Here is another recipe for cheese curds. It's from the back of a bag of them from a creamery in Wisconsin. I haven't actually tried these yet. I will update when I do. I am sure that like other cheese curd recipes, it is not recommended that you substitute regular cheese as it WILL make a mess. String cheese should work instead of cheese curds if necessary, though.

3/4 teaspoon baking powder
1/4 teaspoon salt
1 lb cheese curds
oil (for frying)

Steps:

  • Mix milk, flour, baking powder, and salt.
  • Coat the cheese curds.
  • Deep fry in the oil until golden, taking care to only fry a few at a time.

1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup club soda
1 pound cheese curds
4 cups vegetable or canola oil
Marinara sauce, for serving

Steps:

  • In a medium bowl, mix the flour, baking powder and salt. Stir in the club soda and mix until smooth. Add the cheese curds to the batter and coat thoroughly.
  • Heat the oil in a large, heavy skillet or heavy-bottomed pot over medium heat until a deep-frying thermometer inserted in the oil reads 360 degrees F. Fry the cheese curds for about 1 minute, turning halfway through. Drain on paper towels. Serve the fried cheese curds with marinara or your favorite dipping sauce.

½ teaspoon salt
2 eggs, beaten
½ cup milk
1 pound cheese curds
1 quart oil for frying

Steps:

  • In a medium bowl, sift together the flour, baking powder, and salt. Stir in the eggs and milk. Mix until smooth. Add more milk for a thinner batter. Coat the cheese curds with the batter.
  • Heat the oil in a large, heavy skillet over medium heat. Fry the coated cheese curds approximately 1 minute each, until golden brown. Drain on paper towels.

4 tablespoons unsalted butter
1 1/4 cups all-purpose flour
1 1/2 cups milk
3 egg yolks
1 teaspoon salt
1/8 teaspoon white pepper
1 cup gruyere cheese, freshly grated
1 cup emmenthaler cheese, freshly grated
2 eggs, beaten together with
1/3 cup milk
1 cup dried breadcrumbs
vegetable oil (for deep frying)

Steps:

  • Directions.
  • In a heavy 3 to 4-quart saucepan melt the butter over moderate heat. When the foam begins to subside, stir in 3/4 cup of the flour and mix well. Add the milk in a stream whisking constantly. Cook over high heat until the sauce comes to a boil and thickens. Simmer for another 10 minutes on low heat, whisking often.
  • Take the pan off the heat and beat in the egg yolks, one at a time, using a wooden spoon. Season with the salt and pepper. Add the grated cheese and mix well. Pour into a greased baking dish (8 by 6-inches) and spread into a 1/2-inch thick layer. Use a spatula to smooth the top. Allow to cool to room temperature, cover with plastic wrap, and refrigerate for 8 hours, or overnight, until firm.
  • Using a pastry wheel or a sharp knife, cut the mixture into 2-inch squares and transfer them to a sheet of waxed paper. Dredge each square into the remaining flour and coat completely. Shake off excess flour and dip into the egg wash, followed by the bread crumbs. Pat the square gently with a spatula to help the crumbs adhere. Repeat with all the squares and place them on a baking sheet. Refrigerate for at least 1 hour, until the coating is firm.
  • In a deep fryer or heavy saucepan, heat 2 to 3-inches of oil until it reaches 375 degrees. Preheat the oven to its lowest temperature. Line a baking dish with paper towels and set in the middle of the oven.
  • Deep-fry the squares 3 or 4 at a time, turning them with a slotted spoon for about 5 minutes, until golden brown on both sides. As they brown, transfer them to a baking dish in the oven to keep them warm while you deep-fry the rest. Serve at once as a first course or an accompaniment to the drinks.

I'm originally from Wisconsin where everyone knows about these. They are wonderful. They sell them at festivals throughout the summer and they are very popular at the state fair. Cheese curds seem to be very difficult to find in places other than Wisconsin, though. Please DO NOT use chunks of regular cheese as it will not hold up during the frying process and is guaranteed to make a mess. Cheese curds are more durable. You could probably use string cheese successfully, although I have not tried this.

5 ounces pancake mix
1/2 teaspoon salt
1 egg
2 1/2 lbs cheese curds
oil (for frying)

Steps:

  • Make sure the cheese curds are fresh and at room temperature.
  • Mix beer, pancake mix, salt, and egg.
  • Dip curds in batter and drop one at a time into heated oil (425-450F). Fry for about 1 minute or until golden brown.
  • Drain on paper towel.
