STRAWBERRIES WITH CASSIS
A simple and delicious dessert that can be made ahead of time. It can also be scaled down for fewer guests. From Bon Appetit Weekend Entertaining.

Steps:
- Halve or quarter the berries, depending on their size.
- Combine first 4 ingredients in large bowl. Let stand at room temperature 1 hour, stirring occasionally. (Can be prepared 3 hours ahead. Refrigerate.).
- Whip cream and powdered sugar in large bowl until stiff peaks form. Spoon 2/3 cup fresh berries and some juices into each of 20 balloon glasses. Top each with spoonful of whipped cream and serve.
- Serves 20.

STRAWBERRIES WITH CASSIS SYRUP
"Martha Stewart's Quick Cook" gets the credit for this dessert. I love creme de cassis! It is currant berry liqueur. Preparation time does not include chilling time.

Steps:
- Stem and wash the strawberries and drain.
- In a small saucepan combine creme de cassis, sugar and water.
- Cook over medium heat until mixture is reduced to about half a cup. Chill.
- Serve the berries in individual bowls and pour the syrup over them.

This is my favorite way to prep strawberries for strawberry shortcake or just to serve with thick creamy Greek yogurt.

- Wash the strawberries and remove the green stems. Cut the strawberries and place them in a bowl. Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight. The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.

- In a saucepan, stir together the sugar and water. Bring to a boil, and cook for about 10 minutes, or until it becomes syrupy. Mix in the nutmeg and cinnamon, and remove from the heat. Stir in the vanilla. Allow to cool for a few minutes, then pour over sliced strawberries.

VINEYARD-STYLE STRAWBERRIES WITH RED WINE AND CASSIS
In wine growing regions, berries- particulary strawberries- are typically combined with the wine from that area, and sometimes a liqueur, and served as a dessert. Here, strawberries are mixed with a fruity red wine and black currant (creme de cassis) or blackberry liqueur (Chambord or creme de mures) and served in the classic way, spooned into wine goblets. If desired top the desserts with shredded peppermint leaves and a spoonful of sour cream or creme fraiche, and serve them with cookies. Delicious, light and refreshing!

- Quarter the berries, and place them in a bowl with the sugar, liqueur, wine, and mint. Mix well. and serve immediately, or refrigerate (for up to 8 hours) until serving time.
- Spoon the berries and marinade into wine goblets for serving. If desired, top each dessert with a dollop of sour cream, and serve it with a cookie.
