After making fresh batch of bruschetta one day, I decided to use it on chicken instead of on toasted baguette. This has become one of my family's favorite meals. It is sweet, tangy and salty all at once.

1 lb chicken breast, boneless and skinless cut into serving pieces and pounded 1/2-inch thick
1 large egg, lightly beaten
1/2 cup breadcrumbs
3 tablespoons vegetable oil
3 tablespoons olive oil
2 teaspoons balsamic vinegar
2 tablespoons fresh basil, chopped
1/8 teaspoon garlic powder
1/8 teaspoon onion salt
1 large tomatoes, chopped
salt, to taste
pepper, to taste
mozzarella cheese, shredded for topping

Steps:

  • In a medium bowl, whisk together the olive oil and balsamic vinegar. Stir in the basil, garlic powder, onion salt and tomato. Season with pepper to taste. Allow to sit for at least 15 minutes, stirring occasionally.
  • Meanwhile, heat the vegetable oil over medium heat. Season the chicken with salt and pepper. Dip the chicken into egg, shake off the excess and then press into the breadcrumb mixture to coat.
  • Heat the vegetable oil over medium heat in a large skillet. Place the chicken in the skillet and cook for 5 to 7 minutes on each side, until chicken is no longer pink in the center and it has a golden brown color. Reduce heat to low.
  • Spoon the bruschetta over the chicken. Top with mozzarella cheese. Cover the chicken just long enough for the cheese to melt.
  • Enjoy!

4 boneless skinless chicken breasts, thawed
1 pinch salt
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
8 slices fresh mozzarella cheese
4 roma tomatoes, seeded and diced
8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade
3 fresh garlic cloves, minced
1 pinch salt
1 tablespoon balsamic vinegar

Steps:

  • Preheat a grill pan over medium heat on the stove top. Spray with cooking spray. Combine balsamic and olive oil in a bowl. Season both sides of chicken with pinches of salt and place on grill. Brush top sides of chicken with balsamic mixture. Cook for 4-5 minutes and flip chicken. Brush with additional balsamic and cook for an additional 4-5 minutes or until cooked through. During the last 2 minutes of grilling place 2 slices of cheese over top each chicken to melt.
  • In a large bowl combine the tomatoes, basil garlic, salt and balsamic. Toss gently to combine. Place chicken breasts on a serving plate and top with tomato mixture. Serve warm.

4 chicken breasts (boneless skinless (6 ounces each))
1/2 teaspoon kosher salt (divided)
1/4 teaspoon coarse ground black pepper
2 cloves garlic (minced)
2 teaspoons extra virgin olive oil
1 tablespoon fresh basil (minced)
4 roma tomatoes (chopped)
2 tablespoons shredded Parmesan cheese
1/4 cup balsamic glaze

Steps:

  • Add half of the salt, all the pepper and garlic to your chicken breasts.
  • Heat a cast iron skillet on medium high heat with the two teaspoons of olive oil.
  • Add the chicken to the skillet and cook for 4-6 minutes on each side, until fully cooked through.
  • While the chicken is cooking mix together the rest of the salt with the basil and tomatoes.
  • When the chicken is finished cooking add it to a plate and top each with 1/4 of the tomato topping, 1/4 of the Parmesan cheese and 1/4 of the balsamic glaze.

3 cups diced crusty bread
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 chicken cutlets (thin-cut chicken breast)
5 Roma tomatoes, diced
2 cloves garlic, pressed
6 fresh basil leaves, chiffonade, plus whole fresh basil leaves for garnish
3 tablespoons balsamic reduction/glaze

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the diced bread with 1 tablespoon olive oil. Sprinkle with a pinch of salt and pepper and place on a sheet pan. Toast in the oven until golden, but still a little chewy, about 5 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a skillet over a medium-high heat. Sprinkle the chicken cutlets with salt and pepper and, when the oil is hot, add to the skillet. Fry, flipping as needed, until cooked through and nicely seared, 3 to 4 minutes per side.
  • Combine the tomatoes, garlic, basil chiffonade, the remaining 2 tablespoons olive oil, some salt and pepper and 1 tablespoon balsamic reduction in a bowl. Toss and set aside.
  • Remove the bread from the oven and, at the last minute, toss with the tomato mixture. Top the cooked chicken with the bread/tomato mixture, allowing it to fall around the edges and fill in the gaps of the skillet. Drizzle over the remaining 2 tablespoons balsamic reduction and garnish with some fresh basil leaves. Serve immediately.

2 teaspoons garlic, (fresh or puréed)
1 teaspoon salt
½ teaspoon pepper

3 medium tomatoes, diced
¼ red onion, chopped
1 clove garlic, grated
salt, to taste
2 tablespoons olive oil
4 tablespoons fresh basil
½ cup balsamic vinegar

Steps:

  • Combine chicken and marinade ingredients and set aside.
  • Combine bruschetta ingredients.
  • Place balsamic vinegar in a small saucepan and bring to a boil over high heat. Reduce heat to simmer for 8-10 minutes, until mixture has thickened and formed a glaze (be careful not to over-reduce).
  • Cook chicken in a large skillet over high heat about 5-6 minutes per side. Once cooked, top with bruschetta, a drizzle of balsamic glaze, and a sprinkle of Parmesan cheese.

It's truly a meal-in-a-bowl, and best of all, that meal can be served warm, room temp or chilled.

1 pound uncooked short pasta, such as gemelli or bowties
3 cups diced tomatoes (See Cook's Note)
1 cup mini mozzarella balls, halved
2 cups diced cooked chicken (See Cook's Note)
1 cup fresh basil leaves
1/2 cup marinated artichoke hearts, quartered
1/3 cup sliced black olives
1/3 cup shredded Parmesan
1/4 cup balsamic vinegar
2 cloves garlic
1 tablespoon honey
1/2 cup extra-virgin olive oil

Steps:

  • Make the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain the pasta, transfer to a large bowl, and let cool slightly. Add the tomatoes, mozzarella, chicken, basil, artichokes, olives, and Parmesan. (If you're looking to make this recipe in advance, leave out the fresh basil and stir it in right before serving.) Toss to combine.
