Fattoush Salad makes a frequent appearance on the Middle Eastern dinner table. A simple chopped salad dressed in a zesty lime vinaigrette. Homemade pita chips serve as croutons! See the video and step-by-step for how to make fattoush below.

2 loaves pita bread
Extra virgin olive oil
Kosher salt
2 tsp sumac, divided, more as needed
1 heart of Romaine lettuce, chopped
1 English cucumber, cut in half, seeds scraped, then chopped or sliced into half moons
5 Roma tomatoes, chopped
5 green onions (both white and green parts), chopped
5 radishes, stems removed, thinly sliced
2 cups chopped fresh parsley leaves, stems removed
1 cup chopped fresh mint leaves (optional)
Juice of 1 lemon or 1 1/2 limes
1/3 cup extra virgin olive oil
1 to 2 tablespoons pomegranate molasses, optional
Salt and pepper
1 tsp sumac
1/4 tsp ground cinnamon
scant 1/4 tsp ground allspice

Steps:

  • Break the pita bread into small bite-size pieces. Heat 3 tbsp of olive oil in a large pan until shimmering, and add the pita bread. Fry briefly until browned, tossing frequently. Using a pair of tongs, transfer the fried pita chips to a plate lined with paper towel to drain. Season with salt, pepper and sumac.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.
  • To make the dressing, in a small bowl, whisk together the lemon or lime juice, olive oil, pomegranate molasses (if using), salt, pepper and spices.
  • Pour toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

My personal take on Lebanese fattoush salad. A refreshing and healthy salad with lots of flavor. To make this salad into a hearty meal, add strips of grilled chicken or white fish. Makes a great side dish to any Middle Eastern or Mediterranean-style cuisine.

2 tablespoons grapeseed oil
2 pita bread rounds, cut into 1-inch pieces
2 cups shredded romaine lettuce
1 green bell pepper, cut into bite-size pieces
1 large roma tomato, cut into bite-size pieces
½ red onion, sliced
½ English cucumber, cut into bite-size pieces
¼ cup chopped feta cheese
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh flat-leaf parsley
¼ cup extra-virgin olive oil, or more to taste
1 lemon, juiced, or more to taste
1 clove garlic, grated
½ teaspoon Greek seasoning
½ teaspoon ground sumac
salt and ground black pepper to taste

Steps:

  • Heat grapeseed oil in a large skillet over medium-low heat. Cook and stir pita bread pieces in hot oil until golden brown, 2 to 3 minutes. Transfer bread pieces to a paper-towel lined plate.
  • Stir romaine lettuce, tomato, red onion, cucumber, feta cheese, mint, and parsley together in a large bowl.
  • Whisk olive oil, lemon juice, garlic, Greek seasoning, sumac, salt, and black pepper together in a bowl until completely combined. Pour olive oil mixture and pita bread pieces into lettuce mixture; toss to coat.

Another great recipe I got from watching Rachael Ray's new tv show! This salad is so so yummy and goes great with the Mediterranean Burgers!

3 pita breads (torn into small pieces)
1/2 cup fresh parsley
1 garlic clove (chopped)
2 tablespoons extra virgin olive oil
1 cucumber (seedless or with seeds)
1 red bell peppers or 1 green bell pepper
4 celery ribs
1/2 large red onion
2 tomatoes
1/2 lb feta cheese (crumbled)
1/2 cup kalamata olives or 1/2 cup manzanilla olives
6 pepperoncini peppers (light green peppers)
2 lemons, juice of (just need the juice)

Steps:

  • Pre-heat oven to 375 degrees F.
  • Arrange torn up pieces of pita bread on baking pan and toast for 5 minutes.
  • While pitas toast, cut up cucumber, bell pepper, celery, red onion, tomatoes, olives,and hot peppers into bite-sized pieces.
  • Through all veggies into a big bowl and add garlic, parsley, and feta cheese to the pile.
  • Squeeze the lemons to spread juice over entire bowl.
  • Drizzle the 2 tablespoons of Extra-virgin olive oil onto salad.
  • Toss the salad in bowl to coat everything!
  • Add the toasted pita pieces to the salad and toss everything again!
  • Suggest pairing with the Mediterranean burgers for a healthy dinner!
  • Note: Add other veggies as you like to find the best combo for your taste buds!

Entered for ZWT, from Australian chef Neil Perry, "Fresh and Fast". This version of the Lebanese dish uses mint, Italian parsley and cilantro (fresh coriander) instead of romaine or other lettuces. Sumac comes in berry or ground form; the berries last longer. Sumac has a sour, tart (lemony) and salty taste; (it is an important ingredient in Za'atar seasoning mixture). There is no good substitute for sumac; it is available through mail-order or at Middle Eastern grocers.

1 piece fresh pita bread
1 tablespoon olive oil
5 cherry tomatoes, sliced
1 Spanish onion, roughly chopped
1 teaspoon sumac
1 lebanese cucumber, roughly chopped
sea salt, to taste
fresh ground black pepper, to taste
3/4 bunch mint, picked from stems
1/3 bunch flat leaf parsley, picked from stems
1/3 bunch fresh coriander or 1/3 bunch fresh cilantro, picked from stems
1 garlic clove
1 lemon, juiced
100 ml extra virgin olive oil (3.5 oz.)
fresh ground black pepper, to taste

Steps:

  • Heat a little olive oil in a pan and fry the pita bread until crispy.
  • Tear the bread into a bowl and add the tear drop tomatoes, onion, sumac, cucumber, salt, pepper, mint, parsley and coriander.
  • In a mortar and pestle, pound a pinch of salt together with the garlic and add lemon juice, extra virgin olive oil and pepper.
  • Add the dressing to the salad and serve straight away.
