1/4 cup sugar, plus
2 tablespoons more sugar (for the whipped cream)
2 tablespoons cornstarch
1 tablespoon instant espresso powder, plus
1 teaspoon more instant espresso powder (for the whipped cream)
2 cups whole milk
1 cup semi-sweet chocolate chips or 1 cup bittersweet chocolate
1 tablespoon unsalted butter
1 1/2 teaspoons vanilla extract
1/2 cup heavy whipping cream

Steps:

  • Whisk 1/4 cup sugar, cornstarch, and 1 TBSP instant espresso powder in a heavy medium saucepan to blend.
  • Gradually whisk in milk. Whisk over medium heat until mixture boils and thickens, 3 to 4 minutes.
  • Remove from heat. Whisk in chocolate chips, butter, and vanilla extract until smooth.
  • Divide mixture among 6 ramekins or glasses. Cover and chill pudding until cold, about 2 hours.
  • Using an electric mixer; beat the cream, remaining 2 TBSP sugar, and 1 tsp espresso powder in a medium bowl until peaks form.
  • Top each chocolate pudding with a dollop of espresso cream.

This dessert is also known as "Sex in a Pan". LOL. It's so good you'll want to have seconds. I got it from my good friend Sandra. :)

1 cup flour
3/4 cup chopped walnuts
1/2 cup butter
1 (8 ounce) package cream cheese, softened
1 cup Cool Whip, softened
1 cup powdered sugar
2 (3 1/2 ounce) packages instant chocolate pudding mix
3 cups milk
1 -2 cup Cool Whip

Steps:

  • Mix first layer ingredients together and spread into a 9x13-inch pan.
  • Bake at 325°F for 15 minutes.
  • Cool.
  • Mix together second layer and spread onto cooled first layer.
  • Mix together third layer and spread on and refrigerate.
  • Top with softened Cool Whip just before serving.
  • Enjoy!
  • Note: I've combined the baking and refrigerating time in the cooking time category.

I got this recipe from Small Bites by Jennifer Joyce. I plan on making this for either Thanksgiving or Christmas Dinner. While I haven't as yet tried any of the recipes from Small Bites, I highly recommend looking into getting a copy for yourself you will not be disappointed.

Number Of Ingredients 8

4 egg yolks
1/2 cup superfine sugar
1/2 teaspoon vanilla extract
4 tablespoons high quality cocoa powder
8 ounces mascarpone cheese
1/4 cup Frangelico or 1/4 cup sweet wine
3/4 cup heavy cream, whipped into soft peaks
1/2 cup toasted and chopped hazelnuts

Steps:

  • In a large metal or glass bowl, beat the egg yolks and sugar with a whisk until very fluffy. Place the bowl over a saucepan filled with simmering water and wisk over low heat for about 5 minutes, until very thick. Whisk in the vanilla, cocoa, mascarpone, and Frangelico. Continue whisking for 2 more minutes until thick again. Remove from the heat.
  • Pour the mixture into small tea cups or large espresso cupsand refrigerate for 4 hours to set. Spoon some whipped cream on each, sprinkle with the chopped nuts, and serve.
  • Prepare ahead. The pudding can be made the night before and refrigerated.
