shrimp into the chilled batter.
  • Fry the shrimp until they float to the top and are golden brown in color.
  • Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain.
  • In a medium pan, combine the dashi, soy sauce, and mirin, and bring to a boil over high heat. Transfer to a small bowl.
  • To make the onigiri rice balls, first wet your palms with water and coat with a little bit of salt.
  • Take a handful of rice and make an indent in the middle.
  • Dip a shrimp into the soy sauce mixture, then place in the center of the rice.
  • Wrap the rice around the shrimp, creating a triangle shape.
  • Wrap a strip of seaweed around the rice ball. Repeat with remaining ingredients.

3 cups peanut, canola, or vegetable oil
3 large cloves minced garlic (about 3 tablespoons)
2 scallions, thinly sliced
1 teaspoon dried red chili pepper flakes (optional)
12 to 16 whole jumbo shell-on, head-on shrimp, about 1 pound
1/2 egg, beaten
1/4 cup cornstarch
Kosher salt and freshly ground black pepper
1 teaspoon five spice powder, Old Bay, smoked paprika, Sichuan peppercorns, or a combination (optional, as desired)

Steps:

  • Heat 2 tablespoons of oil in a wok over medium heat until shimmering. Add the garlic, scallions and let brown, stirring occasionally, 3 to 5 minutes. Add the chile pepper flakes if using and stir until aromatic, about 30 seconds. Transfer oil and aromatics to a large metal bowl. Wipe wok clean with paper towel.
  • Add remaining oil to wok and heat to 375°F (190°C) over medium heat. Meanwhile, combine egg and cornstarch in a medium bowl. Add shrimp and toss to coat. When the oil is ready, add half of the shrimp, dropping them into the oil one at a time. Cook, agitating and flipping shrimp frequently until crisp and just cooked through, 2 to 3 minutes total. Transfer shrimp to a paper towel-lined plate and repeat with remaining batch.
  • Add drained fried shrimp to bowl with browned aromatics. Season to taste with salt, pepper, and optional additional seasonings. Serve immediately.

½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

1 teaspoon paprika
2 eggs, beaten
1 cup panko crumbs
1 quart vegetable oil for frying

Steps:

  • Place the shrimp in a bowl and season with salt, pepper and garlic powder. In a small bowl, stir together the flour and paprika. Place eggs and panko crumbs into separate bowls.
  • Heat the oil in a deep-fryer or deep skillet to 375 degrees F (190 degrees C). Dip each shrimp into the flour mixture, then into the egg, and finally into the panko crumbs to coat. Fry a few at a time until golden brown. This should take no longer than 5 minutes. Remove with a slotted spoon and drain on paper towels before serving.

These need to be marinated for a minimum of 2 hours but I've had them in the marinade for as long as 10 hours. I fix them in the morning and fry them when I get home from work. Prep time doesn't include marinating time.

1 lb raw shrimp, shelled and deveined
flour, for dusting
2 cups vegetable oil, for frying
3 dried red chilies, chopped
2 tablespoons coarsely chopped shallots
3 tablespoons coarsely chopped garlic
2 tablespoons finely chopped fresh galangal or 2 tablespoons ginger
3 tablespoons chopped cilantro, stalks
1 tablespoon fish sauce (nam pla)
1 tablespoon lime juice
4 tablespoons coconut milk
2 teaspoons water

Steps:

  • Process all the marinade ingredients together in a blender or food processor. Place the shrimp in a zip-loc bag, or in a bowl, and pour the marinade over and mix well. Chill for at least 2 hours.
  • Drain the marinade from the shrimp, scraping off any bits, and discard the marinade. Dust the shrimp with flour, shaking off any excess.
  • Heat a wok or large frying pan over high heat and add the oil. When it is very hot and slightly smoking, add a handful of shrimp and deep-fry for 3 minutes, until golden and crisp. If the oil gets too hot, reduce the heat slightly. Drain the shrimp well on paper towels and fry the remaining shrimp in batches. Serve immediately.

  • In a medium size mixing bowl combine shrimp, salt and pepper; stir.
  • Heat oil in a medium size saucepan. In another medium size mixing bowl stir together eggs, flour and baking powder. Dredge shrimp in egg mixture then fry in oil until they are golden.

1 cup flour
½ cup cold water
flour, to cook
6 shrimps
oil, to cook
3 tablespoons mayonnaise
1 tablespoon ketchup
½ tablespoon honey
1 teaspoon white vinegar
1 ¼ cups rice, cooked
2 tablespoons sesame oil, to cook
green leaf lettuce, to taste

Steps:

  • Whisk the egg in a small bowl. Add 120 grams (1 cup) of flour and water. Whisk to combine. Cover with plastic wrap and transfer to the refrigerator.
  • Add flour to a shallow dish. Dip each shrimp in the flour, shaking off any excess.
  • Dip the floured shrimp into the batter.
  • Heat oil in a pot to 350°F (180˚C).
  • Fry the shrimp until they float to the top and become golden brown in color. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain.
  • For the mayonnaise sauce, combine mayonnaise, ketchup, honey, and vinegar.
  • Line a ramekin with plastic wrap, and mold ¼ of the rice into a patty. Repeat until you have 6 rice "buns."
  • Heat a pan over medium-high heat and add a splash of sesame oil. Add the rice "buns" and cook until the outside is crispy, about 5 minutes.
  • Top the rice "bun" with a piece of green leaf lettuce, fried shrimps, mayonnaise sauce, and top with another rice "bun." Repeat with remaining ingredients.
