ONION PIE
This is from TOH. I haven't tried it yet, but I am typing it up for ZWT II. This is a classic Alsace regional dish.

Steps:
- In a bowl, combine the biscuit mix, sage and salt. Add enough milk until mixture holds together. Press into the bottom and sides of a 9 inch pie plate; set aside.
- In a large skillet, sauté onions in oil until tender. Sprinkle with salt. Spoon into crust.
- In a bowl, beat egg and cream; pour over onions.
- Bake, uncovered, at 375 for 15 minutes. Reduce heat to 325 and bake 25-30 minutes longer or until a knife inserted near the center comes out clean.

DAD'S ONION PIE

- Preheat oven to 350 degrees F (175 degrees C). Fit the pie crust into a 9-inch pie dish.
- Melt the butter in a large skillet over medium-low heat, and cook, stirring often, until the onion slices are slightly browned at the edges, about 15 minutes. Allow to cool, and arrange the onion slices into the bottom of the pie crust.
- In a bowl, beat the eggs thoroughly with milk, salt, and about 1 1/4 cup of sour cream. Mix the remaining 1/4 cup of sour cream with flour in a small bowl until thoroughly combined, and whisk the flour mixture into the egg-sour cream mixture. Pour the mixture over the onions in the pie crust.
- Bake in the preheated oven until set, about 45 minutes.

CHEESE AND ONION PIE
This recipe was originally passed on to my Dad by his canteen cook at work. It was a firm family favourite with us and Mum gave me the recipe when I left home. The most important thing to do is make sure you use organic onions and extra mature cheddar, these two ingredients will give you the best flavour and make it something you want to do again and again. The method is very simple so anyone can make it.

- Heat the oven to 180C. Grease and flour a 9" pie dish. Rub oil over whole of the inside of the dish, bottom and sides. Roll out the pastry to fit then place in the tin. Flatten pastry into bottom and sides thoroughly. With excess pastry over the sides take a rolling pin and roll over the edge of the dish to get a lovely neat edge and remove the excess. Prick the bottom with a fork all over.
- Peel potatoes, chop into quarters and boil until just soft. Drain and allow to dry a bit.
- Slice the onions and add to a large mixing bowl. Add all the other ingredients and mix well. Add potatoes and mash into the mix with a knob of butter.
- Fill the pastry case and level out. Place in the oven for at least 40 mins check the bottom of the pie if the pastry is evenly golden it is ready. If not pop back in for 5 mins at a time and keep checking until done.
DAD'S MINUTE STEAK WITH GOLDEN ONIONS

- Mix the wine, soy sauce, mustard and sugar in a big bowl. Toss in the steak strips, season well with pepper and leave to sit and soak while you get everything else ready.
- Pour the oil into a large frying pan and heat it up over a medium heat for a minute or so. Tip in the onion slices, turn the heat up to very high and cook for 3-4 minutes, stirring often to get the onions really golden brown. Take the onions out and keep them warm.
- Lift the steak strips out of the marinade with a slotted spoon and stir fry them in the onion pan over a very high heat for 30 seconds (do it in two batches if it's easier). Pour in the marinade from the bowl and boil for a few seconds until it sticks to the meat but is still juicy. Season with salt and pepper and keep warm.
- Toast the bread and then spread with the garlic butter and cut each slice in half. Overlap two pieces of toast on each plate, top with a spoonful of onions, then the steak and more onions. Put a little pile of watercress on each plate and serve straightaway.

- Preheat oven to 425.
- Place the peas and carrots, green beans, and celery into a saucepan. Cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes.
- Drain the vegetables in a colander set in the sink and set aside.
- Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes.
- Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning. Slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat and stir the cooked vegetables and turkey meat into the filling until well combined.
- Fit 2 pie crusts into the bottom of two 9 inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam.
- Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes.
- Cool for 10 minutes before serving.

