NONNA'S LASAGNA
We make this wonderful lasagna for every family get together and holiday celebration.

Steps:
- To make the pasta, follow the directions for Homemade Egg Pasta. After rolling, cut into 12 inch long strips, then precook in boiling water for 30 seconds and place in ice water.
- Dry and set aside on clean kitchen towels.
- To make the sauce, heat the olive oil in a saucepan and once hot add the pork bones over medium heat and cook until well browned. Add the onion and continue cooking until it is tender. Add the garlic and stir well, cooking an additional minute. Finally add the puree, paste and 1 cup of water.
- Next add the oregano, 1/2 cup of the parsley, the basil, red pepper flakes and salt and pepper. Bring everything to a boil and then reduce heat to a simmer.
- Taking the ground beef (or beef/veal mix), and add the egg, bread crumbs, 1/4 parsley, 1/3 cup Parmesan Cheese and salt and pepper. Add the milk to the bread cubes and soak. Once the bread is soft use your fingers to break it up and then add it to the meat mixture. Mix all the ingredients together well with your hands, and then roll into small 1 inch sized meatballs and drop carefully in the sauce.
- Continue cooking the sauce for about 2 hours over low heat, adding additional water as needed if the sauce becomes too thick.
- Remove the meatballs and the pork bones from the sauce with a slotted spoon and place into a small bowl when the sauce is complete.
- To assemble the lasagne, add about 1/2 cup of sauce to the bottom of a large lasagne pan, then add a little water and mix.Make an overlapping layer of the noodles across the bottom of the pan. Spread a large spoonful of sauce on top, making sure the noodles are well covered. Add one more layer of noodles and sauce, and then add a layer of the mozzarella slices. Continue in this manner until you have 5 layers.
- On the top, cover the noodles well with the sauce, place another layer of mozzarella, then sprinkle on the parmesan. To finish, evenly place the meatballs across the top surface.
- Cover with foil, and bake in a preheated 375 degree F. oven for about 30 minutes. Remove the foil and cook another 10 minutes. Let rest an additional 10 minutes before serving.

- In a Dutch oven, cook beef and sausage over medium heat until no longer pink; drain. Add the tomato puree, tomato paste, 1 tablespoon parsley, sugar, basil, 1 teaspoon salt and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , In a large bowl, combine the eggs, cottage cheese, Parmesan cheese, pepper, and remaining parsley and salt. , Spread 1/2 cup meat mixture in a greased 13x9-in. baking dish. Layer with 3 noodles, a third of the cheese mixture, 1-1/3 cups mozzarella cheese and a third of remaining meat sauce. Repeat layers twice., Bake at 350° for 1 hour or until a thermometer reads 160°. Let stand for 15 minutes before cutting.

CLASSIC ITALIAN LASAGNA

- Preheat oven to 375 degrees F.
- Bechamel sauce:
- In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.
- In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.
- In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.
- Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.
- Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.
- In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
LASAGNA NONNA
Steps:
- Preheat the oven to 350 degrees F.
- Cut the butternut squash in half and spoon out the seeds. Place on baking sheet cut-side down. Add some water and bake until a knife slides through the skin and squash easily. Cool and then spoon the flesh from the shell. Set aside for later use.
- Raise the oven temperature to 400 degrees F.
- Place the ricotta, cream, garlic, shallots, basil, oregano and red pepper flakes in a medium-size mixing bowl. Whisk to combine until there are no lumps.
- Mince up the sage and add to the ricotta mix. Adjust the seasoning with salt and pepper. Whisk until blended and set aside for later use.
- Take 1 cup of the marinara and evenly coat bottom of each pan. Next lay a sheet of pasta down in each. Spread some of the ricotta mixture on each sheet and top with 3 cups of baby spinach.
- Add another sheet of pasta, then some more ricotta and spread half of the butternut squash, mashing up any larger pieces, over each lasagna.
- Then add another layer of pasta on each. Top with the remaining ricotta mixture and 3 cups of baby spinach on each. Add the last layer of pasta and pour the remaining marinara on top. Finish with the Parmesan and then the mozzarella.
- Wrap each with parchment paper and then aluminum foil. Bake until cooked through, 1 hour to 1 hour 15 minutes. Let cool, then cut and serve.
LASAGNA DOME RECIPE BY TASTY

