BEEF AND PASTA SALAD
My husband and I like zesty pasta salads and have tried many different types. This delightful dish can be eaten warm or cold, so it's a perfect meal anytime of year.

- In a large bowl, combine the pasta, green pepper, tomatoes and olives. In a large skillet, stir-fry sirloin in oil until cooked as desired; drain. , If serving salad hot, add dressing to skillet and bring to a boil. Pour over pasta mixture; toss to coat. Add cheese; serve immediately. , If serving salad cold, let beef cool for 15 minutes. Add the beef, dressing and cheese to pasta mixture; toss to coat. Chill for at least 1 hour.

CREAMY BEEF AND SHELLS

- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 6-8 minutes. Stir in pasta, beef and heavy cream until heated through, about 1-2 minutes; season with salt and pepper, to taste. Stir in cheese until melted, about 2 minutes. Serve immediately.
BEEFY PASTA SALAD WITH PEANUT DRESSING

Steps:
- Cook spaghetti as directed on package, omitting salt and adding vegetables to the cooking water for the last 3 min. Meanwhile, blend lime juice, soy sauce, honey, oil and nuts in blender until smooth.
- Drain spaghetti mixture, reserving 1/2 cup of the cooking water. Place spaghetti mixture and reserved cooking water in large serving bowl. Reserve 1/4 cup peanut dressing; toss remaining with spaghetti mixture. Refrigerate 1 hour.
- Heat grill to medium-high heat. Grill steak 6 to 7 min. on each side or until medium doneness (160°F). Remove from grill; cover. Let stand 5 min. before cutting into slices.
- Fan meat slices over spaghetti mixture; drizzle with reserved peanut dressing.

- Cook pasta in large pot of boiling water according to package directions.
- Add broccoli spears during last 2 minutes of cooking, drain.
- Meanwhile, preheat broiler.
- Broil steak 4 inches from heat for 4 minutes per side for medium, or until done to taste.
- Transfer steak to cutting board and thinly slice across the grain, on the diagonal.
- Combine yogurt, mayonnaise, vinegar, basil, and salt in food processor and process until smooth.
- Transfer dressing to large serving bowl.
- Add steak and any juices accumulated on cutting board and toss to coat.
- Add pasta, broccoli, tomatoes, and onion to bowl and toss again.
- Recipe can be made ahead and refrigerated.
- Bring back to room temperature before serving.

SUSAN'S BEEFY TACO PASTA
This is a quick, flavorful and filling weeknight meal that you can alter any way you want to suit your needs and it will still come out tasty! I created this meal one night when my husband was out of town and I thought I had a pizza in the freezer to feed the kids. 5:00 rolled around...and no pizza! So I scrambled to make something with ingredients on hand. You can use any kind of beans and can substitute canned diced tomatoes in place of salsa if you like this milder. The olives, jalapeno's, cilantro and cheese are recommended but are optional. Even my picky non-meat-eating son cleared his plate. I make this with a side of guacamole and chips and it's a VERY filling meal. This makes a thicker, drier sauce (which my family likes). If you wish a saucier version, either add more canned tomatoes or more salsa to your liking. Hope you enjoy!

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet over medium heat, brown ground beef and drain. Add garlic, onion and crushed red peppers and saute until translucent and aromatic.
- Add taco seasoning and mix well.
- Add salsa and beans, olives and jalapeno's and warm through.
- Season with salt and pepper and sprinkle on cilantro.
- Combine all in large pot. Serve and add cheese to each individual bowl.

CAMPBELL'S BEEFY PASTA SKILLET
I got this off the Campbell's site after searching ages for it. My friend makes this all the time and serves it with salad and it's a tasty, easy, and quick meal. It's also a decent hot pot luck dish. My friend also puts cheese on the top and bakes it to brown the cheese. I'm posting it so I don't loose it, lol.
