3 Tablespoons Olive Oil
4 Medium Colored Bell Peppers, Sliced Into Strips
2 Medium Red or White Onions, Peeled & Sliced
3 Garlic Cloves, Minced
1 Teaspoon Coarse Sea Salt
1/2 Teaspoon Red Chili Flakes
1/4 Teaspoon Ground Black Pepper
1/4 Teaspoon Dried Oregano
1 Tablespoon Red Wine Vinegar
1/4 Cup Finely Chopped Fresh Parsley Leaves

Steps:

  • Heat a large nonstick or cast iron skillet over medium-high heat.
  • Add olive oil, and once sizzling, add sliced bell peppers and sliced onions.
  • Add in the salt, red pepper flakes, black pepper and dried oregano.
  • Stir to coat the vegetables with the olive oil and seasonings.
  • Cook, stirring occasionally, for about 15 minutes until the peppers and onions have softened and started to caramelize.
  • Add the garlic and cook another minute or two until fragrant.
  • Add in the red wine vinegar.
  • Taste and season with more salt if necessary.
  • Remove the peppers and onions from the heat, stir in chopped parsley, and serve warm or at room temperature.

If you like onion rings, you will like this recipe. It is sweeter, but really tasty! Make sure your oil is at the right temperature, or you will lose your breading!

3 large bell peppers, I use one green, one red, and one yellow
2 large eggs, lightly beaten
2 cups milk
2/3 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese, grated
1 cup all-purpose flour
vegetable oil

Steps:

  • Slice peppers into 1/4 inch rings; remove and discard seeds and membranes. Set aside.
  • Combine eggs and milk, stirring well. Combine breadcrumbs and cheese, stirring well.
  • Dip pepper rings into egg mixture, and dredge in flour. Dip again into egg mixture, and then dredge through the breadcrumb/cheese mixture, coating well.
  • Pour oil to a depth of 2 inches in a Dutch oven. Heat to 375 degrees.
  • Fry pepper rings 1 to 2 minutes or until golden brown, turning once. Drain on paper towels.

nonstick cooking spray, optional
3 bell peppers
1 cup whole wheat breadcrumbs, or panko bread crumbs (50 g)
½ cup grated parmesan cheese
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon pepper
3 eggs, beaten
1 cup all-purpose flour
dipping sauce, of your choice, optional

Steps:

  • Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
  • Cut the bell peppers carefully around the stem and remove the stem and seeds. Cut the peppers crosswise into ½-inch (1 cm) slices.
  • In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate bowl and whisk. Add the flour to a third bowl.
  • Dredge the bell pepper rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
  • Arrange the bell pepper rings on the baking sheet.
  • Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
  • Serve with your favorite dipping sauce.

This recipe comes from my long time friend, Tracy. I really can not believe she shared it with me.....all this time, I thought she cast some magic spell over the frying pan to make them taste so good! Turns out it was just the saltine crackers! The mystery is over...... Do keep in mind, that this is NOT a "batter" recipe (if you love breading, you may want to try something else). The coating is light and crispy and you end up with more coverage on the 'interior' part of the pepper than the exterior. I think they are wonderful this way!

10 banana peppers (washed, sliced lengthwise and seeds removed)
1 cup buttermilk
1 cup cornmeal
1 cup saltine crackers, crushed

  • In medium bowl, mix together equal parts corn meal and crushed saltines.

1 teaspoon oregano

  • In a medium/large frying pan add the oil, garlic, sliced peppers, oregano, salt and water. Cover and cook on medium heat until soft and tender about 10 minutes, then uncover and cook until water dissolves and peppers are cooked to your liking. Enjoy!

This recipe for fried jalapeño poppers is perfect for a party. The stuffing for the peppers is made with a combination of cream cheese and cheddar.

15 jalapeño peppers (plump)
8 ounces cream cheese (room temperature)
1/2 cup cheddar cheese (shredded)
1 cup milk
1 cup​ all-purpose flour
1 dash salt
1 cup ​ breadcrumbs (plain, dry)

Steps:

  • Gather the ingredients.
  • Slice jalapeño peppers in half lengthwise; remove the seeds. In a small bowl, mix the cream cheese and cheddar until well blended. Fill the jalapeño pepper halves with the cream cheese mixture and press halves back together.
  • Put the milk in a shallow bowl.
  • Combine the flour and salt in a shallow bowl.
  • Put the breadcrumbs in a shallow bowl.
  • Dip the peppers in the milk, then in the flour, coating thoroughly. Set them on a sheet of foil or waxed paper to dry for about 15 minutes.
  • Dip the peppers in the milk again, then in the breadcrumbs. Let them dry again for 10 to 15 minutes. If necessary, dip again lightly in the milk and again in the breadcrumbs and let dry again.
  • Meanwhile, heat oil in deep fryer to 370 F.
  • Deep fry the breaded jalapeño peppers in batches for about 3 minutes, or until they're golden brown.
  • Transfer jalapeño poppers to paper towels to drain.
  • Let cool for a minute or so and enjoy!

  • Rinse capers in a sieve and transfer to a small bowl. Add enough water to cover capers by 2 inches, then soak 30 minutes. Repeat soaking method.
  • Drain and rinse capers, then pat very dry between paper towels.

1 cup buttermilk (or milk)
oil (for frying)

Steps:

  • Slice poblanos in rings about 1/4 inch wide and remove seeds. Mix flour, salt and pepper in shallow bowl. Dip chile rings into milk and flour mixture.
  • Carefully place in hot oil in deep-fryer or saucepan with about 3 cups oil (oil should be almost to the smoking stage when chilies start cooking). Fry until golden brown. Lightly salt and serve immediately.

JALAPENO POPPER DEEP FRIED

It's excellent served with a ranch dressing or sour cream. For an added kick add some chipotle peppers in adobo to the ranch dressing and combine in a blender! By coating the poppers with flour and then deep frying them you will get a great crust on the peppers and the melted cheeses will also stay inside the shell. Feel free to use different types of shredded cheeses or alter the spices in the stuffing. You can also use fine corn meal or rice flour to create a crust with a different texture

1 lb jalapeno pepper
8 ounces cream cheese
4 ounces shredded cheddar cheese
4 ounces shredded monterey jack cheese
5 slices bacon
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup milk, in a small bowl
1 cup flour, in a small bowl
canola oil (for deep frying)

Steps:

  • Fry the bacon in a saute pan until crispy. Let cool slightly and then crumble.
  • Mix the cream cheese, shredded cheese, garlic powder, salt, pepper, and crumbled bacon in a bowl. This mixture will act as the stuffing for the deep fried jalapeno poppers.
  • Cut the stem off of each jalapeno, cut them in half lengthwise, and remove the seeds.
  • Take about a tablespoon or two of the jalapeno popper stuffing mixture and fill each jalapeno half.
  • Working on one jalapeno pepper at a time, briefly dip the pepper into the milk and then roll it in the flour to coat. Set aside and repeat with all the jalapeno poppers. When deep fried the flour will form the crispy outside that mark many jalapeno poppers.
  • Once you have completed step 6 for each pepper repeat it again, starting with the driest peppers.
  • In a dutch oven, large pot, or deep fryer heat the oil to around 365 degrees.
  • Carefully place several of the jalapeno poppers into the oil, being sure not to over-crowd it. Let the peppers cook until the outside is a golden brown, normally about 3 minutes. Remove with a strainer or slotted spoon and let dry on a wire rack.
  • Serve the jalapeno poppers with ranch dressing or sour cream.

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk

2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.
