DEEP DISH BERRY PIE {TRADITIONAL AND GLUTEN FREE RECIPES}

Recipe lightly adapted from Sunset Magazine

Number Of Ingredients 11

4 cups fresh or frozen blackberries or blueberries
1 tablespoon fresh lemon juice
1/3 cup brown rice or all purpose flour
1/4 teaspoon kosher salt
3/4 cup sugar
1/2 teaspoon ground cinnamon
3/4 cup all purpose flour
1/4 teaspoon kosher salt
1 teaspoon sugar
1/2 cup cold butter (cut into 1/2" cubes)
3 tablespoons very cold water

Steps:

  • In a food processor fitted with a metal blade, combine all of the pie crust ingredients EXCEPT the water. Pulse until the mixture resembles course cornmeal.
  • Add the water and pulse a few more times, until the dough just barely comes together. Shape the dough into a small flat disk and wrap in plastic wrap. Chill at least 30 minutes.
  • Preheat oven to 450°F. Combine all of the filling ingredients in a deep pie plate or 9" round baking pan and toss lightly to coat thoroughly.
  • Unwrap the chilled dough and roll out on a lightly floured surface, to about 1/8" thickness. Cut the dough into 1/2" strips and arrange over the berries in a simple lattice pattern. (See above photo for directions.)
  • Bake 15 minutes at 450 degrees, reduce the heat to 350 degrees and bake until top is golden brown, about 45 minutes. Serve warm with ice cream or whipped cream. Enjoy!

You just can't beat this easy and delicious homemade Triple Berry Pie! It holds together perfectly every single time, and you can use fresh or frozen blueberries, raspberries and blackberries.

homemade pie crust (for a 9'' deep dish pan. This recipe makes 2 crusts: one for the bottom and one for the to)
7 cups fresh or frozen raspberries, blueberries and blackberries (about 2 1/3 cups of each type of berry*)
1 cup granulated sugar ((plus a little extra to sprinkle on top of the pie))
1 Tablespoon lemon juice
4 Tablespoons cornstarch
2 Tablespoons butter
1 large egg white (beaten with a fork)

Steps:

  • Cook berries: Add berries, sugar and lemon juice to a large saucepan over medium heat.
  • Simmer, until warm and juicy, about 5-10 minutes, gently stirring occasionally. (You can taste it at this point and see if it's sweet enough for your liking. I don't like to make mine too sweet, but if you want it sweeter you can add 1/4 cup more sugar.)
  • Thicken filling: Spoon out about 1/2 cup of the juice from the pan into a bowl. Stir cornstarch into the juice until smooth.
  • Bring pot of berries back to a simmer and slowly pour in the cornstarch. Gently stir mixture (being careful not to mash the berries), until thickened, about 2-5 minutes.
  • Cool and add to pie shell. Remove from heat and stir in the butter. Allow to cool for 15 minutes. Pour mixture into unbaked pie shell (in a 9 in deep dish pan).
  • Add lattice top or a whole top with holes pricked on top for steam to escape. (See directions for lattice crust below).
  • Pinch the edges of the top and bottom pie crusts together and crimp the edge, if you like. Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with sugar.
  • Bake at 400 degrees F for 40-45 minutes. Check it after about 25 minutes and place a piece of tinfoil over it if the top crust is getting too brown.
  • Remove to a wire cooling rack and allow to cool for several hours. Once cooled completely, you can cut into it or cover it and refrigerate it overnight to serve the next day.