CHEESE & ONION PIE

- First, make the pastry. Tip the flours into a medium bowl with the cayenne, onion seeds, parmesan and a generous pinch of salt. Rub in the butter until the mixture resembles breadcrumbs, then pour in half the egg and 2 tbsp cold water and bring everything together using your hands. Knead a couple of times until smooth. Flatten a third of the dough into a disc, then do the same with the remaining dough. Wrap both pastry discs and chill in the fridge for at least 30 mins. Will keep chilled for up to two days.
- Meanwhile, make the filling. Heat the butter in a saucepan over a medium heat until sizzling, then scatter in the onions, bay, thyme, a large pinch of salt and good grinding of black pepper. Stir, then cook slowly for 10 mins until the onions have cooked down and started to caramelise. Stir in the sliced potatoes, cover and cook for 8-10 mins more, stirring occasionally until the potatoes are soft and starting to break down. Stir in the cream, remove the pan from the heat and leave to cool. Once cool, remove and discard the bay, then fold in the cheese.
- Roll the smaller pastry disc out on a lightly floured surface to the size of a dinner plate and lift onto a baking sheet lined with baking parchment. Roll out the remaining pastry disc along with any offcuts to a circle about 5cm wider than the first. Spoon the filling into the middle of the smaller circle on the baking sheet, leaving a 4cm border. Brush the exposed border with some of the remaining beaten egg, then drape over the larger pastry circle. Tuck the edge around the filling to enclose it, as if making a giant ravioli. Trim the edge to neaten, then crimp with a cutlery knife handle or fork to seal. Brush the pie all over with most of the remaining beaten egg, and use any trimmings to make decorations, if you like.
- Heat the oven to 210C/190C fan/gas 7. Bake the pie for 35-40 mins until deeply golden, brushing with the rest of the beaten egg halfway through. Leave to cool on the baking sheet for at least 20 mins before cutting into wedges, or leave to cool completely and serve cold.

- In a big saucepan, melt the butter; add the onions, salt and pepper, and mustard.
- Saute over low heat, stirring occasionally, until onions are browned (20-30 minutes).
- Add the flour and stir until smooth.
- Add the stock and wine; stir constantly until mixture comes to a boil.
- Lower the heat and simmer, covered, for 30 minutes.
- Note: can be made in the crock-pot and cooked on LOW all day after the ingredients are browned.
- To serve: place French bread slices in oven-proof bowls, add cheeses over the bread.
- Pour soup over the bread and place bowls under the broiler until the cheese melts.
- Note: I put the bowls on a baking sheet then place them in the oven under the broiler.

MY DAD'S PIE CRUST
Daddy was the baker in our house. He was most fond of pie, but just couldn't make a descent crust to save him, until he found this recipe in either a Betty Cocker or Better Homes and Gardens cookbook. I don't know which (this was forty-five some years ago). I have looked on Zaar for a recipe like this - and while they are similar they aren't Daddy's. Word to the wise - roll the dough out between two pieces of wax paper - the only way. Do not double the recipe for two crusts - just doesn't work. I make one crust at a time and store in the fridge while making the next. We are crust fiends in our house - so I always make a thicker crust then this recipe produces. I make three portions of this recipes for a two crust pie (1 and 1/2 per crust). Prep time includes cooling time. Cooking times depends on for what you are using the crust. Patience Grasshooper - it will be worth it.

Steps:
- Add 1 cup plus 2 T flour to mixing bowl.
- Add salt and mix with fork.
- Add oil and mix with fork just until combine (will be crumbly).
- Add COLD water (I have a cup of water with ice cube set up for this) 1 T at a time. Mix and add water until a ball of dough forms.
- Put in the fridge and let rest for 15 to 30 minutes (I don't always wait - but it is better if you do).
- Roll out between two pieces of wax paper.
- Lift the top piece of paper off the crust.
- Lift the bottom paper with the crust to the pie pan and invert.
- Peel the wax paper from the crust.
- Fit and crimp: fill or bake blind if one crust.
- Fit, fill and repeat if two crust.
- I estimate that this makes an 8 inch pie crust see my notes about the amount of crust I use for a 9 inch.
- Bake according to your pie recipe.
