Growing up we had this pie every year at Thanksgiving and Christmas. It's simple but decadent. If you've never had Custard Pie before, it's a little bit like Creme Brulee in a pie crust. This is wonderful served chilled with REAL whipped cream. Enjoy.

Number Of Ingredients 7

9 inches unbaked pie shells
2 1/2 cups whole milk or 2 1/2 cups half-and-half cream, scalded
3 eggs, lightly beaten
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon real vanilla extract
ground nutmeg, to taste

Steps:

  • Preheat oven to 400 degrees.
  • In a large bowl whisk together eggs, sugar and salt.
  • Slowly whisk in scalded milk a little at a time to prevent cooking the egg mixture.
  • Stir in vanilla.
  • Pour, through a sieve, into the unbaked pie shell.
  • Sprinkle top with ground nutmeg.
  • Bake for approximately 40 minutes or until a knife inserted near the center comes out clean.
  • Filling will look wobbly but will set up as it cools.
  • Chill thoroughly and serve with whipped cream.

This creamy classic custard pie is an elegant dessert that's deliciously light and easy to make ahead of time. So, dig in!

1 pie crust (deep-dish store-bought )
5 large eggs
3 cups whole milk
1 Tbsp pure vanilla extract
1 cup granulated sugar
1/4 tsp salt
1 sprinkle nutmeg (cinnamon or mace)

Steps:

  • Beat eggs in a large mixing bowl with vanilla, sugar and salt then stir in milk.
  • Pour mixture through a strainer into an unbaked pie crust and sprinkle with your choice of spice.
  • Bake at 425 degrees for 10 minutes then lower the heat to 325 degrees and continue to bake for 50-55 minutes. The edges will be set but the center will still be wiggly. Do not allow filling to bubble.
  • Chill 4 hours or overnight.

2 c fresh raspberries
3/4 c milk
1/4 c butter,melted
1 1/2 tsp vanilla extract
3 large eggs or 4 medium
1/2 c bisquick baking mix
1/2 c granulated sugar

Steps:

  • 1. Heat oven to 400^. Melt butter in a 9-inch pie dish.
  • 2. Place remaining ingredients in blender container,including the melted butter.Cover and blend on high for 15 seconds or 1 minute with hand beater. Spread berries evenly in pie dish.Pour mixture evenly over berries . (they will come to the top)
  • 3. Bake 20-30 minutes or until center is set and lightly brown on top. Custard will deflate when cooling on wire rack. When cool dust with powdered sugar. of top with ice cream or whipped cream. --- Note: Remember some ovens take longer up to 30 minutes.

I was hungry for a good old fashion egg custard pie, did a search on the web and found this posted by Yvonne on All Recipes.com. Very good. I used fresh grated nutmeg, but you can also use cinnamon. I whisked while adding the hot milk and also add 10 more minutes to the baking time. I also like my custard pie cold so I put it in the refrigerator about 45 minutes before cutting. Preparation time is for filling only.

4 eggs, beaten
2/3 cup white sugar
1/2 teaspoon ground nutmeg or 1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups scalded milk
1 unbaked 9-inch pie crust

Steps:

  • Combine eggs, sugar, nutmeg or cinnamon, vanilla, and salt.
  • Add scalded milk a little at a time while whisking, so as not to cook the eggs.
  • When all is blended, pour into the unbaked pie shell.
  • Bake at 350°F for 30 minutes or until a knife inserted into center comes out clean.

1 (9 inch) unbaked pie crust
3 eggs, beaten
¾ cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
1 egg white
2 ½ cups scalded milk
¼ teaspoon ground nutmeg
3 drops yellow food coloring

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops yellow food coloring.
  • Line pie pan with pastry, and brush inside bottom and sides of shell with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
  • Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Cool on rack.
