MINI CHEESECAKES WITH VANILLA WAFERS

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.
- Crush the vanilla wafers and place 1/2 tablespoon of the crushed vanilla wafers into the paper lined miniature muffin tins.
- Cream together with an electric mixer the cream cheese, sugar, eggs and vanilla. Fill each miniature muffin liner with this mixture, almost to the top.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.

Steps:
- Preheat oven to 375 degrees.
- Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
- Line regular sized muffin pans or cupcake tins with paper baking cups and place a vanilla wafer in the bottom of each cup.
- Fill the cups 2/3 full of cream cheese mixture.
- Bake for 15 to 20 minutes or until set.
- When warm, top each with a tablespoon of cherry filling.
- Chill in refrigerator.

- 1. Line muffin pan with paper muffin cups. Place one wafer cookie in the bottom of each cup, set aside.
- 2. Mix cream cheese, sugar, and vanilla and almond extracts until smooth. Slowly add eggs and sour cream, mix until creamy. Stir in chopped SNICKERS® Bars.
- 3. Spoon mixture into muffin cups and bake in a preheated 375°F oven until set, about 25 minutes. Cool completely and refrigerate until ready to serve. To serve:
- 4. Combine coconut with a few drops of food coloring to desired shade of green. Arrange on top of cheesecakes to resemble a nest. Fill nests with M&M'S® Brand Speckled Chocolate Eggs. Serve at room temperature.
MINI CHEESECAKES WITH VANILLA WAFER CRUST RECIPE
Steps:
- Gather the ingredients.
- Preheat oven to 275 F. Place cupcake liners in muffin tins. Place a vanilla wafer in each well.
- In a large bowl, beat cream cheese until light and fluffy.
- Add egg yolks and sweetened condensed milk. Beat until smooth.
- Stir in lemon juice.
- In another bowl, beat egg whites and salt to form soft peaks.
- Gently fold beaten egg whites into cream cheese mixture until incorporated and white streaks are no longer visible.
- Fill prepared muffin tins to 1/4 inch from the top. Bake at 275 F for 20 minutes.
- Cool cheesecakes in muffin tins. Then remove from tins and chill in refrigerator until ready to serve.
- Before serving, remove muffin liners and top with pie filling.

- Preheat oven to 350 degrees F (175 degrees C).
- Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
- In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
- Fill each baking cup 2/3 full with cream cheese mixture.
- Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling. Pipe whipped cream or sweetened cream cheese into a rosette on top of each cheesecake just prior to serving, if desired.

MINI PUMPKIN CHEESECAKES
I came across this recipe while clipping coupons and modified it to suit our taste. They are perfect potluck and party food. Garnish with walnuts, mini chocolate chips, fresh mint, cinnamon, powdered sugar--whatever you like!

Steps:
- Preheat oven to 325 degrees and place cupcake liners in muffin pans. Spray each liner with non-stick cooking spray.
- Place one gingersnap in each cup, flat side down.
- Beat cream cheese, sugar, pumpkin pie spice, cinnamon, vanilla and corn starch with an electric mixer.
- Add eggs, one at a time then add in pumpkin and corn syrup.
- Beat thoroughly and pour equal amounts into each cupcake liner.
- Bake at 325 degrees for 30 minutes until just set. They will seem wet in the middle but this is fine.
- Cool then chill for at least one hour before serving with your favorite garnish.
