This is our favorite cabbage roll recipe. I often double or triple it to take it to pot lucks. They always go down a treat. People love them.

Number Of Ingredients 12

1 lb ground beef
1/4 cup raw long grain rice
1 egg, beaten
1 onion, grated
1 carrot, grated
1 teaspoon salt
fresh ground pepper
6 slices bacon, minced
12 wilted cabbage leaves, thick veins trimmed to thin
1/2 cup brown sugar
1/4 cup lemon juice
1 cup tomato sauce

Steps:

  • Mix together meat, rice, egg, onion, carrot, salt, pepper and bacon.
  • Spoon mixture into the center of each of the 12 cabbage leaves.
  • Roll up, tucking in sides to completely enfold meat.
  • Place folded side down in a greased baking dish.
  • Mix together brown sugar, lemon juice and tomato sauce.
  • Pour over rolls, cover tightly and bake at 375°F for 1 hour.
  • Uncover and bake 20 minutes longer.

1 medium head cabbage (3 pounds)
1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided
1 small onion, chopped
1/2 cup uncooked long grain rice
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon snipped fresh dill or dill weed
1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

Cabbage rolls made the most traditional way, grandmother's way, they are to-die-for. This recipe is the epitome of Ukrainian comfort food.

1 large cabbage head
1 lb ground meat (chicken and beef is a great combo)
1/2 lb white rice
2 medium onion (thinly diced)
2 large carrots (grated)
3 tbsp olive oil
1 tbsp salt (adjust to taste)
1 tsp pepper (adjust to taste)
1/2 cup tomato sauce
1 cup sour cream
1 large onion (cut in half rings)

Steps:

  • Boil rice in a pot of salted water until it's cooked. Saute grated carrots and thinly cut onions with olive oil.
  • Cool rice and carrots with onion, combine them together with the meat in a large bowl, add greens and spices, and mix well.
  • Bring 1 gallon water to boil in a large deep pan, and place the cabbage in the pan. Boil for 2-3 minutes, cut and takeout the upper cabbage leaves, trying to keep them from braking. Repeat until the cabbage leaves are too small. Let the leaves cool.
  • Cut out the hard part of the cabbage leaves by slicing each piece into two and removing the middle of the leaf
  • Place cabbage leaf into your hand, add filling and fold over the cabbage leaf into a roll.
  • Press the top of the pocket into the filling.
  • Place the cabbage rolls into a ceramic pot, spaced tightly together.
  • For the Sauce - preheat skillet with a bit of oil, add onion rings and saute until they are golden brown. Pour sour cream and tomato sauce into the pan. Combine everything together.
  • Pour sauce over cabbage rolls. Bake them in an oven at 375F for 45 minutes.
  • Serve the cabbage rolls while they are warm with a dollop of sour cream.

2 tablespoons extra-virgin olive oil
2 garlic cloves, smashed
1 1/2 quarts crushed tomatoes
2 tablespoons white wine vinegar
1 tablespoon sugar
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, chopped
2 garlic cloves, minced
2 tablespoons tomato paste
Splash dry red wine
2 tablespoons chopped fresh flat-leaf parsley
1 pound ground beef
1 pound ground pork
1 large egg
1 1/2 cups steamed white rice
Kosher salt and freshly ground black pepper
2 large heads green cabbage, about 3 pounds each

Steps:

  • To make the sauce:
  • Coat a 3-quart saucepan with the oil and place over medium heat. Add the garlic and saute for 1 minute. Add the tomatoes and cook, stirring occasionally, for 5 minutes. Add the vinegar and sugar; simmer, until the sauce thickens, about 5 minutes. Season with salt and pepper and remove from the heat.
  • Place a skillet over medium heat and coat with 2 tablespoons of the olive oil. Sauté the onion and garlic for about 5 minutes, until soft. Stir in the tomato paste, a splash of wine, parsley, and 1/2 cup of the prepared sweet and sour tomato sauce, mix to incorporate and then take it off the heat. Combine the ground meat in a large mixing bowl. Add the egg, the cooked rice, and the sauteed onion mixture. Toss the filling together with your hands to combine, season with a generous amount of salt and pepper.
  • Bring a large pot of salted water to a boil. Remove the large, damaged outer leaves from the cabbages and set aside. Cut out the cores of the cabbages with a sharp knife and carefully pull off all the rest of the leaves, keeping them whole and as undamaged as possible, (get rid of all the small leaves and use them for coleslaw or whatever.) Blanch the cabbage leaves in the pot of boiling water for 5 minutes, or until pliable. Run the leaves under cool water then lay them out so you can assess just how many blankets you have to wrap up the filling. Next, carefully cut out the center vein from the leaves so they will be easier to roll up. Take the reserved big outer leaves and lay them on the bottom of a casserole pan, let part of the leaves hang out the sides of the pan. This insulation will prevent the cabbage rolls from burning on the bottom when baked. Use all the good looking leaves to make the cabbage rolls. Put about 1/2 cup of the meat filling in the center of the cabbage and starting at what was the stem-end, fold the sides in and roll up the cabbage to enclose the filling. Place the cabbage rolls side by side in rows, seam-side down, in a casserole pan.
  • Preheat the oven to 350 degrees F.
  • Pour the remaining sweet and sour tomato sauce over the cabbage rolls. Fold the hanging leaves over the top to enclose and keep the moisture in. Drizzle the top with the remaining 2 tablespoons of olive oil. Bake for 1 hour until the meat is cooked.

