Homemade Chicken Soup

1 whole small onion (diced)
3 whole large carrots (diced)
2 whole stalks celery (diced)
2 cloves garlic (minced)
1 Tablespoon olive oil
10 cups homemade chicken broth
2 leaves bay
1 cup cooked chicken (chopped or shredded)
1 cup small salad macaroni pasta (uncooked)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Heat olive oil in a large pot.
  • Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.
  • Add garlic, stir for 30 seconds, just until fragrant.
  • Add broth and bay leaves. Simmer for 20-30 minutes
  • Add pasta. Simmer for 5 minutes..
  • Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.
  • Add salt and pepper.
  • Remove bay leaves, serve.

4 carrots, quartered lengthwise and cut into 1-inch pieces
4 long strips lemon zest
4 sprigs fresh dill, plus 2 to 3 tablespoons chopped
2 tablespoons extra-virgin olive oil
Kosher salt
4 skinless, boneless chicken breasts (1 1/2 to 2 pounds)
4 cups low-sodium chicken broth
1 cup small pasta, such as pastina
1 cup frozen peas, thawed
1/2 bunch fresh spinach, stemmed
Freshly ground pepper
4 ounces feta cheese
Lemon wedges and crusty bread, for serving (optional)

Steps:

  • Combine the carrots, lemon zest, dill sprigs, olive oil and 1/2 teaspoon salt in a 5-to-6-quart slow cooker. Season the chicken with salt and add to the cooker. Add the broth and 4 cups water, cover and cook on low, about 8 hours.
  • About 20 minutes before serving, add the pasta to the slow cooker, cover and cook until tender, about 15 minutes.
  • Stir the chopped dill, peas and spinach into the soup and cover until the spinach wilts, about 2 minutes. Stir to break up the chicken and season with salt and pepper. Ladle into bowls and crumble the feta on top. Serve with lemon and bread, if desired.

I love soups and during fall and winter I eat them 3-4 times a week. I always look for tasty, quick, and comforting recipes. This one you can change to whatever veggies you have on hand. But this is my favorite combination.

12 ounces boneless chicken breasts
2 tablespoons olive oil
1 medium onion, diced
1 1/2 cups carrots, diced
8 ounces cauliflower florets
4 cups low-sodium low-fat chicken broth
2 teaspoons dried herbs
4 1/2 ounces small shaped pasta
salt and pepper
parmesan cheese (optional)

Steps:

  • Finely dice the chicken, discarding any skin.
  • Heat the oil and quickly saute the chicken and vegetables until they are lightly colored.
  • Stir in the stock and herbs. Bring to a boil and add pasta. Return to boil, cover, and simmer for 15 minutes.
  • Season to taste and sprinkle with Parmesan cheese (if using) Serve with crusty bread for a complete meal.

1 cup dry fusilli pasta
3 tablespoons olive oil
6 chicken tenderloins, cut into chunks
1 tablespoon dried minced onion
salt and pepper to taste
garlic powder to taste
1 tablespoon dried basil
1 tablespoon dried parsley
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups frozen mixed vegetables
1 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking dish.
  • Bring a large pot of lightly salted water to a boil. Place fusilli pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a skillet over medium heat. Place chicken in the skillet, and season with minced onion, salt and pepper, garlic powder, basil, and parsley. Cook until chicken juices run clear. Mix in the cooked pasta, cream of chicken soup, cream of mushroom soup, and mixed vegetables. Transfer to the prepared baking dish.
  • In a small bowl, mix the bread crumbs, Parmesan cheese, and butter. Spread evenly over the casserole.
  • Bake 30 minutes in the preheated oven until bubbly and lightly browned.

3 tablespoons butter
4 ounces button mushrooms, sliced
1 cup sliced celery
1 cup shredded carrots (about 2 medium)
1 medium onion, chopped
3 tablespoons all purpose flour
6 cups chicken stock or canned low-salt chicken broth
1 1/2 cups half and half
2 tablespoons chopped fresh parsley
1 1/2 pounds chicken tenders, cut into 1/2-inch pieces
1 cup penne pasta
1/4 pound sugar snap peas, halved diagonally
3 tablespoons fresh lemon juice

Steps:

  • Melt butter in heavy large pot over medium heat. Add mushrooms, celery, carrots and onion. Cook until celery and onion are tender, about 5 minutes. Add flour and cook 3 minutes, stirring frequently. Gradually mix in chicken stock. Bring soup to simmer, stirring frequently. Add half and half and chopped parsley and simmer 5 minutes. Add chicken tenders and simmer until cooked through, about 5 minutes. (Chicken soup can be prepared 1 day ahead. Cool slightly. Cover and refrigerate.)
  • Cook penne pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta. Bring chicken soup to simmer. Mix in cooked pasta and sugar snap peas and simmer 2 minutes. Mix in lemon juice; season to taste with salt and pepper.

Steps:

  • Heat oil in Dutch oven over medium-high heat. Cook onions, bell pepper, carrots and garlic in oil 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender.
  • Stir in broth, tomatoes, beans, chicken and basil. Heat to boiling; reduce heat to medium-low. Cook 10 minutes, stirring occasionally.
  • Stir in pasta. Cook 10 to 12 minutes, stirring occasionally, until pasta is tender. Top each serving with cheese.

2 (8 ounce) skinless, boneless chicken breast halves
¾ cup diced celery
1 cup diced carrots
½ cup diced onion
8 teaspoons chicken soup base
1 tablespoon olive oil
1 teaspoon minced garlic
½ teaspoon dried rosemary
⅛ teaspoon ground thyme
¼ teaspoon black pepper
½ teaspoon curry powder
2 leaf (blank)s bay leaves
½ cup pastina (tiny star-shaped pasta) or other tiny pasta

Steps:

  • Combine water, chicken, celery, carrots, onion, chicken soup base, oil, garlic, rosemary, thyme, pepper, curry powder, and bay leaves in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
  • Discard bay leaves. Remove chicken breasts and dice; be careful, it's hot.
  • Return chicken to the pot with pastina. Select Saute function and boil, uncovered, until pasta is tender, about 4 minutes.
