This delicious cherry sauce is the perfect accompaniment for your cheesecake, pound cake, waffles, rice pudding, ice cream and more!

Number Of Ingredients 6

1 1/2 cups canned cherries plus 1/2 cup of the light syrup from the can (or fresh or frozen cherries plus 1/2 cup water)
3 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon butter (vegans: use an oil-based spread)
1 tablespoon cornstarch dissolved in 1/4 cup water
1/2 teaspoon quality pure almond extract

Steps:

  • Place the cherries and the syrup or water in a small saucepan along with the sugar, butter and lemon juice. Bring to a boil. If using fresh or frozen cherries, reduce the heat and simmer for another 3 minutes. Stir in the cornstarch mixture, stirring continually until the sauce is thickened, about 1 minute. Remove from heat and stir in the almond extract.
  • Cover and store in the fridge where it will keep for up to a week.
  • Serve warm or at room temperature.

This Easy Dark Cherry Sauce can be used in a lot of different recipes including cherry pie (of course), as a topping over ice cream or an icebox pie, and even savory items like pancakes or crepes.

4 cups Organic Fresh Dark Cherries
2 cups Sugar
4 tbsp Cornstarch
2 tsp Almond Extract

Steps:

  • Begin by washing the cherries. Remove the stem, and using a cherry pitter, remove the seeds.
  • Into a medium-heated pot, add your cherries, sugar, cornstarch, and almond extract. Stir to combine ingredients. Cook covered for 5 minutes or until the sugar completely dissolves, stirring occasionally. Cook uncovered for an additional 10 minutes until sauce comes to a light boil, stirring occasionally.
  • Allow sauce to cool and come to room temperature before using it.

1 can(s) pitted dark sweet cherries
2 Tbsp cornstarch
1 Tbsp mustard
1 Tbsp molasses
tabasco (few drops)
salt (dash)
3 Tbsp lemon juice

Steps:

  • 1. Drain syrup from cherries into a 2-cup measure; add water to make 1-1/2 cups. (Save cherries for Step 3.)
  • 2. In a small pan, blend a few tablespoons cherry syrup into cornstarch until smooth; stir in remaining syrup, mustard, molasses, tabasco and salt. Cook over low heat, stirring constantly, until mixture thickens and boils 3 minutes.
  • 3. Stir in cherries and lemon juice; heat slowly just until bubbly.

CRISP-TENDER ROAST DUCK WITH CHERRY-ROSEMARY SAUCE



Crisp-Tender Roast Duck with Cherry-Rosemary Sauce image

One 5-pound Pekin (aka Long Island) duck
Kosher salt and freshly ground pepper
1 shallot, peeled and chopped
3 cloves garlic, chopped
1 cup cherries fresh or frozen, halved and pitted
1/2 cup chicken stock, preferably homemade, or low-sodium store bought
2 tablespoons cherry or berry whole-fruit preserves
2 teaspoons honey
1 teaspoon fresh rosemary leaves, chopped
2 tablespoons fresh lemon juice
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 300 degrees F.
  • Rinse the duck inside and out and pat dry. Trim any excess fat from the neck and cavity, snip off wingtips and discard. Mix 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl, and sprinkle the bird inside and out. Using a paring knife, make dozens of slits through the skin and fat (taking care not to pierce the meat) all over both sides and all parts of the bird.
  • Put the duck breast-side up on a rack in a roasting pan and roast for 1 hour. Take the bird out of the oven, transfer to a platter and carefully drain the fat from the pan into a measuring cup (you'll end up getting 2 to 3 cups). Return the duck to the pan, prick with the knife again, turn it breast-side down and roast another hour. Repeat each hour, roasting the duck for a total of 4 1/2 hours.
  • While the duck cooks, make the sauce: In a small saucepan, heat 1 tablespoon duck fat over medium heat and cook the shallots until soft, about 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the cherries, stock, preserves, honey and rosemary, and simmer until slightly thickened, about 10 minutes. Remove from the heat, add the lemon juice, swirl in the butter and taste for salt and pepper. Set aside until the duck is finished.
  • After 4 1/2 hours of roasting, turn the oven temperature up to 350 degrees F, prick the duck skin one last time, salt the skin again and return bird to the oven, breast-side up. Roast for 30 minutes until the skin is nicely browned.
  • Remove from the oven, tent with foil and let rest for 20 minutes. Gently reheat the sauce over low heat. Carve the duck, put the pieces on a serving platter and serve with sauce.