I can only attempt to spell the real name of this dish; Cabushka or something like that! My mother's father was from Czechoslovakia, and he has three sisters who are excellent cooks. I have learned to cook this dish quite happily. At our last reunion, there were three separate bowls with different versions of this same dish; they were all scraped clean!

1 large head cabbage, shredded
¼ pound bacon, chopped
1 tablespoon vegetable oil
1 small onion, chopped
1 stalk celery, chopped
¼ cup chopped green bell pepper
3 tablespoons white vinegar
½ teaspoon salt
1 teaspoon black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Blanche cabbage briefly in boiling water, remove and drain immediately.
  • In a large skillet, brown bacon over medium heat until opaque; remove and drain on paper toweling.
  • Remove all but 1 tablespoon of bacon grease from the skillet; add the 1 tablespoon vegetable oil and heat over medium heat. Add onion, celery and bell pepper and saute until crisp-tender.
  • In a large bowl combine the prepared cabbage, bacon, sauteed vegetable mix (with oil), vinegar, salt and pepper. Mix well and serve warm, or chill and serve later.

1 pound ground beef
1 pound ground pork
1 onion, chopped
1 teaspoon salt
black pepper to taste
1 teaspoon chopped fresh parsley
½ cup cooked brown rice
1 ¼ teaspoons garlic salt
2 (10.75 ounce) cans condensed tomato soup
27 ounces sauerkraut, drained
1 (29 ounce) can diced tomatoes
1 medium head cabbage
5 slices bacon
2 tablespoons white sugar
3 cups water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a pot of water to a boil.
  • Mix beef and pork together. Stir in onion, cooked rice, parsley, salt, pepper, garlic salt and 1/2 can of tomato soup. Mix well.
  • Core head of cabbage, place in boiling water and boil until partly cooked. Separate leaves and trim stems. Reserve about 24 to 32 whole leaves. Cut remaining leaves and line the bottom of large roasting pan.
  • Lightly pack a small handful of the meat mixture and place in the center of a cabbage leaf. Fold top part of leaf over mixture, then fold in the sides and roll until mixture is completely encased. Lay rolls on top of torn cabbage leaves in pan. Place sauerkraut evenly over rolls. Lay bacon on top of sauerkraut. Sprinkle with 1 to 2 tablespoons of sugar. Mix chopped tomatoes and soup with water and pour over rolls. Add additional water to reach top of cabbage rolls.
  • Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until cooked through.

1 head fresh cabbage, approximately 3 pounds
1 small onion, chopped fine
1 teaspoon oil
1 teaspoon vegetable bouillon
1/2 pound ground pork
Salt

2 carrots, chopped
2 stalks celery, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Steam the rice and cabbage head separately. Set the steamed rice aside. Peel off the cabbage leaves to have individual leaves.
  • Add chopped onion, oil, bouillon, and the steamed rice to the ground pork meat. Mix together. Season with salt and pepper. Roll the ground pork mixture into golf ball-sized balls. Wrap each pork ball in a cabbage leaf.
  • Add carrots and celery into the baking pan (vegetables prevent the cabbage from burning onto the bottom of the pan, and also adds an aroma to the rolls) and arrange the cabbage rolls on top.
  • Place the pan into the oven and cook for about 1 1/2 hours. Check if it is thoroughly cooked before removing from the oven.

2 onions, chopped
2 teaspoons butter
10 garlic cloves, pressed
2 cups rice (washed, then cooked halfway with 3 tablespoons butter)
1 lb extra lean ground beef
1 lb ground pork or 1 lb ground turkey
1 egg
1/4 cup milk
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon sweet basil
1 tablespoon oil or 1 tablespoon lard
2 tablespoons flour
1 tablespoon water
2 (15 ounce) cans tomato sauce
30 ounces water (3 3/4 cups)
4 tablespoons sugar

Steps:

  • Cover cabbage leaves with boiling water, let stand until leaves are limp (2-3 minutes); then drain.
  • Fry onions in butter until translucent, then mix with garlic, rice, meat, egg, milk, and seasonings; mix well.
  • In a large dutch oven, prepare zapraška (similar to roux) by melting shortening over medium heat.
  • Add flour and cook, stirring constantly, until it reaches desired brownness (usually light brown or beige).
  • Add a tablespoon of water and stir until smooth.
  • Be very careful when making zapraška as it is very hot and can cause severe burns if it comes in contact with the skin, also avoid the steam that rises when you add the water.
  • Add the tomato sauce, water, and sugar.
  • Mix well and bring to a boil; allow to boil for several minutes.
  • Place 2-3 tablespoons (depending on size of leaf) of meat mixture in center of each cabbage leaf; tuck in sides and roll to cover meat.
  • Place, seam side down in pot with sauce.
  • Cook, covered, over low heat for 2-3 hours.
