DAD'S OLD FASHIONED FUDGE

Dad's Old Fashioned Fudge image

Dad's Old Fashioned Fudge recipe has been in my family since about 1975 and is an absolute must-make every Christmas and Easter. With just 5 ingredients, it turns out rich, creamy and a complete crowd pleaser! We served this homemade fudge at my Dad's funeral reception and the plate was wiped clean in minutes.

Time 16m

Number Of Ingredients 7

4 cups granulated sugar
12 oz can evaporated milk
1 tbsp half & half (or whole milk )
2 tbsp + 2 tsp pure vanilla
7 oz unsalted butter (1 cube + 3/4 cube)
16 oz semi sweet chocolate chips (16 oz = 2 & 2/3 cups )
2-3 cups walnut halves

Steps:

  • Lightly grease a 8 x 10 baking pan and line with parchment paper making sure parchment overlaps sides for easy removal later. Set aside.
  • In a 8 quart pot combine sugar, evaporated milk, half & half and vanilla. Place pan over medium heat stirring constantly for 6 1/2 mins. Mixture should come to a rapid boil for a full 2 mins. (IMPORTANT See Note #1 below) Take off heat. Add butter and continue stirring while adding in chocolate chips. Stir until chocolate is melted and mixture is completely smooth. Stir in walnuts.
  • Pour chocolate mixture evenly into lined pan. Chill for at least 2 hours.
  • Once chilled gently run butter knife along sides of pan to loosen. Carefully remove fudge and loosen parchment from sides. With a large sharp knife carefully cut into small pieces. Keep refrigerated for a longer shelf life of up to 1 month.

FAMOUS FUDGE

Famous Fudge image

I have not yet tried this, but it is from an overdue library book (From Our Mothers' Kitchens) and I want to return the book tomorrow, so need to get the recipes I want to try copied down, pronto. I would very much like to try this fudge, but I know I don't have the arm strength to pull it off. I may try it with my heavy-duty mixer; what's the worst that could happen? Anita Stewart, the author of the cookbook and the daughter of the recipe's originator, says you can use this recipe to make chocolate fudge: "Add 3 coarsely diced squares of semisweet chocolate to the final mixture to make a creamy chocolate variation."

Time 30m

Yield 36 squares

Number Of Ingredients 6

3 cups packed light brown sugar
1/3 cup corn syrup
1/3 cup whole milk (not lowfat or skim)
3 tablespoons butter
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts (optional)

Steps:

  • Butter a 9-inch square pan and set aside.
  • In a heavy saucepan, combine sugar, corn syrup, milk and butter and then bring to a boil over medium heat, stirring constantly to dissolve sugar.
  • Insert a candy thermometer so that it doesn't touch the bottom of the pan and cook, without stirring, until temperature reaches 238F (115C) or soft-ball-stage, watching very carefully during the final minutes of cooking.
  • Remove from heat and stir in vanilla and the nuts, if using.
  • With a wooden spoon and a lot of elbow grease, beat fudge until it begins to thicken, about 7 to 10 minutes.
  • Pour into prepared pan and let cool; score with a sharp knife into squares or bars before the fudge is fully set.

MY DAD'S FUDGE

My Dad's Fudge image

My dad was not a cook but he did have a sweet tooth and loved chocolate! This was his recipe and when we were teens we learned to make it. If you only boil it, (oh, no- I don't remember how long), 3 - 5 minutes?, you can use it as a quick and simple hot fudge sauce over ice cream. Yum.
