Bermuda onions are covered in a buttermilk batter and deep-fried. Can be reheated in a warm oven to serve.

- Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.
- Whisk flour, buttermilk, egg, baking soda, and salt together in a bowl until smooth.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip onion rings in batter, working in batches; fry battered onion rings in the hot oil until browned, about 5 minutes. Remove with a slotted spoon and drain on a paper towel-lined plate.

DEEP FRIED CAULIFLOWER AND ONION RINGS
Last night for dinner we had deep fried cauliflower and Onion Rings. I decided to try something new. Here is the recipe I invented. It is now a family favorite

Steps:
- Mix chili powder and horseradish sauce and set in fridge. This is your dipping sauce.
- Cut the veggies as stated above. Heat oil.
- Mix egg and milk beating well.
- mix the fish fri mix with the pancake batter and cajun seasoning in a large plastic zip lock bag.
- Follow this prep for your veggies: dry mix, then egg ,then dry mix
- Fry until golden brown and crispy. serve with the dipping sauce
THE ABSOLUTE BEST FRIED VIDALIA ONION RINGS

- Slice onions into rings. In 1 bowl, mix together flour, salt and baking powder. In another bowl, beat egg yolk, then stir in milk and vegetable oil. Combine wet and dry ingredients, stir until smooth. In a third bowl, beat egg white until soft peaks form, then fold into egg-flour mixture, stirring until smooth. Dip onion rings into batter and deep fry.
DEEP-FRIED ONION RINGS

- In a large bowl combine buttermilk and baking soda; season well with salt and pepper. Peel onions and slice thinly, no thicker than 1/4-inch; a mandoline works well. Add to buttermilk mixture and stir well to submerge all onions. Set aside, unrefrigerated, for 2 hours.
- In a deep-fryer or heavy, deep pot, heat at least 1 quart oil to 375 degrees F. Working in batches, place about 1/6 of flour in a large bowl. With your hands, remove about 1/6 of onions from buttermilk. Don't let the liquid run off. Add to flour and mix vigorously with your hands until onions are well-coated. Separate them by hand and lay them in a deep-fry basket. Lower into hot oil, maintaining temperature. Stir every 2 minutes. When onions are golden brown and crisp, about 6 minutes, drain on paper towels and sprinkle with salt. Keep warm in a 200 degree F oven while you finish the rest.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

- Preheat fryer oil to 375.
- Place the beaten eggs, milk and salt in a shallow bowl (or a large baggie).
- In a separate shallow bowl (or another large baggie), mix together flour, cheese, garlic powder, thyme, oregano, paprika, cayenne, and pepper.

- Cut the peeled onions into 1/2in slices and separate into rings.
- Soak the rings in the buttermilk mixed with the cayenne pepper. Leave for up to 1/2 an hour - the longer they soak the better.
- In another bowl mix together the flour, celery salt, garlic powder, and paprika.
- Drain the onion rings and drop them in the seasoned flour.
- Remove and deep-fry a few rings at a time in hot oil until golden and crisp.
- Season and serve immediately.