10 ounces all-purpose flour
1/4 teaspoon salt
11 tablespoons cold unsalted butter (cut into 1-inch pieces)
3 tablespoons cold vegetable shortening (cut into 1-inch pieces)
4 tablespoons ice water, if needed
8 cups (4 pints) blueberries
1 cup sugar
1 tablespoon grated lemon zest
2 tablespoons blueberry vinegar
5 tablespoons quick tapioca
1 teaspoon cinnamon
1 tablespoon cold unsalted butter, cut into bits
1 egg beaten for eggwash

Steps:

  • To make the crust: Combine flour and salt in a large bowl. Add butter and shortening pieces and mix until the pastry clumps together the size of hazelnuts. Add the water a little at a time until the mixture just holds together. Do not overmix. Remove dough to a floured board. Shape the mass into a disk, wrap with plastic and refrigerate for at least 30 minutes.
  • Preheat oven to 425 degrees F.
  • To make the filling: Combine all ingredients except the butter in a large bowl. Transfer mixture to a 9 by 2 inch deep- dish pie pan. Dot with the butter. Roll the dough out to 1-inch larger than the baking dish. Top berries in casserole with the dough. Flute the edges of the dough and cut several slits in the dough to allow steam to escape. Brush with the eggwash.
  • Bake the pie on a parchment covered sheet pan for 10 minutes, lower the heat to 375 degrees and cook and additional 40 to 50 minutes, or until crust is browned. Let cool slightly, serve warm or room temperature.

GLUTEN FREE MIXED BERRY PIE

A delicious fruity pie made with blueberries, blackberries, and strawberries. The fruit is nestled in my best gluten free flaky pie crust!

3 1/2 cups berries (Use any combination)
1/4 cup tapioca starch (* see note)
1/2 cup sugar
2 teaspoons lemon juice
3 cups gluten free flour blend (* see note)
1/2 teaspoon salt
1 cup butter (cold)
2 eggs (large)
1 teaspoon lemon juice
1/2 cup water (+ 1 tablespoon)
1 egg, for egg wash (Don't add to crust mix)

Steps:

  • Preheat the oven to 425º F.
  • Add your dry pie crust ingredients to a bowl. Whisk to blend them. Add in your cold butter and use a pastry blender to cut the butter into the dough. You can also use a food processor to do this, but be careful if you use it to not over grind in your butter. You want your mixture to resemble crumbs.
  • Pour in the wet ingredients and mix to form a dough. I know it is messy, but I do this step by hand to really mix it in. Mixing with a spoon can be misleading because the dough looks dry. Mixing with your hands incorporates the moisture better.
  • Place half of the dough on a piece of wax paper dusted with a little gluten free flour. Cover with another piece of wax paper and roll to 1/4 inch thickness.
  • Remove the top piece of wax paper and place the dough side down over a greased pie tin. Peel off the remaining wax paper.
  • Press the dough into the pie tin and using fingers on both hands, pinch the dough around the edges.
  • Add your washed berries to a large bowl. Be sure to pat them dry gently to remove extra moisture.
  • In a small bowl, add the sugar and tapioca starch. Mix well.
  • Pour the sugar starch mix over the fruit and mix well to coat all of the berries. Sprinkle the lemon juice over the fruit and mix.
  • Gently pour the fruit into the bottom crust. Spread it out so that it is evenly placed.
  • Roll out the remaining pie crust dough on wax paper. Roll to 1/4 inch thickness. From here you can place it over your pie completely, or, use cookie cutters to cut out shapes in the dough.
  • If you are using the crust whole, be sure to poke a few holes in the top of the crust for steam to vent out. If you are using shapes as I did, you can choose how much of your pie to cover.
  • Brush egg wash over the top of the pie crust.
  • Cover the pie with foil and bake the pie for 10 minutes at 425º F. Reduce the baking temperature to 375º F, remove the foil, and bake for 35 additional minutes.

1 cup sugar
1 teaspoon lavender buds (optional)
1 inch piece vanilla bean (optional)
1/2 teaspoon cinnamon (optional)

8 cups fresh blueberries, Not frozen picked over and rinsed
1/2 lemon, juice of
1/3 cup flour
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees.
  • Place rack in lower third of oven.
  • Another rack below it with a cookie sheet covered with foil to catch any drippings.
  • Place one crust in a deep pie dish.
  • In a blender blend sugar lavender, vanilla, cinnamon, and cardamom till fine.
  • Mix in flour.
  • In a large bowl place blueberries toss with lemon juice.
  • Toss is sugar/flour mixture.
  • Pile blueberries in the pie dish, pack them inches.
  • Top with any remaining sugar/flour mixture.
  • Dot with butter.
  • Top with second pie crust.
  • Sealing it and adding vents as desired.
  • Brush with water.
  • Then sprinkle sugar and or cinnamon on top.
  • Bake for 20 minutes lower heat to 325 and bake for 35-45 minutes.