Steps:
- Preheat the oven to 375°F (190°C).
- Heat 2 tablespoons of olive oil in a large pot over high heat. Add the onion and garlic. Cook until starting to brown, stirring occasionally, 3-4 minutes.
- Add the beef, salt, and pepper. Cook until all of the moisture has evaporated and the meat is starting to brown on the edges, breaking the meat up as you stir, 10-12 minutes.
- Add the tomato sauce and tomato paste, then reduce the heat to medium and bring the sauce to a simmer. Cook it down until the mixture becomes thick, about 15 minutes. Remove the pot from the heat and set aside.
- In a small bowl, combine the ricotta, basil, egg, and Parmesan. Stir until smooth. Set aside.
- Grease a large oven-safe metal bowl with the remaining tablespoon of olive oil, then lay about 25 lasagna noodles along the sides and bottom of the bowl, fanning them out in an overlapping pattern. The ends of the noodles should hang over the sides of the bowl.
- Slice the remaining lasagna noodles in half crosswise. These will serve as the layers between the meat and the cheese mixtures.
- Sprinkle half of the mozzarella into the bottom of the bowl on top of the noodles. This will help bind the noodles together when cooked. Spread half of the meat mixture evenly over the mozzarella, then lay half of the cut noodles over the sauce.
- Spread all of the ricotta mixture over the noodles, then layer with the rest of the noodles, then the rest of the mozzarella, and the rest of the meat sauce.
- Fold the edges of the lasagna noodles hanging over the sides of the bowl back towards the center, creating another overlapping pattern.
- Cover with foil and bake for about 45 minutes, until cooked through.
- Meanwhile, make the béchamel: In a saucepan over medium heat, melt the butter. Add the flour and cook, whisking continuously, for about 2 minutes until a paste forms.
- Add the hot milk and continue to whisk as the sauce thickens and comes to a boil. Season with salt and pepper and add the Parmesan. Reduce the heat to low, and cook, still whisking, for 2-3 minutes more.
- Invert the lasagna dome onto a cutting board.
- Pour the béchamel sauce over the dome and top with basil.
- Slice the dome, then top with more Parmesan and basil, if desired.
- Enjoy!

ANNA'S LASAGNA
I hadn't even tasted this dish until I made it after I had three children. They and their daddy loved it. When we went to the summer camp with my family, they would ask me to fix my lasagna. They would rave over it and make me feel really good. But you have to realize I had a wonderful family.

- Cook ground beef until throughly cooked, add pepperoni. Add onion, celery and bell pepper, simmer until the veggies are soft. Add garlic, parsley, tomato sauce, bay leaf, basil, Italian seasoning. Add salt and pepper to taste.
- Simmer at least 1 hour until sauce is thickened.
- Spray lasagna pan with Pam or what ever you have on hand. Put cooked noodles on bottom of pan, put half of meat mixture on top of noodles, add both cheeses making sure to remove bay leaves. Repeat process, adding more of the cheese on the top of the lasagna.
- Bake at 350°F until cheese is melted and just starting to brown. Let sit for 10 minutes before serving.
- This is delicious with a green salad and garlic bread. Enjoy!

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Meanwhile, prepare the sauce. In a large pot or Dutch oven, cook ground beef and sausage over medium heat until brown; drain. Stir in tomato puree, tomato paste, sugar, 1 teaspoon salt, garlic, and 1 1/2 tablespoons parsley. Reduce heat, and simmer uncovered for 30 minutes.
- In a bowl, stir together cottage cheese, eggs, pepper, Parmesan, 1 1/2 tablespoons parsley, and 1/2 teaspoon salt until blended.
- Preheat oven to 350 degrees F (175 degrees C). In a 9x13 inch baking dish, layer a third each of the noodles, sliced mozzarella, cottage cheese mixture, and meat sauce. Repeat layers twice.
- Bake lasagna in the preheated oven for 1 hour, or until hot and bubbly. Let stand 15 minutes before serving.

DONNA LASAGNA SOUP
I found this on an Italian website and fell in love with it! I am a fan of Pasta e Fagioli and this is kind of similar, yet different. It makes a hearty soup; and last time I made it I wanted a thinner broth, so I added three 14.5 ounce cans of Chicken Broth and used DaVinci Gnocchi noodles instead of lasagna noodles. The fresh mozzarella is a must -- don't substitute shredded! You will fall in love!

Steps:
- In a large soup pot brown sausage over medium heat, add onion, celery, carrots and cook for five minutes.
- Add the mushroom and garlic and cook for five more minutes.
- Add white wine and cook for a few more minutes.
- Add the broth, chopped tomatoes and sauce bring to a boil and taste for seasoning.
- Break up the pasta and add to the soup, cook for 10 minutes.
- Stir in the spinach and cook for a few minutes.
- To serve place mozzarella cheese in the bottom of the soup bowl pour prepared soup on top, sprinkle with parmesan cheese and basil.
- Serve with a crusty bread and salad.
