You can replace the apple in this cake with rhubarb, pear or firm peaches. Or leave the fruit out altogether and just sprinkle the cinnamon sugar mix onto the cake before baking, then you will have a very moist tea cake.

175g butter, softened
175g castor sugar
3 eggs
175g self-raising flour
500g Golden Delicious apples
1 tsp ground cinnamon
1 tbsp white sugar

Steps:

  • Preheat oven to 180 degrees. Grease a 22-centimetre round cake tin. Beat butter and sugar with an electric mixer until the mixture is light and fluffy. Beat in eggs, one at a time. Sieve flour into mixture and fold in thoroughly. The mixture will be quite stiff. Peel, core and quarter apples, then slice them thinly. Spread half the mixture in the bottom of the cake tin and cover with half the sliced apple. Cover with the rest of the mixture and arrange the remaining apple in a wheel pattern over the top. Mix cinnamon and white sugar then sprinkle over the apple. Place in the centre of the oven and bake for 35 minutes. To check if it's ready, insert a skewer in the centre; it should come out clean.

250 g all-purpose flour
1/4 tsp salt
1/2 tsp Natron ((baking soda))
1 tbsp vanilla sugar
4 dl buttermilk
100 g butter, melted
3 eggs
1 tbsp sugar

Steps:

  • Separate the egg whites and yolks in separate bowls.
  • Whisk the sugar and egg whites fluffy and stiff. The bowl must be completely clean and dry. A tiny bit of water will make the eggs whites impossible to whisk stiff. Set aside.
  • Mix the egg yolks, all-purpose flour, natron (baking soda), salt and vanilla sugar together in a separate bowl.
  • Use a hand mixer to mix the ingredients while gradually adding the buttermilk. Keep mixing until the batter is uniform.
  • Melt the butter and let it cool off a bit. Slowly add the cooled butter to the buttermilk mixture while whisking.
  • Use a wooden spoon or similar to slowly mix the stiff eggs whites in the batter.
  • You need a special Aebleskive pan for frying. You can get one online or maybe at your local kitchen store.
  • Heat up the Aebleskive pan at medium heat and add a small piece of butter in each hole. Fill the holes 3/4 with the Aebleskive batter.
  • When the batter starts to get firm and you can turn them over without cracking, then turn the Aebleskiver 90 degrees (using a wooden stick or similar) and let the batter flow into the pan.
  • At this point there is a hole in the side of the Aebleskive. Pour a little extra batter into the hole and turn the Aebleskive another 90 degrees so that the hole gets closed.
  • When the Aebleskiver have a solid surface turn them regularly so they get an even and light-brown crust.

5 apples
50 g granulated sugar
1/2 dl water
1 vanilla bean
100 g hazelnuts
50 g granulated sugar
3 dl heavy cream ((for whipped cream))

Steps:

  • Rinse and peel the apples. Remove the core and cut the apples in smaller pieces.
  • In a sauce pan; add water, the apple pieces, sugar and the seeds from a vanilla bean. Also add the empty vanilla bean, it still have a lot of flavor.
  • Heat up the apple mixture and let it simmer until the apples are tender. If the apples are sour you should add a little extra sugar. When the apples are done; set aside to cool off completely.
  • Pour the hazelnuts in an oven proof dish and bake them for 10 minutes at 200 C (400 F).
  • Pour the warm hazelnuts in a clean dishcloth and rub them well until most of the skin are removed.
  • Pour the sugar on a frying pan and slowly melt it at medium heat. Do not stir in the sugar while it is melting. Let the sugar melt completely and become light brown.
  • Add the skinned hazelnuts to the molten sugar and stir in the mixture for about 1-2 minutes. Pour the hazelnut croccante on a sheet of parchment paper and let it cool off.
  • When the hazelnut croccante is cooled off; chop it using a food processor or similar.
  • Whip the heavy cream into a whipped cream.
  • Now the apple trifle are to be assembled; Use two large or four smaller glasses; Start with a layer of apple puree, then some hazelnut croccante and then some whipped cream. Continue until you have the amount of layers you like. We normally have two layers. Finish off with some of the hazelnut croccante. Serve right away or keep it refrigerated.

¾ cup hot water

Steps:

  • Combine 1 cup flour, 2 tablespoons brown sugar, 1 teaspoon salt, and instant yeast in a mixing bowl. Add the water and room temperature butter and beat for 1 minute. Stir in the remaining cup of flour and mix well. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Shape the dough into a ball and transfer to an oiled bowl, turning to coat the surface of the dough. Cover the bowl with plastic wrap and let the dough rise until doubled in bulk, about 1 hour.
  • Meanwhile, make the filling. Place the chopped apples and 3 tablespoons butter in a medium saucepan. Combine 1/2 cup brown sugar, 1 1/2 tablespoons flour, 1/4 teaspoon salt, cinnamon, and nutmeg and mix well; add the mixture to the saucepan. Bring the mixture to a boil over medium-high heat and then reduce the heat to a simmer. Cook until the apples are tender, about 5 minutes. Remove from heat and allow the filling to cool.
  • Transfer the Danish dough to a floured surface and punch the dough down. Let the dough rest, covered, for 15 minutes. Roll the dough out into a 13 x 8-inch rectangle. Place the dough on a greased or parchment-lined baking sheet.
  • Turn the baking sheet so that you face the short side of the dough. Spread the apple filling down the center third of the dough. With a sharp paring knife, make cuts in the dough along the right side, starting each cut about 1/4 inch from the apple filling. Cut to the edge of the dough strip, with each cut angled to about 4 o'clock. Each strip of dough should be about 1-inch thick. Repeat on the left side of the dough, angling the cuts to 8 o'clock.
  • Starting at the top, fold the dough strips across the apple filling, alternating left and right. The pastry will look like a long braid. Pinch the top and bottom ends of the braid to seal in the filling. Cover the pastry and let it rise at room temperature until the dough is puffy, 30 to 40 minutes.
  • Preheat an oven to 375 degrees F (190 degrees C). Bake the braid for 20 minutes, covering it with aluminum foil during the last 10 minutes of baking to prevent over-browning. Remove the pastry from the oven and allow it to cool.
  • To make the glaze, heat the 2 tablespoons of butter in a saucepan over medium heat. Swirl the pan occasionally and cook until the milk solids turn brown and give off a nutty fragrance, about 5 minutes. Remove from heat and transfer to a bowl to cool slightly. Stir in the confectioners' sugar and vanilla. Mix in the milk a teaspoon at a time until the glaze is thin enough to drizzle. Decorate the Danish braid with the glaze.

