Date Scones image

Scones that are crisp on the outside, and buttery and flaky on the inside, studded with bits of caramelized dates. Delicious and easy step by step recipe!

Number Of Ingredients 10

2 cups flour (250 g)
1 tbsp baking powder
3 tbsp white sugar (40 g)
1/2 tsp salt
1/4 tsp cinnamon powder
1 stick frozen butter, grated on the large side of a box grater (115 grams)
1 egg, cold
1/2 cup heavy cream, cold
1 1/2 tsp vanilla extract
1 cup pitted, chopped dates (150 grams)

Steps:

  • In a large bowl, whisk together flour, baking powder, sugar, salt, cinnamon.
  • Add the grated frozen butter into the flour mixture, and work it in with your fingertips until it resembles wet sand, see post above for visuals. You can also use a pastry cutter, but I find hands easier!
  • In a separate bowl mix together heavy cream, egg and vanilla. Add the wet ingredients and the chopped dates to the flour, and mix together until combined with a spatula or fork. You can give the dough a couple kneads with your hands, but don't overwork.
  • Turn the dough out onto a lightly floured surface, and pat it into an 8 inch circle. Cut the circle into 8 wedges, and place onto a parchment paper lined baking sheet. Place the sheet with the dough on it into the fridge to rest for 15 minutes.
  • While dough is resting, heat oven to 400 F (200C). Take scones out of the fridge, and brush the top of each with a little heavy cream, and optionally sprinkle with some coarse sugar. Bake for 20-25 minutes, until edges and top are a light golden brown.
  • Serve warm, either plain or with some clotted cream and/or jam.

375 ml Sprite
300 ml cream
1 1/2 cups dates

Steps:

  • Preheat oven to 200°C
  • Place all ingredients in a bowl. Mix until combined.
  • Scrape onto a floured surface. Knead lightly and shape the dough out to about 1" thick. Then cut into squares about 3" to 4" squared.
  • Place on a greased cookie sheet and brush tops with a little milk.
  • Bake for 10-15 minutes or until the top is browned.
  • Serve with whatever :).

2 cups whole wheat flour
1 cup all purpose flour
3 tablespoons baking powder
¼ teaspoon salt
1 tablespoon sugar
1 teaspoon cinnamon
⅓ cup cold butter
¾ cup chopped dates
½ cup chocolate chips
1 ½ cups milk
milk for brushing
extra sugar and cinnamon to sprinkle

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • Sift together wheat and all-purpose flours, baking powder, salt, sugar and cinnamon into a large bowl. Rub butter into dry ingredients until it resembles fine breadcrumbs. Stir in dates and chocolate chips. Mix in the milk, just until blended and form dough into a ball.
  • Turn the dough out onto a floured surface. Roll into a circle about 1/2 inch thick. Dip a round cookie cutter into flour (to prevent sticking) then cut out round scones. Place scones on a greased baking sheet. Brush with milk and sprinkle with cinnamon and sugar mixture.
  • Bake in preheated oven until risen and golden brown, 10 to 12 minutes.

1/2 cup dates, chopped
1 tablespoon butter or 1 tablespoon margarine
3/4 cup low-fat milk
2 cups white lily self-rising flour
2 teaspoons lemon juice
1 teaspoon baking powder

Steps:

  • Add lemon juice to milk and set aside for 5 minutes until milk thickens.
  • Sift flour and baking powder.
  • Rub in butter (use a food processor, if available).
  • Add dates and milk and mix quickly to a soft dough.
  • Turn out onto a floured surface, knead lightly and pat to 2.5 cm thickness. Cut into 12 scones.
  • Place scones on a non-stick baking tray, leaving about 1 cm between them.
  • Brush tops with a little milk (so they will brown) and bake in a hot oven (220 C) for 10-12 minutes.
  • Cool on a rack for scones with crisp edges or wrap in a clean teatowel to cool for soft-edged scones.
  • Split to serve with jam or low fat spread.

10 ounces thick-cut bacon slices
2 cups all purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon coarse kosher salt
3/4 cup coarsely chopped pitted Medjool dates
1/2 cup (1 stick) chilled unsalted butter
2/3 cup buttermilk

Ingredient info: Raw sugar, which is sometimes called turbinado or demerara sugar, is available at most supermarkets and at natural foods stores.

Steps:

  • Preheat oven to 400°f. Line baking sheet with parchment paper. Cook bacon in heavy large skillet over medium heat until cooked through but still tender and not crisp, turning occasionally. Transfer bacon to paper towels to drain; cool. Pour bacon drippings from skillet into small heatproof bowl and reserve.
  • Whisk flour, 1/2 cup sugar, baking powder, baking soda, and salt in large bowl. Coarsely chop cooled bacon. Add bacon and dates to flour mixture; toss to coat. Coarsely grate butter into flour mixture. Using fork, stir in butter. Add buttermilk; stir until large moist clumps form. Using hands, knead mixture briefly in bowl until dough forms.
  • Transfer dough to floured work surface. Pat into 8-inch round. Cut into 8 wedges. Transfer scones to sheet. Cover and chill scones 2 hours. Brush with reserved bacon drippings. Sprinkle with raw sugar.
  • Bake scones until golden brown and tester inserted into center of scones comes out clean, 16 to 18 minutes. Serve warm or at room temperature. DO AHEAD: Can be made 8 hours ahead. Cool completely; store airtight at room temperature.
