DAD'S BREAD PUDDING

The Best Bread Pudding. This is a good firm bread pudding. Not a soggy goopy mess, and not too dry either. Adapted from my own Father's recipe I consider this restaurant quality bread pudding. Can be made with raisins but most people seem to like it without. Keeps for days in the refrigerator and reheats very quickly in the microwave.

Ingredients

6 eggs
1/2 teaspoon salt
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 1/2 cups milk
9 slices soft white bread (crust removed)
1/2 cup raisins (optional)
caramel sauce, for topping (optional)

Steps:

In a mixing bowl whisk the eggs.
Add the salt, sugar, vanilla, cinnamon, milk, (and raisins if using) and mix well.
Remove the crust from the bread and gently tear into small pieces (don't squish the bread!).
Add the pieces of bread in to the mixing bowl and fold in until well incorporated and everything is wet.
Pour everything into a greased 8x8 glass baking dish.
Bake at 350 for 1 hour or until set.
Let stand a few minutes and serve warm with caramel sauce or ice cream!

6 tablespoons sugar (I use splenda)
4 tablespoons cornstarch (slightly heaping)
2 tablespoons cocoa (heaping)
1 pinch salt
1 teaspoon vanilla extract
2 cups milk (I use 1%)

Steps:

-Combine all dry ingredients until all lumps are gone and blended well.
-Add milk and place on burner turned to high -- stir constantly until desired thickness.
-Remove from heat and add vanilla, stir well and serve.enjoy.

In a small bowl, stir together the raisins and the bourbon, rum, Grand Marnier, brandy, or apple juice. Cover and let the mixture stand overnight.
With a 3-inch cookie or biscuit cutter, cut a round from the center of each slice of bread (save the remaining bread for another use). Arrange the rounds of bread in a single layer on a baking sheet. Bake in a 300 degree F oven for 5 to 6 minutes or until the bread is nearly dry, but not crisp. Remove the bread rounds from oven.
In a medium bowl, beat together the eggs, milk, the 1-1/3 cups whipping cream, sugar, vanilla, ground nutmeg, and ground cinnamon.
Drain the raisins and discard the liquid. Place a bread round in each of six 10-ounce custard cups. Sprinkle half of the raisins over bread rounds. Repeat layers and top each with a third round of bread. Divide the egg mixture evenly among the 6 cups.
