2 sticks (1 cup) melted butter, cooled slightly, plus additional for buttering the pan
1 3/4 cups all-purpose flour
1/2 cup fine polenta, such as Bob's Red Mill
1/2 cup powdered sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
One 10-ounce bag frozen cherries, thawed and drained
One 10-ounce bag frozen cranberries, thawed
2/3 cup light muscovado sugar or light brown sugar
2 tablespoons all-purpose flour
1 teaspoon orange zest (from 1/2 orange)
1/4 teaspoon kosher salt
Serving suggestion: whipped cream or vanilla ice cream

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line with parchment paper. Set aside.
  • Combine the flour, polenta, powdered sugar, cinnamon, baking powder and salt in a medium bowl and stir together with a rubber spatula. Pour in the butter and stir until combined. Add three-quarters of the dough to the bottom of the prepared pan and press evenly into the bottom and 1/2-inch up the sides of the pan. Reserve the remainder of the dough for the top. Bake the crust just to set, 12 to 15 minutes.
  • For the filling: Combine the cherries, cranberries, muscovado sugar, flour, orange zest and salt in a medium bowl, and stir to combine and coat evenly. Pour the filling into the crust and spread evenly, pressing gently to nestle into the crust. Drop dollops of the remaining dough randomly over the top of the cobbler. Bake until the filling is bubbly and crust and topping are golden brown, about 45 minutes. Allow to cool completely in the pan before releasing the sides and slicing into wedges. Serve with whipped cream or vanilla ice cream if desired.

1 1/2 cups cranberries (fresh)
2 tablespoons lemon juice
3/4 cup sugar
1/2 cup brown sugar
3 tablespoons flour
1 teaspoon cinnamon

1/3 cup apple juice
1 teaspoon vanilla extract
1 tablespoon butter (soft)
For the Topping:
3/4 cup flour
1/2 cup sugar
1 scant teaspoon baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons cream (or evaporated milk or half-and-half)
2 tablespoons butter (melted)

Steps:

  • Gather the ingredients.
  • Grease a 2 1/2- to 3-quart baking dish . Preheat oven to 375 F.
  • Toss sliced apples with cranberries and lemon juice.
  • In a bowl, combine the 3/4 cup granulated sugar, 1/2 cup brown sugar, 3 tablespoons all-purpose flour , 1 teaspoon cinnamon, and 1/2 teaspoon salt; add to the apple mixture and toss to coat. Mix in the apple juice and vanilla.
  • Arrange the apple mixture in the prepared baking dish. Dot with the soft butter.
  • To make the topping, in a mixing bowl, combine 3/4 cup flour, 1/2 cup sugar, 1 scant teaspoon baking powder, and 1/4 teaspoon salt.
  • In a separate small bowl, whisk the egg with cream and melted butter; stir into the dry ingredients and beat until smooth.
  • Using a tablespoon, drop spoonfuls of the batter evenly over the fruit mixture. The batter will spread as the cobbler bakes.
  • Bake for 40 to 50 minutes, until fruit is tender and topping is nicely browned.
  • Serve and enjoy!

Steps:

  • Preheat oven to 375°F. Mix apples, 1-1/4 cups sugar, the cranberries, tapioca and cinnamon in large saucepan. Gradually add water, stirring until well blended. Bring to full rolling boil on medium heat, stirring constantly. Pour into 2-qt. baking dish. Dot with 2 Tbsp. butter.

2 tbsp. cornstarch
1 tbsp. fresh lemon juice
1 tbsp. minced fresh ginger
4 cups thinly sliced granny smith apples, about 4 apples

  • 1. Preheat oven to 400. For filling, whisk together apple juice,cornstarch, lemon juice, and ginger in an 8 inch cast iron skillet til cornstarch dissolves.

1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
5 Tbsp. sugar, divided
4 cooking apples, such as McIntosh or Rome Beauty (1-1/4 lb.), peeled, chopped
1 cup fresh or frozen cranberries
1 cup all-purpose baking mix
1/4 cup sour cream
1/2 tsp. ground cinnamon

Steps:

  • Heat oven to 375ºF.
  • Beat 3/4 cup water and flour in large saucepan with whisk until blended. Bring to boil on medium heat, whisking constantly. (Mixture will be thick.) Remove from heat. Add dry gelatin mix and 2 Tbsp. sugar; stir 2 min. until gelatin is completely dissolved. Stir in apples and cranberries.

4 cups cranberries
6 granny smith apples, peeled and sliced thin
1 teaspoon vanilla
2 cups brown sugar, firmly packed
1 teaspoon ground cinnamon

2 (11 ounce) cans biscuits, flaky kind that has layers
2 teaspoons granulated sugar
6 -8 tablespoons butter

Steps:

  • Preheat oven to 400°. Spray the bottom and sides of a 9"X13" baking dish with cooking spray.
  • In a small bowl combine cornstarch, brown sugar, cinnamon, cloves, and ginger.
  • Using 1/2 a can of biscuits, pull apart the layers and haphazardly distribute a single layer across the bottom of the baking dish.
  • In a large bowl, combine cranberries, apples, vanilla, and the brown sugar mixture. Mix evenly and pour half the mixture onto the biscuits in the baking dish.
  • Create another thin layer of biscuits on top of the cranberries/apples with the other 1/2 can of biscuits. Then pour the remainder of cranberries and apples into the dish.
  • Create a top crust by laying on the remaining can of biscuits that have been separated into layers.
  • Sprinkle with sugar, dot generously with butter bits, and bake for 20 to 30 minutes on middle rack until top is golden. Check the center, going all the way to the bottom for doughy spots. If the center is not done, cover the top with a loose sheet of aluminum foil and bake an additional 10 to 15 minutes on 350°.
  • If you don't like a lot of dough in the cobbler, use only one can of biscuits to create a top crust only. Or create a bottom and top crust, be creative and make it your own.

1 (16 ounce) can jellied cranberry sauce or 1 (16 ounce) can whole berry cranberry sauce
1 cup oatmeal
1/2 cup flour
1/2 cup raw brown sugar
1/2 cup margarine
1 teaspoon baking powder
1 teaspoon cinnamon

Steps:

  • Peel and slice the apples.
  • Layer the apples in a 9x13 pan.
  • Mash the cranberry sauce and layer on top of the apples.
  • In a bowl mix the oatmeal, flour, raw brown sugar, baking powder, and cinnamon.
  • Then with your hands mix the margarine with the bowl of dry ingredients.
