These king-size pigs in a blanket are more than a snack, they are a meal! Serve this with a salad for dinner or cut them into bite-sized pieces and share with friends!

5 Italian sausage links, cooked and cooled
3-4 Provolone Slices halved
5 sandwich pepperoni slices
Frozen pizza dough, thawed
1 tablespoon melted butter
1 ½ teaspoons garlic salt
Pizza sauce

Steps:

  • Preheat the oven to 375 degrees. Lightly grease a baking sheet and set aside. Divide the thawed pizza dough into 5 equal strips. Place halved cheese and pepperoni slice on the bottom portion dough of the dough strip. Place sausage on the pepperoni and roll up the sausage like a crescent roll. Place the sausage on the baking sheet. Brush with melted butter over the dough and sprinkle with garlic salt. Bake for 20-25 at 375 or until golden. Serve with pizza sauce for dipping.

I can't wait for you to try these savory, bite-size treats. It's another one of my skinny twists on this nostalgic, beloved appetizer. These are my favorite! They're easy to make with just a handful of ingredients. I used reduced-fat refrigerated dinner rolls and 97% fat-free all beef hot dogs. To add the pizza flavor, I used a little pizza sauce, Parmesan cheese and garlic powder. Each has 44 calories and 2 grams of fat. I like to serve them as an appetizer, snack or as a fun meal with a salad on the side.

1 (8 oz.) can Pillsbury Reduced-Fat Refrigerated Crescent Dinner Rolls, (see shopping tips)
1 package Hebrew National 97% fat-free hotdogs, (cut int 4 pieces each (you'll have 1 leftover))
¼ cup pizza or pasta sauce, (from a jar, see shopping tips)
2 tablespoons Parmesan cheese, (grated)
Garlic powder
⅔ cup pizza sauce or pasta sauce

Steps:

  • Heat oven to 375 degrees. Coat a cookie sheet with cooking spray.
  • Unroll dough; separate into 8 triangles. Cut each triangle into 3 smaller triangles. Don't worry if the shape of the triangle looks more like a box. It will still roll up nicely. Spread each triangle with ½ teaspoon pizza sauce and sprinkle with ¼ teaspoon Parmesan. Place 1 mini hot dog on the shortest side of each triangle; Roll up to opposite point. Fold in any dough sticking out. Place, point side down on cookie sheet. Sprinkle each with a little garlic powder over the top. Repeat steps to make 24 total.
  • Bake for 15 to 16 minutes or until deep golden brown. Immediately remove from cookie sheet onto a serving plate.
  • Serve with pizza sauce on the side, if desired.

For decades, pigs in a blanket have been a staple on the cocktail-party circuit. The little sausages are the easy part. It's the pastry which, at its finest, should approximate buttery, flaky French puff pastry or pâte feuilletée. Suppose you could make decently flaky puff pastry in minutes? Christian Leue, the manager of La Boîte, a spice emporium in New York, has developed just such a marvel. And it works.

2 sticks salted butter, frozen
1 1/2 cups all-purpose flour, plus more for kneading
1/2 cup full-fat sour cream
48 cocktail franks
Flour, for rolling
Mustard, for dipping

Steps:

  • Make the pastry: Cut each stick of frozen butter into four pieces and grate using a shredding disc in a food processor. Change to the regular blade. Add the 1 1/2 cups flour and pulse 15 or 20 times, until the mixture resembles coarse crumbs. Add the sour cream and pulse until the dough comes together. (This can also be done by hand, using a box grater to shred the butter, working the flour into it with your fingertips or a fork, then mixing in the sour cream.)
  • Turn the dough out on a floured surface and knead briefly to form a smooth ball. Divide the dough in half and flatten each piece. Place each in a zipper-top sandwich bag, press out any air, seal the bag and use a rolling pin to roll the dough until it fills the bag, forming a square. Refrigerate two hours or overnight.
  • Make the pigs in a blanket: Heat a 10-inch skillet, preferably cast-iron, on medium. If your cocktail franks came in a plastic package, pat them dry on paper towels. Place the franks in the pan and cook, turning, frequently, until they're lightly browned, 6 to 8 minutes. Remove from the pan and drain on paper towels. Let cool to room temperature.
  • Remove dough from sandwich bags by cutting the bags and peeling them off. Roll each square of dough on a lightly floured board into a 9-by-12-inch rectangle that is about 1/8-inch thick. Cut each into four 9-by-3-inch strips, then cut each strip crosswise into six 1 1/2-inch sections. You should have 48 rectangles that are each 1 1/2 by 3 inches.
  • Heat oven to 350 degrees. Line a baking sheet with foil.
  • Place a cocktail frank on each piece of dough, across the rectangle so the longer side can be wrapped around the frank. Roll the dough around the frank, moisten the edge with water and press closed. Place each wrapped frank seam side down on the baking sheet.
  • Bake until golden, about 25 minutes. Serve at once or let cool and refrigerate or freeze, then let come to room temperature and warm at 250 degrees for 15 minutes. Serve with mustard alongside for dipping.

12 small Italian sausage links (about 3 inches each)
3 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh rosemary
1/2 teaspoon dried oregano
1/2 pound refrigerated pizza dough, at room temperature
3/4 cup shredded low-moisture mozzarella cheese
2 tablespoons grated parmesan cheese
Warmed marinara sauce, for dipping

Steps:

  • Preheat the oven to 375 degrees F. Toss the sausages with 1 tablespoon olive oil on a baking sheet and bake, turning the sausages halfway through, until golden brown and fully cooked, about 35 minutes.
  • Line another baking sheet with parchment paper or foil. Combine the remaining 2 tablespoons olive oil and the rosemary and oregano in a small bowl; set aside. Roll out the pizza dough into a 6-by-12-inch rectangle, then cut the dough crosswise into twelve 1-inch-wide strips.
  • Wrap a strip of dough around each sausage and set on the prepared baking sheet with the ends of the dough on the bottom. Brush with the herb oil and sprinkle with the mozzarella and parmesan. Bake until the dough is golden brown, 12 to 15 minutes. Serve with marinara sauce.

3 cups flour
1 cup margarine
3 tablespoons baking powder
1 teaspoon salt
1 cup milk
3 lbs sausage

Steps:

  • Divide sausage, forming 30 to 36 "Pigs".
  • (About half the length of a hot dog) Do not roll in hands, form carefully with finger tips or fork.
  • Sift together flour, baking powder and salt. Cut in margarine as for pie dough.
  • Mix in milk, form into smooth ball.
  • Roll dough to 1/4 inch thickness, cut into strips about 3 1/2 inches wide. Wrap "pig" loosely in dough, overlapping on the bottom.
  • Do not pinch ends shut. Prick top of each "pig" with a fork.
  • Place on ungreased cookie sheets, bake 15 minutes at 400 degrees, then 15 minutes at 350 degrees until brown.
  • May be frozen up to 4 months.