3 cups all-purpose flour
½ teaspoon salt
2 ½ teaspoons baking powder
2 cups white sugar
1 cup vegetable oil
4 eggs, beaten
¼ cup orange juice
2 teaspoons vanilla extract
3 apples - peeled, cored and sliced
2 teaspoons ground cinnamon
5 teaspoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan. Combine the ground cinnamon and 5 teaspoons of the sugar together and set aside.
  • In a large mixing bowl, combine the flour, salt, baking powder and 2 cups of the sugar. Stir in the vegetable oil, beaten eggs, orange juice and vanilla. Mix well.
  • Pour 1/2 of the batter into the prepared pan. Top with 1/2 of the sliced apples and sprinkle with 1/2 of the cinnamon sugar mixture. Pour the remaining batter over the top and layer the remaining sliced apples and cinnamon sugar.
  • Bake at 350 degrees F (175 degrees C) for 70 to 90 minutes.

  • Cream together the butter, sugar, eggs, flour, almonds, milk, vanilla, boiling water and baking powder in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into the prepared pan.
  • Scatter the prunes evenly on the batter. Spoon over walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake for 45 minutes.

3 Tbsp. water
1/2 tsp. vanilla
6 Tbsp. sugar, divided
1/4 cup butter
3 cups fresh bread crumbs
1/2 tsp. ground cinnamon
1-1/2 cups thawed COOL WHIP Whipped Topping
1/4 cup raspberry jam

Steps:

  • Cook apples and water in covered saucepan on medium heat 10 to 15 min. or until apples are tender, stirring occasionally. Remove from heat.
  • Mash apples to desired consistency. Add vanilla and 3 Tbsp. sugar; mix well. Cool.
  • Meanwhile, melt butter in large skillet on medium heat. Add bread crumbs, cinnamon and remaining sugar; mix well. Cook 5 to 8 min. or until crumbs are golden brown, stirring constantly. Spread onto baking sheet; cool completely, stirring occasionally.
  • Spoon apple mixture and bread crumb mixture alternately into 12 dessert cups; top with COOL WHIP and jam.

1 kilogram (2 pounds) Granny Smith apples
90 grams (3 ounces) butter
sugar to taste
2 cups (4 ounces) fresh breadcrumbs
3 tablespoons sugar
1/2 cup (4 fluid ounces) cream, whipped
red currant jelly (or jam)

Steps:

  • Peel, core and thinly slice the apples. Put into a stainless steel or enamel pan with a little water. Cover and cook gently until soft, then purée. Stir in 1 tablespoon of butter and enough sugar to taste. Melt remaining butter in a frying pan, add breadcrumbs and sugar and stir until golden. Allow to cool.
  • Just before serving, arrange alternate layers of apple purée and crumbs in a serving dish or individual bowls. Finish with a sprinkling of crumbs, decorate with whipped cream and red currant jelly.

This is the recipe for my mum's apple cake, the best apple cake and maybe the best cake I've ever eaten. It's great to eat as a dessert with vanilla ice cream or whipped cream with chopped hazelnuts, or sprinkled with sherry or dessert wine. Can be frozen baked and reheated in a microwave. My mum translated this for me from her mother's Danish cookbook, Bo Bedre's Bagebog, by Lilian Kaufman 1966. The original recipe is called Reinette-Kage (Reinette Cakes).

3 -4 cooking apples (Reinette or Bramley)
200 g plain white flour
150 g white sugar or 150 g brown sugar
200 g butter or 200 g margarine
2 large eggs
1 1/2 teaspoons baking powder
1 dash vanilla essence
2 tablespoons lemon rind, grated (from half a lemon)

Steps:

  • Whisk the eggs, slowly adding sugar until the mix becomes a light and airy.
  • Melt the butter slowly without burning it (for example in the microwave) and let it cool down, and add it to the mixture, along with the grated lemon peel.
  • Mix the flour, vanilla essence and baking powder and add it to the mixture.
  • Line a large baking tin (lasagna dish) with greaseproof paper: cut the paper to 2" (5cm) larger on each side than the base of the tin, cut into each corner and press down into the tin.
  • Pour the mixture into the tin.
  • Peel and core the apples, cut into wedges (about 4mm thick at outside) and push them down vertically into the cake mix, so that the curved outsides face upwards towards you, and the sharp insides point downwards into the cake, like teeth. The slices should be completely buried in the cake mix, or they will burn.
  • Sprinkle a little sugar on top of the apple slices.
  • Bake at 175'C for 45 minutes. Allow to cool partly in the tin before removing to cool down on a wire rack.

  • Combine all topping ingredients and sprinkle evely on top of cake batter. Bake at 350° for 40 minutes.
  • Remove cake from oven, and let cool. Cut 3 rows horizontal and 3 rows vertical (yielding 9 servings).
