DANISH APPLE PUDDING



Danish Apple Pudding image

An economical dessert to make, using up applesauce and stale bread crumbs. A Danish version of the trifle, and my version of the Danish original.

1/2 pint whipping cream
2 tablespoons icing sugar
1 teaspoon vanilla extract
1/2 cup butter
1/2 cup brown sugar
2 cups stale breadcrumbs
1 1/2 teaspoons cinnamon
2 cups sweetened applesauce
1 teaspoon fresh lemon juice
1/4 cup sliced almonds, toasted

Steps:

  • Whip cream, 2 tbsp icing sugar and vanilla extract until soft peaks form (approximately 3 minutes - but it depends on the cream).
  • Place butter in a skillet and melt over medium heat. Add brown sugar, bread crumbs, and cinnamon. Mix well and cook, stirring constantly, to toast the crumbs, 3-5 minutes. Let cool completely (you may need to break up some of the crumbs if they've clumped together - this is easily down in the processor). Set aside 1 tbsp of crumb mixture.
  • Spread 1 cup of crumbs in a large bowl. Mix the lemon juice into the applesauce. Spread 1 cup of applesauce over crumbs. Next 1/2 of the whipped cream; then the last of the crumbs. Finally, another cup of applesauce and the balance of the whipped cream. Sprinkle with the toasted almonds and reserved bread crumbs. Chill for at least 3 hours.
  • Serve spooned into sherbet glasses or sauce dishes.

"I created this dessert using ingredients I had on hand," remarks Danette Bass of Hillrose, Colorado. "I brought it to a carry-in dinner at our church, and it was the first dessert to go."

2 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed, divided
1 loaf-shaped angel food cake (10-1/2 ounces), cut into 1-inch cubes
1 jar (12-1/4 ounces) butterscotch ice cream topping
3 medium red apples, chopped
1-1/2 teaspoons ground cinnamon

Steps:

  • In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a large bowl, beat cream cheese until smooth; beat in pudding. Fold in 1 cup whipped topping., In a 3-qt. glass bowl, layer a third of the cake cubes, 1/3 cup butterscotch topping, a third of the apples, 1/2 teaspoon cinnamon and a third of the cream cheese mixture. Repeat layers twice. Garnish with remaining whipped topping. Chill until serving.

  • Cut the apples into bite-sized pieces. Add them to a saucepan along with 4 tbsp sugar, the water and vanilla and cook over a gentle heat until completely soft — about twenty minutes. Add more water if needed during cooking. Leave to cool completely.
  • In a frying pan, melt the butter, then add the remaining sugar and stir. Add the breadcrumbs and keep stirring until the mixture is toasted through. Be careful, though, because the breadcrumbs easily burn.
  • When crispy, remove from the heat and spread on a tray. As the breadcrumbs cool, use your fingers to ensure that they don’t stick in clumps.