A chocolate-painted baked pie crust prevents this pie from getting soggy and adds a wonderful flavor complementing the strawberries! Serve with whipped cream. I am adding blueberries just around the inner edge of the pie crust after the filling has been added to create a nice red, white, and blue theme for our 4th of July celebration!

1 pastry for a 9-inch deep dish pie crust
½ cup semi-sweet chocolate chips
2 quarts fresh strawberries, hulled, divided
1 cup white sugar
2 tablespoons lemon juice
¾ cup ginger ale
3 ½ tablespoons cornstarch

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Press pie crust pastry into a 1/2-inch deep dish pie plate. Prick bottom and sides of pastry with fork.
  • Bake in the preheated oven until lightly brown, 10 to 12 minutes. Cool completely on a wire rack.
  • Melt chocolate chips in a saucepan over medium-low heat, stirring constantly, 1 to 3 minutes. Paint melted chocolate in the bottom and inside of cooled pie crust. Place chocolate-painted crust in freezer to harden the chocolate, about 30 minutes.
  • Place the prettiest strawberry, cut-side down, in the center of the chocolate crust. Arrange as many attractive strawberries as possible around the center strawberry, so they appear as circles around the center.
  • Mash the remaining strawberries in a bowl; transfer to a saucepan. Add sugar and lemon juice; bring to a boil, stirring frequently.
  • Whisk ginger ale and cornstarch together in a bowl until smooth; gradually stir into boiling strawberry mixture. Reduce heat to medium-low and simmer, stirring constantly, until thickened, 12 to 14 minutes. Remove from heat and cool for about 5 minutes.
  • Spoon strawberry sauce over strawberries in pie shell. Chill in refrigerator until pie is set, at least 8 hours.

1 cup flour
1 1/2 teaspoons baking powder
1/4 cup sugar, plus
1 tablespoon sugar
3 tablespoons cold butter or 3 tablespoons margarine, cut into 1/2 inch pieces
1/2 cup heavy cream or 1/2 cup whipping cream, plus
1 tablespoon heavy cream or 1 tablespoon whipping cream
1/8 teaspoon ground cinnamon
1/2 cup sugar
1/4 cup cold water
2 tablespoons cornstarch
2 lbs ripe peaches (about 5 medium)
3 cups assorted berries (1 cup each blueberries, blackberries and raspberries)

Steps:

  • Prepare crust: In medium bowl, combine flour, baking powder and 1/4 cup sugar.
  • With pastry blender or 2 knives used scissors fashion, cut in butter until mixture resembles fine crumbs.
  • Add 1/2 cup cream and stir with fork until dough comes together. Gather dough into a ball and place on lightly floured sheet of waxed paper. With floured rolling pin, roll dough to a 9-inch round.
  • Slide waxed paper onto cookie sheet and refrigerate dough until ready to use.
  • In cup, mix cinnamon and remaining sugar.
  • Prepare fruit filling: Preheat oven to 400 degrees F. Place cookie sheet lined with foil in oven. In 4-quart saucepan, stir sugar, water and cornstarch until cornstarch dissolves; stir in peaches.
  • Heat to boiling over medium-high heat, stirring often. Reduce heat to low; simmer 2 minutes, stirring often. Remove from heat; gently stir in berries. Pour filling into 9-inch deep dish pie plate.
  • Immediately, while filling is hot, remove dough round from refrigerator and, using waxed paper, invert dough over fruit mixture. Peef off paper. Cut 4-inch X in center of round, fold back points to make square opening.
  • Brush dough with remaining cream; sprinkle with cinnamon sugar.
  • Bake pie on foil-lined cookie sheet 35-40 minutes or until fruit is bubbly in center. If crust is browning too quickly, loosely cover pie with foil after 25 minutes. Cool pie on wire rack.
